A fresh herb bunch can bring several meals for two to life, provided you give it
a job before it disappears into the refrigerator. Parsley and cilantro are especially
useful: their leaves finish eggs, beans, pasta, and fish, while their tender stems
add flavor to dressings and skillet meals. The five dinners below use everyday ingredients
and modest herb portions, so you can enjoy the bunch without eating the same dish
all week.

## Plan five meals around one fresh herb bunch

Herb bunches vary considerably in size. For all five meals, you’ll need about **
1 cup chopped herbs**, including tender stems where appropriate. A small supermarket
bunch may not provide that much, so check what you have before planning every dinner.

Here’s how the herbs are divided:

| Meal for two | Chopped herbs |
 |—|—:| | Herb omelets with toast | 2 tablespoons
| | Lemony chickpea and rice bowls | ¼ cup | | Garlic-herb pasta with peas | ¼ cup
| | Sheet-pan fish and potatoes | ¼ cup | | Black bean tacos | 2 tablespoons |

Flat-leaf parsley works in every recipe. Cilantro is particularly good in the chickpea
bowls and tacos, and it also works with eggs, fish, and lemony pasta if you enjoy
its flavor. You can use a mixture of the two.

For simpler ingredient planning, these meals share olive oil, garlic, and lemons.
Frozen peas, canned beans, rice, and pasta keep the shopping list manageable. The
recipes are independent, so make them in whichever order suits your schedule, using
the most perishable ingredients first.

### Store the herbs before you start cooking

Remove damaged leaves and any ties squeezing the bunch. For parsley or cilantro,
trim the stem ends, stand the bunch in a jar with a little water, loosely cover
the leaves with a bag, and refrigerate. Keep the leaves above the water and change
the water when it becomes cloudy.

Wash herbs under running water before using them, then dry well. If you prefer to
wash the whole bunch at once, dry it thoroughly before refrigerating it in a container
lined with a clean paper towel. Excess moisture encourages deterioration.

Tender parsley and cilantro stems are edible. Chop them finely for cooked dishes
or dressing; discard tough, woody sections. Slimy herbs or herbs with mold should
be discarded.

## 1. Herb omelets with toast

**Serves two | About 15 minutes**

Eggs make a useful first stop for a small amount of herbs. Keep the filling modest
so the omelets fold easily and cook evenly.

### Ingredients

– 4 large eggs
 – 2 tablespoons chopped parsley or cilantro – ¼ teaspoon salt, or
to taste – Black pepper – 2 teaspoons butter or olive oil, divided – ¼ cup shredded
cheddar or crumbled feta, about 1 ounce (28 g) – 4 slices bread, toasted – 1 large
tomato, sliced, for serving

### Method

1. Beat the eggs with the herbs, salt, and pepper.
 2. Heat 1 teaspoon butter or
oil in a small nonstick skillet over medium-low heat. Add half the egg mixture.
3. As the edges set, gently draw them toward the center with a spatula, tilting
the pan so uncooked egg reaches the exposed surface. 4. When the eggs are almost
set, scatter half the cheese over one side. Fold the omelet and continue cooking
until no liquid egg remains. 5. Repeat with the remaining ingredients. Serve with
toast and sliced tomato.

Chop any stems particularly finely here. Larger pieces can feel coarse against the
soft eggs.

## 2. Lemony chickpea and rice bowls

**Serves two | About 15 minutes with cooked rice**

This bowl uses a small batch dressing made directly in the mixing bowl, saving both
herbs and washing up.

### Ingredients

– 2 tablespoons olive oil
 – 1 tablespoon lemon juice, plus more to taste – 1 teaspoon
Dijon mustard – 1 small garlic clove, finely grated – ¼ cup chopped parsley or cilantro–
Salt and black pepper – 1 can chickpeas, 15 ounces (425 g), drained and rinsed –
½ large cucumber, diced – 1 large tomato, diced – 2 cups cooked rice, about 12 ounces(
340 g)

### Method

1. Whisk the oil, lemon juice, mustard, garlic, herbs, salt, and pepper in a mixing
bowl.
 2. Add the chickpeas, cucumber, and tomato. Toss, then taste and adjust the
lemon juice or seasoning. 3. Divide the rice between two bowls and spoon the chickpea
mixture over it.

