Ingredients
- 1 cup of sugar
- 1 teaspoon vanilla extract
- 1/2 cup butter, softened
- 1/2 teaspoon salt
- 1-1/4 cups sweetened coconut flakes
- 2 cups all-purpose flour
- 2 large or jumbo eggs
- 2 teaspoons baking powder
- 3/4 cup whole milk
Preparation Directions
- Gather the recipe ingredients
- Preheat the oven to 350°F (177°C).
- Grease and lightly flour a 9×5 inch loaf pan. Set aside.
- In a large mixing bowl, cream butter and sugar until light and fluffy.
- Combine the flour, baking powder, and salt; gradually add to creamed mixture alternately with milk, beating well after each addition.
- Stir in coconut flakes.
- Pour into a greased 9×5-inch loaf pan.
- Bake the loaf in the center of the oven until golden brown on top for 1 hour or until a toothpick inserted in the center comes out clean.

- Serve warm or at room temperature.
