Chocolate chip cookie pizza combines a chewy brown sugar cookie with a light, whipped
ganache topping that cuts into neat party dessert slices. The giant cookie crust
is baked on a pizza pan, cooled completely, and covered with semisweet chocolate
ganache. It has the familiar appeal of a chocolate chip cookie, but the soft chocolate
topping gives it the finish of a celebration dessert.

## Chocolate Chip Cookie Pizza Recipe

This recipe makes one 11- to 12-inch cookie pizza. A rimmed pizza pan is the safest
choice because it prevents the brown sugar dough from spreading beyond the edge.
If using a flat pizza pan, shape the dough into a 10-inch circle and leave room
for expansion.

**Yield:** 10 to 12 slices
**Preparation time:** 25 minutes **Baking time:** 18
to 22 minutes **Cooling and chilling time:** About 2 hours **Total time:** About
3 hours **Course:** Dessert **Equipment:** 12-inch pizza pan, parchment paper, mixing
bowls, electric mixer, offset spatula or large spoon

### Ingredients

#### For the chewy cookie base

– 1/2 cup (113 grams) unsalted butter, softened
 – 3/4 cup packed (150 grams) light
brown sugar – 1/4 cup (50 grams) granulated sugar – 1 large egg, at room temperature–
2 teaspoons vanilla extract – 1 1/3 cups (160 grams) all-purpose flour – 1/2 teaspoon
baking soda – 1/2 teaspoon fine salt – 3/4 cup (130 grams) semisweet chocolate chips

#### For the whipped ganache

– 8 ounces (227 grams) semisweet chocolate, finely chopped
 – 1 cup (240 milliliters)
heavy cream – 1/2 teaspoon vanilla extract – Pinch of fine salt

#### Optional decoration

– Mini chocolate chips
 – Chocolate curls – Chopped toasted pecans or walnuts –
A small pinch of flaky salt

## Bake the Giant Cookie Crust

Heat the oven to 350°F (175°C). Line a 12-inch pizza pan with parchment paper. Lightly
grease any exposed portion of the pan if the parchment does not cover it completely.

Beat the softened butter, brown sugar, and granulated sugar with an electric mixer
for about two minutes. The mixture should look creamy and slightly lighter in color.
Scrape the bowl, then beat in the egg and vanilla until evenly combined.

In a separate bowl, stir together the flour, baking soda, and salt. Add the dry
ingredients to the butter mixture and mix on low just until no dry streaks remain.
Fold in the chocolate chips by hand. Avoid prolonged mixing once the flour has been
added, which can make the baked cookie tougher.

Transfer the dough to the prepared pan. Press it into a circle about 10 to 11 inches
across and roughly 1/2 inch thick. Slightly thicker dough around the outside can
help the edge stay chewy instead of becoming crisp before the center is done.

Bake for 18 to 22 minutes. The edge should be golden, while the center should appear
set but still soft. A pale, slightly underdone-looking center is preferable to a
deeply browned one because the cookie continues to cook from the pan’s heat.

Dark metal pans transfer heat more quickly and may shorten the baking time. Begin
checking at 16 minutes if the pan has a dark nonstick surface.

Leave the cookie on the pan for at least 15 minutes. If possible, slide the parchment
and cookie onto a wire rack after the crust has firmed. Cool completely before adding
the ganache. Even mild warmth can soften the topping and cause it to lose volume.

## Making Whipped Ganache That Holds Its Shape

Place the finely chopped semisweet chocolate in a heatproof bowl. Smaller pieces
melt more evenly than large squares or coarse chunks.

Heat the heavy cream in a small saucepan until it steams and small bubbles form
around the edge. Do not let it boil vigorously. Pour the hot cream over the chocolate,
making sure most of the chocolate is submerged. Let the mixture stand undisturbed
for three minutes.

Starting in the center of the bowl, stir slowly in small circles. Gradually widen
the circles until the cream and chocolate form a smooth, glossy ganache. Stir in
the vanilla and salt.

Let the ganache cool for about 20 minutes, then refrigerate it until cold and thickened,
usually 60 to 90 minutes. Stir it once or twice during chilling so the edges do
not become much firmer than the center. It is ready to whip when it has the consistency
of thick pudding or soft frosting.

Beat the chilled ganache with an electric mixer on medium speed for 30 seconds.
Stop, scrape the bowl, and continue beating in short intervals until the color lightens
and the ganache holds soft peaks. This usually takes one to two minutes.

Watch it closely. Overbeaten whipped ganache can become grainy or stiff. Stop as
soon as it is light enough to spread and retains gentle swirls from the beaters.

If the ganache becomes too firm during chilling, let it stand at room temperature
for several minutes before whipping. If it remains loose after whipping, refrigerate
it for 10 to 15 minutes and try again.

## Assemble and Slice the Cookie Pizza

Make sure the cookie base is fully cool. Spread the whipped ganache over the top,
leaving a narrow cookie border visible around the edge. An offset spatula makes
broad swirls, though the back of a spoon works well too.

Add mini chocolate chips, toasted nuts, or chocolate curls while the topping is
still soft. Flaky salt can sharpen the chocolate flavor, but use it sparingly because
the cookie dough already contains salt.

For clean slices, chill the assembled dessert for 20 to 30 minutes. Use a large
sharp knife or pizza cutter to divide it into wedges. Wipe the blade between cuts
if ganache begins to collect on it.

The cookie will be easiest to slice when cool, but its texture is best after the
wedges have rested at room temperature for about 10 minutes. The base softens slightly,
and the ganache becomes creamy rather than firm.

## How to Keep the Cookie Base Chewy

Brown sugar gives the dough moisture and a mild caramel flavor. The smaller amount
of granulated sugar helps the edge brown without turning the entire crust crisp.

The baking time has the greatest effect on texture. Remove the cookie when the center
is set but not dry. Waiting for the middle to become golden can lead to a hard crust
after cooling.

Accurate flour measurement also helps. If measuring by volume, spoon the flour into
the measuring cup and level it with a straight edge. Scooping directly from the
bag can compact the flour and add more than the recipe needs.

Allowing the cookie to cool on parchment rather than leaving it on a hot pan for
an hour limits carryover cooking. Move it only after it is firm enough to lift without
bending or cracking.

## Flavor Variations

For a darker chocolate topping, replace up to half of the semisweet chocolate with
bittersweet chocolate. Using only very dark chocolate can produce a firmer, less
sweet ganache, so allow it to soften briefly before spreading.

Milk chocolate can also be used, but it creates a sweeter and generally softer topping.
Reducing the cream slightly, to about 3/4 cup (180 milliliters), gives milk chocolate
ganache more structure.

Chopped toasted walnuts, pecans, or hazelnuts can replace part of the chocolate
chips in the dough. Keep the combined amount of chips and nuts close to 3/4 cup
so the giant cookie crust remains cohesive.

A thin layer of seedless raspberry jam beneath the ganache adds tartness. Use no
more than a few tablespoons, since excess jam can make the topping slide when the
cookie is cut.

## Storage and Serving

Because the ganache contains heavy cream, store the finished chocolate chip cookie
pizza in the refrigerator. Cover it without pressing plastic wrap directly against
the topping. It will keep for up to three days, though the cookie gradually softens
as it absorbs moisture from the ganache.

Do not leave the topped dessert at room temperature for more than two hours. For
a party, it can be sliced in advance, kept chilled, and set out shortly before serving.

The untopped cookie base may be baked one day ahead and stored in an airtight container
at room temperature. Prepare and whip the ganache on the day of serving for the
best texture. Once assembled, the contrast between the chewy cookie base and airy
chocolate topping is at its best within the first day.
