Recipe – Plum Galette For Two

This recipe is a bit of a shortcut approach since it uses a purchased or previously prepared 9-inch pie crust.  However, this also makes it faster to assemble the dessert, which takes advantage of fresh summer plums on a weeknight or a lazy weekend evening.


  • Cutting Board
  • Knife
  • 1 Small Mixing Bowl
  • 1 Medium Mixing Bowl
  • Measuring Spoons
  • Fork
  • Baking sheet or stone
  • Oven


  • 1 Store Bought Refrigerated Pie Crust
  • 2 Tbsp Brown Sugar
  • 1 Tbsp Granulated White Sugar
  • 2 Tbsp Cornstarch
  • ¼ tsp Kosher Salt
  • 1 cup thinly sliced plums
  • ½ tsp Vanilla Extract
  • 1 Egg White
  • ½ tsp Melted Butter


  1. Preheat oven to 425℉ and line or grease the baking sheet
  2. Defrost Pie Crust in the microwave according to Manufacturer’s instructions
  3. In a medium mixing bowl combine the brown and white sugars, cornstarch and salt
  4. Add the vanilla extract to the cup of sliced plums and add to the sugar mixture and toss thoroughly
  5. Cut the pie crust in Half
  6. Arrange the plums sliced in the middle of each half
  7. Fold the excess dough to the edge of the plums in a pleated design
  8. Rub a small amount of egg white on the crush
  9. Brush the melted butter onto the plums, just enough to give them a shine
  10. Place on the baking sheet or stone and transfer to the oven
  11. Bake for 15 minutes or until the crust is flaky and golden
  12. Serve hot
