Homemade yogurt is easy to create and walks you through the procedure step by step (with a very detailed video). This is an excellent way to create healthy, delicious yogurt at home with only a little time involved. If you’ve never made yogurt before, perhaps because you assumed it was too hard, I’m here to reassure you that you really can do it. With a little trial and error and the right ingredients (that I’ll go over in detail below), you too can make yogurt that rivals the store-bought varieties.
Yogurt has many uses. It is often used in smoothies, ice creams, puddings, sauces, desserts, and more. There are two basic ways to use it, you can use raw milk, or you can use a pre-made, ready-to-use yogurt. I prefer to use raw milk for my yogurt recipes. This gives them a tangy, smooth texture that is amazing for fruit-based dessert recipes such as pies, cakes, cookies, and more. One of the best things about using raw milk in your yogurt recipes is that it maintains the yogurts’ natural calcium level, which is beneficial to our health.
To make your own homemade yogurt, start off by getting a good, clean, non-stick yogurt maker. You can either purchase one. You’ll need to gather your supplies or gather your supplies together and bring them to the sink (or countertop) to mix. Next, you’ll need to set your homemade yogurt maker to the slow cook setting. Stir continuously to ensure that all ingredients cook at the same rate, then once done, carefully pour into your slow cooker.
To properly heat up your pot, you need to be aware that the food you are putting into the pot should be at the same temperature all the way through. I usually stir constantly while putting in my batch. Once the pot has heated up to the proper temperature, stirring should be stopped. Allow your yogurt maker to heat up to room temperature. Once this has happened, put the lid on and set your timer to an hour.
Now for the fun part, pouring your delicious homemade yogurt into your Instant Pot! This part is going to be tricky, so be careful! I personally prefer to put the yogurt into the pot in a single layer, then run a wooden spoon through it to push out all of the bubbles. Once this is done, you can turn on the Instant Pot and give it a gentle heat cycle. This will kill any bad bacteria floating around. Now, with a clean wooden spoon, go over the yogurt to remove any bits of mold and bacteria.
Now, if you are looking to make yogurt that will stay at the perfect temperature for a longer time, I recommend doing one more thing. I find that heating up the yogurt beyond the hot to the boiling point will actually kill the cultures inside of it. Simply do an about-face and then remove from heat. Then, as you mix the yogurt with the Instant Pot, you should watch the temperature. The goal is to set your timer to an hour and then check on the internal temperature to ensure it’s not getting too high or too low.
Now that you have your yogurt ready to culture, you want to do everything possible to keep it from over-culturing. You can do this by keeping the lid on over the Instant Pot for an hour. However, the process of heating up your yogurt will kill any of the good bacteria that may still be present. If this happens, simply re-heat it over the very same temperature that you were originally at to ensure it is done over-culturing.
Making yogurt is really very easy. If you prefer a thicker consistency, add more yogurt. If you want a smooth consistency, add more water. This is the most important step because if you do not do this step right, then you will never get the consistency that you are after. There are also yogurt starter kits available to help make this process much easier! There really is no “perfect” yogurt starter recipe, so just go for what you think will work best for you.
