Grow chervil in cool weather and partial shade for tender leaves with a mild parsley
flavor and a hint of anise. This annual herb prefers cool conditions, evenly moist
soil, and shelter from strong afternoon sun. Sow chervil seeds where the plants
will grow, keep the soil from drying out, and make additional sowings as the season
continues. These simple steps help provide fresh leaves before warm weather encourages
the plants to flower.

## Grow chervil in cool weather and partial shade

Chervil grows best in cool spring and fall weather. It can tolerate some sun, but
partial shade is helpful, especially in regions where spring warms quickly. A spot
with morning sun and afternoon shade, or bright dappled light, can keep plants from
overheating and slow chervil bolting.

In mild climates, chervil may grow through much of the cool season. In colder areas,
sow it as soon as the soil can be worked in spring, then plant again as temperatures
begin to ease in late summer. Hot weather often shortens the harvest, so fall sowings
can be more dependable than trying to keep a spring planting going through summer.

Chervil is one of the cool weather herbs that does not need a sunny, exposed garden
bed to thrive. A partly shaded location can be a good choice, but dense shade may
leave plants thin and slow-growing.

## Sow chervil seeds where they will grow

Chervil has a long taproot and usually does not respond well to transplanting. Direct
sowing avoids disturbing the root. Choose a site with loose, fertile soil that drains
well, and remove stones or compacted clumps that could interfere with root growth.

Sow seeds about ¼ inch deep, following the spacing on the seed packet. If seedlings
emerge close together, thin them gradually so the remaining plants have room to
form leafy growth. Handle seedlings gently when thinning; cutting extras at soil
level avoids tugging on neighboring roots.

Fresh seed tends to give the best results. Chervil seeds can lose viability in storage,
so check the packet date and avoid relying on old seed if germination has been poor.
Keep the soil consistently moist while waiting for seedlings. Germination may take
a week or two, sometimes longer, depending on seed freshness and soil temperature.
Avoid letting the surface dry out during this period.

## Keep soil moisture steady

Chervil needs regular moisture, particularly while seeds are sprouting and plants
are establishing. The soil should feel lightly moist, not waterlogged. Water deeply
enough to reach the root zone, then let excess water drain. In containers, check
moisture more often because potting mix dries faster than garden soil.

A thin layer of organic mulch can help reduce evaporation and keep the soil cooler.
Leave a little space around each plant’s stem so the base does not stay wet. If
the soil remains soggy, roots may suffer and plants may grow poorly. Improving drainage
is more useful than adding water on a fixed schedule.

## Choose a suitable container

Chervil can grow in a pot, provided the container gives its taproot room and has
drainage holes. A pot at least 8 inches deep is a practical starting point; a deeper
container offers more room for root development. A broad pot is useful if you want
to sow several plants, but avoid crowding them.

Use a quality potting mix rather than dense garden soil. Set the container where
plants receive bright light and some protection from hot afternoon sun. Because
pots lose moisture quickly, check them regularly, especially on breezy or warm days.
Do not leave the container standing in a saucer of water.

## Use succession planting to extend the harvest

A single sowing may provide a short harvest, particularly in spring. Succession
planting means making small additional sowings at intervals while conditions remain
cool. Sow a new patch every two or three weeks as space and weather allow. This
spreads the harvest across the season and reduces the gap that can occur when older
plants begin to flower.

As temperatures rise, chervil may bolt, sending up a flower stalk. The leaves become
less tender and their flavor can change after flowering begins. Shade and steady
moisture may delay bolting, but they cannot keep chervil productive through prolonged
heat. For a continuing supply, start another planting when cooler weather returns.

## Harvest chervil while the leaves are tender

You can begin harvesting once plants have enough leaves to spare, often when they
are several inches tall and well established. Snip outer stems with clean scissors,
leaving the growing center intact so the plant can continue producing leaves. Take
only part of a young plant at a time.

Harvest before flower stalks develop for the best leafy growth. Chervil’s delicate
flavor is strongest when used fresh, and it fades with prolonged cooking or drying.
Add chopped leaves near the end of cooking, or use them in salads, sauces, eggs,
and soups. Frequent light harvesting can encourage fresh growth, but once warm weather
triggers bolting, sowing a new crop in a cooler spot is usually more effective than
trying to prolong the old one.
