Gluten free cookie pizza turns a soft chocolate chip cookie into a festive, sliceable
dessert. A chewy cookie crust supports swirls of vanilla buttercream, sprinkles,
chocolate chips, or candy chosen to suit the occasion. The recipe uses a cup-for-
cup gluten free flour blend, so there is no need to combine several specialty flours.
Careful measuring, a short chill, and modest baking time keep the cookie tender
instead of dry or crumbly.

## Gluten free cookie pizza recipe

This recipe makes one large cookie that can be cut into wedges like a pizza. Leave
the center mostly uncovered to show the chocolate chip cookie crust, or spread buttercream
across the whole surface for a sweeter, cake-like presentation.

**Yield:** 12 servings
**Preparation time:** 25 minutes **Chilling time:** 30 minutes**
Baking time:** 18 to 22 minutes **Cooling and decorating time:** About 1 hour **
Total time:** About 2 hours

### Equipment

– 12-inch round pizza pan or rimless baking sheet
 – Parchment paper – Large mixing
bowl – Medium mixing bowl – Electric hand mixer or stand mixer – Rubber spatula –
Piping bag and decorating tip, optional

### Ingredients for the chocolate chip cookie crust

– 2 1/4 cups (270 grams) gluten free all-purpose flour blend
 – 1/2 teaspoon xanthan
gum, only if the flour blend does not already contain it – 1/2 teaspoon baking soda–
1/2 teaspoon fine salt – 3/4 cup (170 grams) unsalted butter, softened – 3/4 cup
packed (150 grams) light brown sugar – 1/2 cup (100 grams) granulated sugar – 1
large egg, at room temperature – 1 large egg yolk, at room temperature – 2 teaspoons
pure vanilla extract – 1 cup (170 grams) semisweet chocolate chips

### Ingredients for the vanilla buttercream

– 3/4 cup (170 grams) unsalted butter, softened
 – 3 cups (360 grams) powdered sugar–
2 teaspoons pure vanilla extract – 1/8 teaspoon fine salt – 2 to 3 tablespoons milk
or heavy cream – Gel food coloring, optional – Gluten free sprinkles, miniature
chocolate chips, or candies for decorating

## Choosing the gluten free flour blend

Use a blend labeled as a cup-for-cup or measure-for-measure substitute for wheat
flour. These products usually combine rice flour with starches such as tapioca or
potato starch. Many also contain xanthan gum.

Check the ingredient label before adding extra xanthan gum. Too little binder can
leave a giant gluten free cookie fragile, but too much may give it a gummy or slightly
rubbery texture. If the blend already lists xanthan gum, omit the additional amount
in the recipe.

Almond flour, coconut flour, cassava flour, and single-grain rice flour cannot replace
the all-purpose blend at the same measurement. Each absorbs fat and moisture differently.
For the most consistent result, weigh the flour. Scooping it directly from the bag
can compact it into the measuring cup and produce a dry cookie.

## Making the giant gluten free cookie

Line the pizza pan with parchment paper. If using a baking sheet, draw a 10-inch
circle on the underside of the parchment as a guide.

In a medium bowl, whisk together the gluten free flour blend, xanthan gum if needed,
baking soda, and salt. Break up any small clumps so the dry ingredients will disperse
evenly.

In a large bowl, beat the softened butter, brown sugar, and granulated sugar for
about two minutes. The mixture should look creamy and slightly lighter in color.
Beat in the whole egg, egg yolk, and vanilla until combined.

Add the dry ingredients to the butter mixture. Mix on low speed just until no visible
streaks of flour remain. Fold in the chocolate chips with a spatula. Avoid extended
mixing once the flour has been added.

Place the dough in the center of the prepared pan. With lightly dampened hands,
press it into an even circle about 10 inches across and roughly 1/2 inch thick.
Smooth the outer edge to reduce cracking. Leave open space around the dough because
it will spread as it bakes.

