This is a nice quick read and an excellent snack. Especially during the cooler seasons when you may more like baking.
Ingredients
- 4 Granny Smith apple, grated
- 1 ¾ granulated sugar
- 2-ounce raisins
- 1 tsp vanilla extract
- 2 eggs
- 3 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ½ cup whole pecans, for garnish
Preparation Directions
- Preheat oven to 350°F. Line a loaf pan with parchment paper. Set aside.
- Combine grated apple and sugar in a medium bowl, give a quick stir, and set aside 15 minutes. Apple will be watery. This is what we’re looking for.
- In a separate bowl, add raisins, vanilla extract, and eggs. Mix until just combined.
- In a different large-sized bowl, add in flour, baking powder, baking soda, and cinnamon, whisk until incorporated.
- Add apple mixture to egg mixture and give a quick stir. Then add in dry ingredients. Mix with a hand mixer or hand whisk just until combine, do not overmix. Transfer to the prepared loaf pan
- Bake in the oven for 1 hour to 1 hour-15 minutes, start checking at 1 hour. When a wooden toothpick inserted comes out clean, remove from the oven and let cool for 15 minutes before take out from the pan.

- Makes 9” x 5” loaf pan—about 9 (1 inch) servings
