Ingredients
- 1 cup Chocolate chips
- 1 cup Milk
- 1 large or jumbo Egg
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1 teaspoon Vanilla extract
- 1 teaspoon Vinegar
- 1/2 teaspoon salt (optional)
- 1/4 cup Oil
- 2 cups all-purpose flour
- 2 tablespoons Cocoa powder
- 2/3 cup Granulated sugar
Directions
- Preheat the oven to 350F (1750C)
- Line the muffin pan with the cupcake liners and spray them with nonstick cooking spray
- In a mixing bowl, combine flour, sugar, baking powder, salt, baking soda, and cocoa powder.
- Whisk together egg, add milk, vinegar, oil, and vanilla extract
- Add wet ingredients to dry ingredients and stir to combine.
- Fold the chocolate chips into the muffin mix.
- Fill each muffin cup 2/3 full.
- Bake for 22 minutes (or until a toothpick comes out clean).
