Canned food pasta recipes can turn inexpensive shelf-stable ingredients into dinner
without a special grocery run. The combinations below use 8 ounces of dried pasta
each, enough for about two generous or three modest servings. Drain canned vegetables
and beans unless the directions say otherwise, and save a little pasta water to
help the sauce cling.

## How to build a good pantry pasta

Cook the pasta in salted water until just tender, following the package directions.
Before draining, scoop out about ½ cup of the starchy cooking water. A few spoonfuls
can loosen a thick sauce or bring oil, tomato, and other ingredients together.

Canned ingredients are already cooked, so most need only a few minutes in the pan
to warm through. Add delicate foods, such as canned salmon, near the end to keep
them from breaking apart. Taste before adding salt: canned tomatoes, olives, fish,
and beans can all contain a fair amount. Choose no-salt-added products when available,
or rinse beans to reduce some of their surface sodium.

### 1. Canned tomato pasta with chickpeas and oregano

Warm 2 tablespoons olive oil with 2 minced garlic cloves and ½ teaspoon dried oregano
in a skillet. Add one 14- to 15-ounce can of crushed or diced tomatoes and simmer
for 10 minutes. Stir in one 15-ounce can of drained chickpeas and cook until hot.
Toss with the pasta, adding pasta water as needed. Finish with black pepper and
a pinch of red pepper flakes, if you like.

This is a filling, inexpensive meal on its own. A spoonful of grated Parmesan or
a drizzle of olive oil gives it a richer finish.

### 2. Canned salmon pasta with peas and lemon

Cook 1 cup frozen peas with the pasta during the last 2 minutes, then drain both
together. In a bowl, mix one 5- to 7-ounce can of drained salmon with 2 tablespoons
olive oil, 1 tablespoon lemon juice, and black pepper. Fold in the hot pasta and
peas. Add pasta water a tablespoon at a time until the mixture is lightly coated.

Canned salmon may contain soft edible bones and skin; mash them into the fish or
remove them according to preference. Keep the salmon in larger pieces if you want
a chunkier dish.

### 3. Pasta with canned corn, black beans, and smoky spices

Heat 1 tablespoon oil in a skillet. Add one drained 15-ounce can of black beans,
one drained 15-ounce can of corn, ½ teaspoon ground cumin, and ½ teaspoon smoked
paprika. Cook for 3 to 4 minutes, then stir in the pasta with a splash of pasta
water. Season with lime juice or vinegar and black pepper. If you have salsa, stir
in a few spoonfuls.

The beans and corn make this a hearty option without a separate side dish. Use less
salt if the canned beans or salsa are already seasoned.

### 4. Tuna pasta with olives and capers

Warm 2 tablespoons olive oil with 1 minced garlic clove in a skillet. Add ¼ cup
sliced olives, 1 tablespoon capers, and one 5-ounce can of drained tuna. Break the
tuna into large flakes and warm gently. Toss with the pasta, lemon juice, and enough
pasta water to coat.

Olives and capers bring plenty of salt, so taste before seasoning. A pinch of dried
chili or a little chopped parsley works well if either is on hand.

### 5. White bean pasta with canned artichokes

Heat 2 tablespoons olive oil with 1 minced garlic clove. Add one drained 15-ounce
can of white beans and one drained 14-ounce can of artichoke hearts, cut into bite-
size pieces. Stir in ½ teaspoon dried thyme and cook for about 4 minutes. Toss with
the pasta and a little pasta water. Finish with lemon juice and black pepper.

The beans soften and help make a light, creamy coating without cream. If the artichokes
are packed in oil, use some of that oil in place of the olive oil.

### 6. Sardine and tomato pasta with chili

Warm 2 tablespoons olive oil with 1 minced garlic clove and a pinch of red pepper
flakes. Add one 14-ounce can of diced tomatoes and simmer for 8 to 10 minutes. Stir
in one 3.75-ounce can of sardines, drained, and gently break them into pieces. Toss
with the pasta and black pepper.

Sardines are flavorful and salty, so additional salt may not be needed. If you keep
canned breadcrumbs or plain crackers, crush a small handful and toast the crumbs
in a little oil to sprinkle over the finished pasta.

### 7. Canned mushroom pasta with evaporated milk

Brown one drained 8-ounce can of mushrooms in 1 tablespoon butter or oil over medium-
high heat. Add ½ teaspoon dried thyme and ½ cup evaporated milk. Simmer gently for
2 to 3 minutes, then toss with the pasta. Add pasta water a little at a time if
the sauce is too thick, and season with black pepper.

Evaporated milk is shelf-stable until opened and gives the sauce body. Keep the
heat gentle after adding it; a hard boil can make a milk-based sauce less smooth.

### 8. Tomato and pinto bean pasta with green chiles

Combine one 14-ounce can of diced tomatoes, one 4-ounce can of diced green chiles,
and one drained 15-ounce can of pinto beans in a skillet. Add ½ teaspoon ground
cumin and simmer for about 8 minutes. Toss with the pasta and a splash of pasta
water. Taste before adding salt, especially if the chiles are salted.

This combination has a mild, tangy heat. For a richer dish, stir in a small amount
of shredded cheese just before serving.

### 9. Canned pumpkin pasta with sage and white beans

Warm 1 tablespoon oil or butter with ½ teaspoon dried sage. Stir in 1 cup canned
pumpkin purée and ½ cup water or pasta water. Add one drained 15-ounce can of white
beans and heat gently for 4 to 5 minutes. Toss with the pasta, then season with
black pepper and a little vinegar or lemon juice to balance the pumpkin’s sweetness.

Use plain pumpkin purée, not canned pumpkin pie filling, which contains sugar and
spices. The sauce should be savory, not dessert-like.

### 10. Canned green beans with garlic, tomatoes, and pasta

Warm 2 tablespoons olive oil with 2 minced garlic cloves. Add one drained 14.5-ounce
can of cut green beans and one drained 14-ounce can of diced tomatoes. Simmer for
8 minutes, then toss with the pasta. Add black pepper and a pinch of dried basil
or Italian seasoning.

This straightforward sauce makes use of common cans and needs little preparation.
If the beans are very soft, stir them in gently near the end so they keep their
shape.

## A few practical pantry habits

Keep pasta water nearby until the dish is finished; it can loosen thick canned-tomato
sauces and help oil-based mixtures coat the noodles. Use the liquid from canned
tomatoes when the recipe calls for it, but drain watery vegetables and beans so
they do not dilute the sauce. Refrigerate leftovers promptly in a covered container
and use them within three to four days. Discard cans that are bulging, leaking,
or badly dented, and transfer unused canned food to a covered container before refrigerating.
