Christmas rocky road bars combine chocolate, soft marshmallows, and crunchy cookie
pieces in a rich, no-bake treat that’s easy to make ahead. Dried cranberries add
a little tartness, while a scattering of holiday sprinkles gives the bars a festive
finish. There’s no oven involved: melt the chocolate, fold in the fillings, and
let the refrigerator do the rest.

This version makes a thick rocky road slice with enough chocolate to hold everything
together without burying the marshmallows and cookies. Cut it into generous squares
for dessert or smaller pieces for a holiday cookie tray.

## What makes these Christmas rocky road bars work

Rocky road takes different forms. In the United States, the name often brings chocolate,
marshmallows, and nuts to mind. Australian and British versions frequently include
cookies or biscuits and are served as a slice. These bars bring those ideas together.

The balance of fillings affects how neatly the bars cut. Too many cookie crumbs
can make the mixture dry and difficult to bind; oversized cookie pieces leave gaps.
Break the cookies into roughly bite-sized chunks, keeping some smaller pieces for
texture.

Semisweet chocolate makes a good base because the marshmallows already contribute
plenty of sweetness. A small amount of butter softens the chilled chocolate slightly,
making it easier to bite and slice. Cranberries provide a welcome tart contrast,
though you can leave them out if you prefer a simpler chocolate marshmallow bar.

## Christmas rocky road bars recipe

**Yield:** 16 bars
**Preparation time:** About 25 minutes **Chilling time:** At
least 3 hours **Total time:** About 3 hours 25 minutes **Course:** Dessert

### Equipment

– 8-inch square baking pan, approximately 20 centimeters
 – Parchment paper – Large
microwave-safe bowl – Spatula – Sharp knife

### Ingredients

– 16 ounces (450 grams) semisweet chocolate, chopped, or semisweet chocolate chips
–
¼ cup (56 grams) unsalted butter, cut into small pieces – 5 ounces (140 grams) graham
crackers or digestive biscuits, broken into small chunks – 2 cups (100 grams) mini
marshmallows – ½ cup (60 grams) chopped toasted almonds or pecans, cooled – ⅓ cup(
40 grams) dried cranberries – 1 tablespoon holiday sprinkles, optional

### Instructions

1. **Prepare the pan.** Line the pan with parchment paper, leaving enough overhang
on two sides to lift out the chilled slab. A light coating of butter underneath
the parchment can help hold it in place.

2. **Melt the chocolate and butter.** Put the chocolate and butter in the microwave-
safe bowl. Microwave at 50 percent power in 20- to 30-second intervals, stirring
thoroughly between each interval. Stop heating when a few small pieces remain, then
stir until smooth. Keep the bowl and utensils dry, since water can cause melted
chocolate to seize.

3. **Let the mixture cool slightly.** Leave it for about 5 to 10 minutes, stirring
occasionally. It should remain fluid but feel only slightly warm. Adding marshmallows
to hot chocolate can melt them and remove their distinct soft texture.

4. **Add the fillings.** Fold in the cookie chunks, marshmallows, nuts, and cranberries
until everything is coated. Scrape along the bottom of the bowl so no pockets of
plain chocolate remain.

5. **Fill the pan.** Transfer the mixture to the prepared pan. Press it gently into
the corners and level the surface with the spatula. Avoid crushing the cookies or
packing the mixture down hard. Add the sprinkles while the chocolate is still soft.

6. **Chill until firm.** Refrigerate for at least 3 hours, or until the center feels
firm. A thick slab may need longer, especially if the mixture was still warm when
it went into the pan.

7. **Cut into bars.** Lift the slab out using the parchment. Let it stand at room
temperature for about 10 to 15 minutes before slicing. Use a sharp knife, wiping
the blade between cuts. For smaller Christmas candy bars, cut the slab into 25 pieces
instead of 16.

## Choosing cookies, chocolate, and festive additions

Graham crackers give these refrigerator chocolate bars a familiar, lightly sweet
crunch. Digestive biscuits are a little heartier and work equally well. Shortbread
makes a richer cookie chunk dessert, but it crumbles easily, so fold it in gently.

Semisweet chocolate produces a balanced result. Dark chocolate also works if you
enjoy a less sweet bar. Milk chocolate makes a sweeter, generally softer version,
particularly in a warm room. Chocolate chips are convenient, although some hold
their shape during heating and need extra stirring before they become smooth.

Keep substitutions close to the original quantity so there is still enough chocolate
to bind the mixture:

– **For a nut-free version:** Replace the nuts with an equal weight of extra cookie
chunks. Check every ingredient for relevant allergen warnings.
 – **For a cranberry-
free version:** Use raisins or chopped dried cherries, or omit the dried fruit. –**
For more color:** Replace a small portion of the cookies with candy-coated chocolate
pieces. Add them only after the melted chocolate has cooled. – **For peppermint
flavor:** Scatter a little crushed candy cane over the top shortly before serving.
Peppermint candy can become sticky during refrigerated storage.

Standard marshmallows usually contain gelatin. For vegetarian bars, choose marshmallows
labeled vegetarian or vegan. Gluten-free cookies can replace the graham crackers,
but check the chocolate, marshmallows, and decorations as well if the bars need
to be gluten-free.

## Getting clean slices without losing the crunch

Bars that shatter under the knife are often too cold. Let the slab soften briefly
at room temperature rather than forcing a blade through it straight from the refrigerator.
A knife warmed under hot water can also help, provided it is dried completely before
cutting.

If the mixture seems crumbly before it goes into the pan, check that the fillings
are thoroughly coated. Large cookie pieces may need breaking down a little more.
Avoid adding extra handfuls of dry ingredients once the chocolate is already carrying
the full recipe quantity.

A soft center usually needs more chilling time. Keep the slab in the pan until it
is firm throughout; cutting too early can pull marshmallows and cookie pieces out
of place.

## Storing and serving your holiday chocolate squares

Store the cut bars in an airtight container in the refrigerator for up to one week.
Separate stacked layers with parchment paper to keep the decorations tidy. Let them
sit out briefly before serving for a softer bite.

For longer storage, freeze the bars in a well-sealed container for up to two months.
Thaw them in the refrigerator with the container closed to limit condensation on
the chocolate.

These bars travel best chilled, especially in a warm car or crowded holiday kitchen.
For gifts, pack them in food-safe boxes or bags and include a note to refrigerate
them. Small paper candy cups make the pieces easy to lift from a shared dessert
tray and catch any stray cookie crumbs.