Refrigerate the shaped dough for 30 minutes. Near the end of the chilling time,
heat the oven to 350°F (175°C).

Bake for 18 to 22 minutes. The outer edge should be light golden brown, while the
center should look set but still soft. The cookie will continue to firm as it cools.
Baking until the center appears completely dry can cost the cookie its chewy texture.

Set the pan on a wire rack. Let the cookie cool completely on the pan before moving
or decorating it. A warm gluten free cookie is delicate, and buttercream will melt
on even a slightly warm surface.

## Preparing the vanilla buttercream

Beat the softened butter for two to three minutes, until smooth. Add the powdered
sugar about one cup at a time, mixing on low speed after each addition. Add the
vanilla, salt, and two tablespoons of milk or cream.

Beat for another two minutes. If the frosting is too stiff for piping, add more
milk one teaspoon at a time. If it becomes too loose, mix in a small amount of powdered
sugar. Gel food coloring works better than liquid coloring because it changes the
consistency less.

For a classic cookie pizza design, fit a piping bag with a large star tip and pipe
a buttercream border around the cooled cookie. Add small rosettes or stars toward
the center, leaving some of the cookie visible. A spatula can also be used to spread
a simple ring of frosting around the edge.

Finish with sprinkles, miniature chocolate chips, or chopped candy. Press larger
decorations gently into the buttercream so they stay in place when the cookie is
sliced.

## Cookie pizza decorating ideas

A birthday dessert recipe can follow the colors of the party without changing the
cookie itself. Tint portions of the vanilla buttercream with different gel colors,
then alternate them around the border. Confetti sprinkles give the cookie a familiar
birthday-cake appearance.

For a chocolate-focused version, use chocolate chips, chocolate curls, or pieces
of a certified gluten free chocolate bar. Seasonal designs can be made with colored
frosting and sprinkles, but check every package. Some sprinkles and candies are
produced on shared equipment or contain ingredients that are not gluten free.

Avoid loading the center with heavy decorations. The cookie is softer there, and
thick candy pieces can make neat wedges difficult to cut. Smaller toppings distribute
more evenly and are easier to serve.

## How to preserve a chewy cookie texture

Brown sugar and the additional egg yolk supply moisture and help create a soft center.
The chilling period limits spreading and gives the gluten free flour time to hydrate.
Neither step should be skipped.

The cookie may appear a little underdone when it comes out of the oven. Look at
the edge rather than waiting for the center to brown. Once the edge is golden and
the surface no longer looks wet, remove the pan. Carryover heat finishes the center
during cooling.

Pan color can affect the result. Dark metal pans absorb more heat and may brown
the bottom quickly. Begin checking around 16 minutes if using one. A light-colored
aluminum pan generally produces more gradual browning.

## Slicing, storing, and serving

For clean wedges, refrigerate the decorated cookie for 15 to 20 minutes so the buttercream
firms slightly. Cut it with a large sharp knife, wiping the blade between slices.
Let chilled portions sit at room temperature briefly before serving for a softer
texture.

An unfrosted cookie can be stored in an airtight container at room temperature for
up to three days. Once decorated with this buttercream, it may remain at a cool
room temperature for a day, but refrigeration is preferable for longer storage or
in a warm kitchen. Cover it well to prevent drying and refrigerate for up to four
days.

The undecorated cookie can also be frozen. Wrap the fully cooled cookie in plastic
wrap, then place it in a freezer-safe container or wrap it again in foil. Freeze
for up to two months and thaw at room temperature before decorating.

For guests with celiac disease or a serious gluten sensitivity, ingredients are
only part of the safety picture. Use clean bowls, utensils, mixers, pans, and work
surfaces that have not retained wheat flour or crumbs. Confirm that the flour blend,
chocolate chips, sprinkles, vanilla, and other decorations are labeled gluten free,
and avoid shared serving utensils that could introduce cross-contact.
