To season the chicken
- 4 boneless, skinless, chicken thighs
- ¼ cup flour
- 1 tsp paprika
- ¼ tsp cayenne
- 1 tsp salt
For stew
- 2 tbsp olive oil
- 4 tbsp butter
- 1 cup onion, diced
- 2 cups colored bell pepper
- ½ cup parsley, chopped, plus more to taste
- 3 garlic cloves, minced
- 2 tbsp curry powder
- ½ tsp black pepper
- ½ tsp nutmeg
- 2 15 oz cans diced tomatoes
- ½ cup raisins
- Salt, to taste
- Silvered almonds to taste
Preparation Directions
- Mix the flour, salt, paprika, and cayenne in a medium bowl.
- Coat chicken thighs on both sides with flour mixture, shaking off excess.
- Heat the oil and two tablespoons of butter in a large Dutch oven over medium-high heat.
