Chocolate orange bars combine buttery shortbread, fresh orange zest, and dark chocolate
in a cookie that holds its shape on a Christmas cookie tray. The orange goes into
the dough, where its fragrant oils flavor every bite, while a chocolate dip adds
a slightly bitter finish. They’re made in one pan, with no rolling or cookie cutters,
and can be baked a day before decorating.

The recipe below makes orange shortbread with a dark chocolate coating. Leaving
cocoa out of the dough gives the citrus room to come through and makes the contrast
between the golden cookie and chocolate especially pretty.

## What makes chocolate orange bars work

Fresh zest gives these bars their orange flavor without adding much moisture. Orange
juice would change the dough’s consistency and provide less concentrated flavor
in the small amount a shortbread dough could accommodate.

Grate only the colored outer peel. The white pith underneath can taste bitter. A
fine rasp grater works well, but stop grating each patch as soon as the white layer
appears.

Butter supplies most of the shortbread’s flavor and creates its tender, crumbly
texture. Use unsalted butter that is softened enough to take a finger impression
but still holds its shape. Very warm, greasy butter makes the dough harder to handle.

For the coating, choose a dark chocolate you enjoy eating, roughly 60 to 70 percent
cacao. Semisweet chocolate makes a sweeter bar; a higher-cacao chocolate gives a
stronger contrast to the orange and butter.

## Chocolate orange shortbread bars recipe

These citrus cookie bars bake in an 8-inch square pan, then get cut while still
warm. Once completely cool, they’re ready for dipping.

**Yield:** 18 bars
**Prep time:** About 20 minutes **Baking time:** 30–38 minutes**
Cooling and setting time:** About 90 minutes **Total time:** About 2½ hours **Course:**
Dessert

### Ingredients

– 6 tablespoons granulated sugar (75 g)
 – 2 teaspoons finely grated orange zest,
from about 1 large orange – ¾ cup unsalted butter, softened (170 g) – ¼ teaspoon
fine salt – 1 teaspoon vanilla extract – 1¾ cups plus 2 tablespoons all-purpose
flour (225 g), spooned into the cups and leveled – 6 ounces dark chocolate, finely
chopped (170 g)

### Equipment

Use an 8-inch square metal baking pan, parchment paper, a fine grater, a mixing
bowl, and a hand mixer or sturdy wooden spoon. A sharp knife and a small microwave-
safe bowl are useful for cutting and dipping.

### Instructions

1. **Prepare the pan and oven.** Heat the oven to 325°F (165°C). Line the pan with
parchment, leaving an overhang on two opposite sides so you can lift out the cooled
shortbread.

2. **Rub the zest into the sugar.** Combine the sugar and orange zest in the mixing
bowl. Rub them together with your fingertips until the sugar smells strongly of
orange and feels slightly damp.

3. **Mix in the butter.** Add the softened butter and salt. Beat on low to medium
speed just until smooth and combined, scraping the bowl as needed. Mix in the vanilla.
Avoid whipping the mixture until fluffy; shortbread needs little incorporated air.

4. **Add the flour.** Mix on low speed, or stir by hand, until the flour disappears
and the dough forms moist clumps. Squeeze a little between your fingers. It should
hold together even if the mixture initially looks crumbly.

5. **Press into the pan.** Distribute the dough across the pan and press it into
an even layer, reaching the corners. A flat-bottomed measuring cup can help smooth
the surface. Prick the dough lightly all over with a fork.

6. **Bake.** Bake for 30–38 minutes, until the surface looks dry and the edges are
light golden. The center should be set, though it will remain tender while hot.
Begin checking at 30 minutes.

7. **Cut while warm.** Let the shortbread rest in the pan for about 10 minutes.
With a sharp knife, cut it into three rows, then divide each row into six bars.
Leave the pieces in the pan until completely cool before lifting them out.

8. **Melt the chocolate.** Place the chopped chocolate in a dry microwave-safe bowl.
Heat at half power in 20-second intervals, stirring between each, until nearly melted.
Stir until smooth. Keep water out of the bowl, since even a small amount can make
melted chocolate seize.

9. **Dip and set.** Dip one end of each cooled bar into the chocolate, supporting
the cookie gently. Let excess chocolate drip off, then place the bar on parchment.
Refrigerate briefly, about 15–20 minutes, until the coating is firm.

## Getting clean cuts and a tender crumb

Shortbread firms as it cools. Cutting it warm helps prevent the cracking that can
occur when a knife presses through a fully cooled slab. Make deliberate downward
cuts, and wipe the blade if dough begins sticking to it. Keep the bars in place
afterward; moving them while warm can break them.

If the dough seems unusually dry, first check that it has been mixed enough for
the butter to bind the flour. Don’t immediately add liquid. Too much flour, often
caused by scooping directly from the bag, can also produce a dry dough. Weighing
the flour is the most dependable approach.

Watch the color near the end of baking. Deep browning can overwhelm the orange flavor.
The bars should have lightly colored edges and a pale golden surface, not the darker
color expected from many drop cookies.

For decorating, completely cool cookies are less fragile and won’t warm the chocolate
coating. A diagonal dip looks attractive, but a simple dipped end is easier to handle.
If a bar breaks, drizzle chocolate over the pieces and serve them as small bites.

## Serving and storing for Christmas

Let the chocolate set before arranging the bars on a platter. Their orange flavor
pairs well with gingerbread, plain butter cookies, and nut cookies, giving a Christmas
cookie tray some variety without requiring another heavily spiced recipe.

Store the bars in an airtight container with parchment between layers. Keep them
in a cool place and enjoy within about five days for the best texture. Simply melted
chocolate is not tempered, so the coating may soften in a warm room or develop pale
streaks during storage. Those streaks affect appearance, not safety.

For longer storage, freeze the undecorated shortbread for up to two months in a
well-sealed container. Thaw it in the closed container, then dip it once it reaches
room temperature. This keeps the chocolate finish looking fresher and lets you complete
most of the baking before the holiday rush.

If packing the chocolate-dipped bars as gifts, choose a shallow, rigid tin or box
and separate the layers with parchment. Pack them snugly enough to limit movement,
without pressing on the coating. Shortbread travels better when it has little room
to slide.
