Chocolate cherry bars bring together a buttery oat crumble, a layer of cherry preserves,
and a drizzle of dark chocolate. They’re a practical Christmas dessert because there’s
no dough to roll, no fruit to pit, and no separate topping to prepare. The same
oat mixture forms both the firm base and the crumbly top, while the preserves provide
a tart-sweet filling that cuts neatly once the pan has cooled.

These bars fit comfortably on a Christmas cookie tray, but they’re substantial enough
to serve as dessert with coffee. Make them ahead and leave time for cooling: warm
preserves are soft, and the crust needs to firm up before you slice it.

## Choosing cherries and chocolate

Cherry preserves give these bars a concentrated fruit flavor without the extra moisture
of fresh or frozen cherries. Look for a thick, spoonable preserve with visible pieces
of fruit. Sour cherry preserves are especially good with chocolate, although sweet
cherry preserves also work.

Avoid substituting canned cherry pie filling in equal amounts. Its larger fruit
pieces and different consistency can make the layers harder to distribute and change
how the bars slice. Thin cherry syrup or a pourable fruit sauce won’t provide the
same filling, either.

Semisweet or bittersweet chocolate both suit the oat crust. Choose semisweet for
a sweeter finish or bittersweet if you prefer a stronger cocoa flavor. A chopped
chocolate baking bar usually melts more smoothly than chocolate chips, though either
can be used for the drizzle.

## Chocolate cherry bars with oat crumble topping

This recipe makes a 9-inch square Christmas traybake with a generous cherry layer
and a chocolate finish. The chocolate goes on after baking, so its flavor stays
distinct from the buttery oats.

**Yield:** 16 bars
**Prep time:** 20 minutes **Bake time:** 35–40 minutes **Cooling
and setting time:** About 2 hours **Total time:** About 3 hours **Equipment:** 9-
inch (23-centimeter) square metal baking pan, parchment paper, mixing bowl, small
microwave-safe bowl

### Ingredients

– 1½ cups (180 grams) all-purpose flour
 – 1½ cups (135 grams) old-fashioned rolled
oats – ¾ cup (150 grams) packed light brown sugar – ½ teaspoon baking powder – ½
teaspoon fine salt – ¾ cup (170 grams) unsalted butter, melted and slightly cooled–
1 teaspoon vanilla extract – 1 cup (about 320 grams) thick cherry preserves – 4
ounces (115 grams) semisweet or bittersweet chocolate, finely chopped

### Instructions

1. **Prepare the pan and oven.** Heat the oven to 350°F (175°C). Line the baking
pan with parchment paper, leaving enough overhang on two opposite sides to lift
out the cooled bars.

2. **Mix the crumble.** Stir together the flour, oats, brown sugar, baking powder,
and salt, breaking up any lumps of sugar. Add the melted butter and vanilla. Mix
until no dry flour remains and the mixture forms moist crumbs when squeezed.

3. **Form the base.** Reserve about one-third of the oat mixture for the topping.
Press the remaining mixture firmly and evenly into the prepared pan, taking care
to fill the corners. The bottom of a measuring cup helps flatten the surface.

4. **Add the cherry filling.** Stir the preserves to loosen them. Drop small spoonfuls
across the crust, then gently spread them into an even layer. Leave a narrow border
around the edges to reduce sticking where the preserves might bubble against the
pan.

5. **Scatter the topping.** Squeeze portions of the reserved oat mixture into small
clumps and scatter them over the filling. Leave some cherry preserves visible between
the crumbs. Don’t press the topping flat.

6. **Bake.** Bake for 35–40 minutes, until the crumble is golden brown and the preserves
are bubbling in several places near the edges. Begin checking at 30 minutes, since
pans and ovens vary.

7. **Cool completely.** Set the pan on a wire rack and let the bars cool fully before
adding the chocolate. Allow roughly 1½ hours, or longer if the pan still feels warm
underneath.

8. **Melt and drizzle the chocolate.** Microwave the chopped chocolate in a dry
microwave-safe bowl in 20-second intervals, stirring between each interval. Stop
heating when only a few small pieces remain, then stir until smooth. Drizzle over
the cooled bars with a spoon.

9. **Set and slice.** Let the chocolate firm up, refrigerating briefly if needed.
Lift the slab out using the parchment and cut it into 16 squares with a sharp knife.

## Getting a firm base and a crumbly top

The two layers need different handling even though they use the same mixture. Press
the base firmly enough that it holds together when sliced. Loose crumbs on the bottom
can leave the finished bars fragile, especially beneath the weight of the preserves.

Keep the topping loosely scattered. Small clumps bake into crisp edges, while the
gaps allow some moisture to escape from the filling. A tightly packed upper layer
produces a more solid cookie-like surface.

Old-fashioned rolled oats give the crumble a noticeable oat texture. Quick oats
can work, but they produce a finer, more compact crumb. Steel-cut oats aren’t a
suitable substitute because they won’t soften sufficiently during this baking time.

If the preserves are stiff, stir them thoroughly before spreading. For particularly
thick preserves, a few seconds in the microwave can help. They should be spreadable,
not hot or runny, so they don’t pull up the unbaked crust.

## Cutting, serving, and making them ahead

For clean chocolate cherry squares, wait until both the filling and chocolate have
set. If the kitchen is warm, chill the cooled slab briefly before cutting. Use a
sharp knife and wipe it between cuts to keep cherry preserves from smearing across
the edges. Avoid cutting the slab straight from a long refrigerator chill, when
a thick chocolate drizzle may crack.

Sixteen squares make a generous dessert portion. For a crowded holiday cookie tray,
cut the slab into 25 smaller pieces. Arrange them in a single layer or separate
stacked layers with parchment paper.

Store the bars in an airtight container at cool room temperature for up to 2 days,
or refrigerate for up to 5 days. Refrigeration makes the butter crust firmer; let
the bars stand at room temperature for a softer bite before serving.

For longer storage, freeze the fully cooled, cut bars with parchment between layers
for up to 2 months. Thaw them in their container in the refrigerator. They’re a
useful make-ahead Christmas cherry dessert, leaving the oven free for the dishes
that need to be served warm.
