Egg Sizes And Conversion Reference

This is one of those measures, which I keep coming back too, but can never seem to remember.  So, I thought I would consolidate it into a simple reference table.  This can especially help when switching between raw and the various types of pasteurized eggs available in the market for baking and other things.

It is a good idea to keep in mind that eggs vary in size, and these are my best approximates, which is where the art of cook meets subtlety.

Egg sizes commonly found in the United States

Here’s a listicle of egg sizes commonly found in the United States:

  1. Jumbo Eggs: Jumbo eggs are the largest size available in the market. They typically weigh around 2.5 ounces (70 grams) or more per egg. These eggs are great for recipes that require more egg volume or for those who prefer larger yolks.
  2. Extra-Large (XL) Eggs: Extra-large eggs are slightly smaller than jumbo eggs but still larger than the standard large eggs. They usually weigh between 2.25 to 2.5 ounces (63 to 70 grams) per egg. XL eggs are a versatile choice for baking and cooking.
  3. Large Eggs: Large eggs are the most commonly purchased eggs in the United States. They weigh around 2 ounces (56 grams) per egg. Large eggs are the standard size used in many recipes and are widely available in grocery stores.
  4. Medium Eggs: Medium eggs are smaller than large eggs and weigh approximately 1.75 ounces (49 grams) per egg. They are less common but can still be found in some grocery stores. If a recipe calls for medium eggs specifically, you can use these.
  5. Small Eggs: Small eggs are the smallest size available commercially. They typically weigh around 1.5 ounces (42 grams) per egg. Small eggs are less common and are often used in specialty recipes or for those who prefer smaller portion sizes.

It’s important to note that these sizes are based on industry standards, but there can be some variation between different brands or local producers. Always check the packaging or labels for accurate sizing information when purchasing eggs.
