Ingredients
Peach Cobbler Filling:
- ½ tsp vanilla
- 1 tbsp all-purpose flour
- 1 tsp cinnamon
- 2 tsp brown sugar
- 3 fresh peaches, pitted, peeled and sliced
Peach Cobbler Crust
- ¼ tsp baking soda
- ⅓ cup milk
- ½ cup all-purpose flour
- ½ tsp baking powder
- 2 tbsp brown sugar
- 2 tbsp unsalted butter
- Brown sugar for crust topping
Garnish
- A couple dollops of Vanilla Ice cream for garnish, if desired.
Peach Cobbler Directions
First Bake
- Bring a large half full pot of water to boil.
- Preheat oven to 425 degrees F.
- Using a slotted spoon, carefully add peaches to boiling water for 45 seconds, then remove and let cool for 1 minute.
- Slice down seam and twist to remove the pit, then peel and slice into thin slices.
- Divide slices between two ramekins.
- Bake in the oven for 10 minutes.
Make the Crust
- Meanwhile, add crust ingredients to a bowl.
- Add the milk and stir with a fork to form a wet dough.
- Remove ramekins from oven and drop spoonfuls of dough on top.
- Top with brown sugar and return to the oven.
Second Bake
- Bake 15-20 minutes, until bubbly and crust is golden brown.
- Remove from oven and place on a rack to cool for about 10 minutes
- Serve warm garnished with vanilla ice cream, if desired.
