Converting a Quick Bread Recipe to a Muffin Recipe

You might not expect it, but a typical quick bread recipe shares most of its ingredients with most basic muffin recipes. By merely tweaking cooking times and temperatures, you can easily convert a bread recipe into a simple muffin recipe. Converting your favorite bread recipe into a quick and delicious muffin recipe, all with minimal effort or changes to the original recipe. After making the necessary adjustments, a typical quick bread recipe yields about 10 to 12 muffins.

Required Adjustments

Here are the simple changes you need to make to use a quick bread recipe – like banana bread, for example – to bake muffins:

  • Preheat your oven to 250F, hotter than what the bread recipe calls for. The standard baking temperature for quick bread is 3500F; muffins turn out best when baked at 3750F.
  • Keep in mind that higher temperatures mean shorter baking times. Different temperatures and baking times will work best for other recipes, but we suggest this guideline: If your quick bread recipe calls for 60 minutes at 3500F, try baking the muffins for 30 minutes at 3750F. If they still turn out too bread-like in texture and consistency, try 20 minutes at 4000F.
  • Divide the quick bread batter equally between each of the muffin tins, filling each well 3/4 full.
