Recipe – Classic Pasta Carbonara

It’s easy to leave pasta cooking to the Italians, but did you know that you can also replicate this classic heavenly tasty Italian dish in your own kitchen, without any culinary education or Italian background?

Pasta Carbonara, a well-known Italian dish whose secret lies, believe it or not, in only five ingredients – cheese, eggs, black pepper, garlic, and bacon – that’s all.

Ingredients:

  • 14.1 oz (400g) spaghetti
  • 7.05 oz (200g) streaky bacon (chopped)
  • 1 tbsp olive oil
  • 2 garlic cloves (crushed)
  • 3 eggs
  • 3 tbsp salt
  • Freshly ground black pepper
  • 2 oz (50g) Grana Padano or Parmesan (finely grated); plus extra to serve

Preparation Directions:

  • Fill a large deep pan with water and 3 tbsp of salt. Bring the water to a hard boil; then add the spaghetti. Bring the water back to a boil and cook the spaghetti until Al dente.
  • Meanwhile, start heating the 1 tbsp of olive oil in your frying pan. When hot, start adding in the chopped bacon and fry on medium heat until the edges become crispy (lightly golden).
  • Into a mixing bowl, crack two eggs and separate the yolk from the third egg. Whisk until no streaks remain, and then stir in the cheese. Add pepper and garlic and set aside.
  • Once the spaghetti is cooked, drain and pour the spaghetti into the bacon pan.
  • Remove from the heat, add a few tbsp of the pasta water toss to combine thoroughly. Add the beaten eggs with cheese, pepper, and garlic. Put it back on the heat and stir it continuously so that the eggs become creamy until it has a thick, creamy sauce.

How to serve/plate and garnish

  • Serve with an extra amount of cheese and freshly ground pepper in hot dishes. Make sure each plate has enough of the bacon with more cheese.
