## Air Fryer Pineapple Chicken Bites With Bell Peppers

Pineapple chicken works well in an air fryer when the chicken cooks first and the
sweet teriyaki-style glaze goes on near the end. This keeps the sauce from scorching
while giving it time to cling to the chicken, pineapple, and peppers. Cut the ingredients
to similar sizes, leave room for hot air to circulate, and check the chicken with
an instant-read thermometer.

This method makes a sweet-savory dinner with browned edges and tender chicken. It’s
designed for a typical 5- to 6-quart basket air fryer; smaller models may need more
batches.

## Ingredients

Serves 3 to 4

 * 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
 * 1 bell pepper, cut into 1-inch pieces
 * 1 cup pineapple chunks, fresh or canned and well drained
 * 1 tablespoon neutral oil
 * ½ teaspoon garlic powder
 * ¼ teaspoon ground ginger
 * Black pepper, to taste
 * ¼ cup teriyaki sauce
 * 1 teaspoon cornstarch mixed with 1 tablespoon cold water, optional
 * Sliced green onion or sesame seeds, for serving

For a from-scratch glaze, stir together 3 tablespoons soy sauce, 2 tablespoons pineapple
juice or water, 1 tablespoon honey or brown sugar, 1 teaspoon rice vinegar, and
½ teaspoon grated or powdered ginger. The lower sugar content helps limit scorching.
If using a bottled teriyaki sauce, choose one you like and add it only at the end.

## Prepare the chicken and vegetables

Pat the chicken dry before cutting it. Dry surfaces brown more readily, while excess
moisture can steam the pieces and collect in the basket. Cut the chicken and bell
pepper into roughly 1-inch pieces. Keep the pineapple pieces similar in size; cut
especially large chunks in half.

Chicken breast cooks quickly and has less fat, so it can dry out if the pieces are
small or left in the air fryer too long. Thigh meat is more forgiving and tends
to stay moist, though it may need a little longer. Either works in this recipe.
If using both, cut the pieces to a similar size and check them individually, since
they may finish at different times.

Toss the chicken and pepper with the oil, garlic powder, ginger, and black pepper.
Keep the pineapple separate for now. Canned pineapple is convenient, but drain it
well and blot it with a paper towel. Fresh pineapple needs no draining, though juicy
cut fruit can still release moisture as it cooks.

## Cook the chicken without crowding

Preheat the air fryer to 380°F if your model’s instructions recommend preheating.
Arrange the chicken and peppers in a single layer, leaving a little space between
pieces. Add the pineapple only if there is room; otherwise, cook it in a separate
batch or add it with the glaze later.

Air-fry for 6 minutes, then shake the basket or turn the pieces. Continue cooking
for about 3 to 6 minutes, checking early because air fryers vary. The chicken is
ready when the thickest pieces reach 165°F. Measure from the side into the center
of a piece, avoiding contact with the basket. Color alone cannot confirm safe doneness.

For 5- to 6-quart baskets, the full amount may fit in a loose layer, but capacity
depends on the shape of the basket and the size of the pieces. If the chicken is
piled up or packed tightly, cook in batches. Crowding traps steam, slows browning,
and can leave vegetables watery. Keep the first batch warm on a plate while the
next cooks; avoid stacking hot pieces in a covered container, which can soften their
browned surfaces.

## Add the glaze near the end

Once the chicken is nearly cooked, toss it with the drained pineapple and about
half the glaze. Return the mixture to the air fryer for 2 to 3 minutes, just long
enough to heat the fruit and coat the chicken. Check that the chicken still reaches
165°F, especially if the pieces were removed early.

For a thicker, glossy finish, transfer the remaining glaze to a small saucepan.
Bring it to a simmer, then stir in the cornstarch slurry and cook briefly until
thickened. Toss it with the cooked chicken and vegetables. This gives you a sticky
coating without leaving sugary sauce in the hot basket for the full cooking time.

You can also brush a small amount of glaze over the chicken during the final minute,
but avoid pouring a pool of sauce into the basket. Sugar can darken or burn quickly
under direct heat, and thin sauce may drip through the grate. Serve extra glaze
at the table instead.

## If the basket gets wet

A little juice from pineapple is normal, but a pool of liquid can prevent browning.
If moisture collects, remove the cooked chicken and vegetables with tongs, pour
out the liquid if your air fryer’s design allows it safely, and return the food
for a minute or two to dry the surfaces. Do not pour liquid into the appliance’s
heating area.

For the next batch, drain canned pineapple thoroughly, pat the chicken dry, and
reduce the load. If you want more pineapple than will fit comfortably, warm the
extra fruit separately or add it after cooking. Avoid adding additional sauce until
the chicken is cooked.

If the glaze darkens before the chicken is done, remove the sauced pieces and finish
cooking the chicken plain. Toss it with fresh glaze after it reaches 165°F. The
risk is greatest with sweet sauces applied early or spread thickly over the chicken.

## Serve with rice or vegetables

Spoon the chicken, peppers, and pineapple over steamed rice, brown rice, or rice
noodles. Add sliced green onion or sesame seeds if you like. For a vegetable-forward
plate, serve the bites with steamed broccoli, snap peas, or a simple cabbage slaw.
Keep the sides plain or lightly seasoned so the sweet-salty glaze remains the main
flavor.

Leftovers can be refrigerated in a covered container within two hours of cooking.
Reheat until steaming hot, preferably in a skillet or air fryer at a moderate temperature.
Add a splash of water or a little reserved sauce if the chicken seems dry.

## The method in brief

For tender air fryer pineapple chicken, cut the ingredients evenly, dry and season
the chicken, and cook it with room to brown. Add pineapple and glaze near the end,
then use a thermometer to confirm the chicken has reached 165°F. A short final toss
with thickened sauce gives the dish its glossy finish without burning the glaze.