Finely chopped cilantro stems are particularly good in this dressing. If using refrigerated
leftover rice, reheat it until steaming hot throughout before serving. Cooked rice
should be refrigerated promptly, within two hours of cooking, and used within three
to four days.

## 3. Garlic-herb pasta with peas

**Serves two | About 20 minutes**

Parsley gives this pasta a familiar garlic-and-lemon flavor. Cilantro makes a different
but equally workable version; use whichever needs finishing.

### Ingredients

– 6 ounces (170 g) spaghetti or other pasta
 – 1 cup frozen peas, about 5 ounces(
140 g) – 2 tablespoons olive oil – 2 garlic cloves, thinly sliced – Pinch of red
pepper flakes, optional – ¼ cup chopped herbs – 1 teaspoon finely grated lemon zest–
1 tablespoon lemon juice – Salt and black pepper – Grated Parmesan, optional, for
serving

### Method

1. Cook the pasta in salted water according to the package directions. Add the peas
during the final two minutes. Before draining, reserve ¾ cup (180 ml) pasta water.

2. Meanwhile, warm the oil in a large skillet over medium-low heat. Add the garlic
and optional pepper flakes. Cook until fragrant, without letting the garlic brown.
3. Add the drained pasta, peas, and ¼ cup (60 ml) reserved water. Toss over low
heat, adding more water a splash at a time until the pasta looks lightly coated.
4. Remove from the heat. Stir in the herbs, lemon zest, and juice. Season and serve
with Parmesan if desired.

Adding the leaves at the end preserves more of their fresh flavor. Finely minced
stems can go into the skillet with the garlic.

## 4. Sheet-pan fish and potatoes with lemon herbs

**Serves two | About 40 minutes**

The potatoes need a head start. Adding the fish later prevents it from drying out
while the potatoes finish cooking.

### Ingredients

– 12 ounces (340 g) small potatoes, cut into ½-inch pieces
 – 2 tablespoons olive
oil, divided – Salt and black pepper – 2 fish fillets, such as cod or salmon, about
5–6 ounces (140–170 g) each – 1 garlic clove, finely grated – 1 tablespoon lemon
juice – ¼ cup chopped parsley or cilantro

### Method

1. Heat the oven to 425°F (220°C). Toss the potatoes with 1 tablespoon oil, salt,
and pepper on a rimmed baking sheet.
 2. Roast for 20 minutes, then turn the potatoes
and move them aside to make room for the fish. 3. Pat the fillets dry, place them
on the sheet, and season lightly. 4. Roast for another 10–15 minutes, depending
on thickness, until the potatoes are tender and the fish reaches 145°F (63°C) in
its thickest part. 5. Mix the remaining tablespoon oil with the garlic, lemon juice,
and herbs. Spoon over the cooked fish and potatoes.

Serve with cucumber or tomato left from the chickpea bowls, if available.

## 5. Black bean tacos with chopped herbs

**Serves two | About 15 minutes**

These tacos use the final few tablespoons of herbs. Tender stems season the beans,
and the leaves finish the filling.

### Ingredients

– 2 teaspoons olive oil
 – 1 garlic clove, minced – ½ teaspoon ground cumin – 1
can black beans, 15 ounces (425 g), drained and rinsed – ¼ cup (60 ml) water – 2
tablespoons chopped cilantro or parsley, stems and leaves separated – Salt – 4 small
tortillas – 1 tablespoon lemon or lime juice – Diced tomato, shredded cabbage, or
plain yogurt, for serving

### Method

1. Heat the oil in a skillet over medium heat. Add the garlic, cumin, and finely
chopped herb stems. Stir for about 30 seconds.
 2. Add the beans and water. Simmer
for five minutes, mashing some of the beans to thicken the filling. Season with
salt. 3. Warm the tortillas according to the package directions. 4. Divide the beans
among the tortillas. Add the citrus juice, herb leaves, and your chosen toppings.

## When the bunch is larger than the plan

Freeze surplus herbs while they still look fresh. Chop washed, dried parsley or
cilantro, pack small portions into an ice cube tray, cover with water, and freeze.
Transfer the frozen cubes to a labeled freezer container.

Freezing softens the leaves, so save those portions for soups, beans, sauces, or
rice rather than a crisp garnish. Low waste cooking works best when you preserve
usable ingredients early, before saving them becomes a rescue operation.
