Grow fenugreek from seed for a quick crop of fragrant leaves that can be harvested
young and used fresh or cooked. Fenugreek, also called methi, is an annual herb
that grows well in garden beds and containers. The plants prefer mild weather, evenly
moist soil, and plenty of light. With the right timing, you can begin cutting leaves
within a few weeks of sowing.

## Choose a season and a suitable spot

Fenugreek grows best in cool to mild weather. In regions with cold winters, sow
it outdoors after the last frost, once the soil has warmed. In hot-summer areas,
plant in fall or winter when temperatures are more moderate. Prolonged heat can
make plants flower early, which shortens the leaf-harvest period.

Pick a sunny location, or one with light afternoon shade in a warm climate. A garden
bed should drain well; fenugreek does not thrive in waterlogged soil. For container
growing, choose a pot at least 6 inches deep with drainage holes. A wider pot provides
more room for a useful leaf crop.

Use loose, fertile soil enriched with compost. Fenugreek tolerates ordinary garden
soil as long as water drains freely. It is a legume, but a short crop grown for
leaves generally does not need heavy feeding. Avoid adding large amounts of high-
nitrogen fertilizer, which can encourage leafy growth at the expense of a balanced
plant.

## How to grow fenugreek from seed

Use whole, untreated fenugreek seeds intended for planting or sprouting. Seeds sold
for cooking may be old, heat-treated, or otherwise unsuitable for germination, so
check the source if you are unsure.

Sow directly in the bed or pot. Fenugreek develops a taproot and is easier to grow
when it is not transplanted. Scatter seeds across the soil surface for a dense leaf
crop, or place them in shallow rows. Cover them with about ¼ inch of soil and water
gently so the seeds stay in place.

For leaves, close spacing is practical. In rows, space seeds roughly 1 inch apart,
with rows about 4 to 6 inches apart. In a container, scatter seeds evenly, aiming
for a thin, consistent layer rather than a thick pile. Crowded seedlings compete
for light and airflow, so remove a few if they emerge in dense clumps. The remaining
plants can be only an inch or two apart for an early leaf harvest.

Soaking the seeds for several hours before planting may help them take up water,
but it is optional. Keep the soil evenly moist while the seeds germinate. In suitable
conditions, seedlings often appear within about 5 to 10 days; cool soil or dry spells
can slow germination. Once the seedlings are established, water when the soil surface
begins to dry. Frequent shallow watering is less helpful than watering deeply enough
to moisten the root zone.

## Care for young plants

Give seedlings steady light and avoid letting the bed dry out completely. If growing
indoors, place the pot near a bright window or under a grow light. Turn the pot
occasionally if the plants lean toward the light.

Fenugreek usually needs little maintenance. Weed around outdoor seedlings while
they are small, taking care not to disturb their shallow roots. Good spacing and
drainage help reduce the damp, crowded conditions that can encourage plant problems.
If you sowed a dense patch, thinning the seedlings improves airflow and makes it
easier to harvest cleanly.

For a continuous supply, sow a small amount every two or three weeks during the
suitable growing season. Succession sowing is especially useful because one planting
may mature quickly, and hot weather can bring flowering sooner than expected.

## When to harvest fenugreek leaves

For a young-leaf harvest, cut the tops when plants are about 4 to 6 inches tall,
often around three to four weeks after sowing. Use clean scissors and leave a few
inches of stem above the soil. Some plants may produce additional growth after cutting,
though regrowth depends on weather, spacing, and how much of the plant remains.

Harvest before the plants flower for tender leaves and a longer picking period.
If they begin to produce flower stalks, the leaves may become less tender and the
plant will shift its energy toward seed production. You can still use the leaves,
but the best time for a soft, fresh crop has passed.

For fenugreek microgreens, sow seeds more densely and cut the seedlings when they
are a few inches tall, usually before they develop substantial true leaves. Microgreens
are harvested once, close to the soil line. A leaf crop is grown longer, allowing
the plants to develop larger leaves and sometimes regrow after cutting.

Rinse harvested leaves under cool running water and dry them gently. Use them soon
for the freshest flavor, or refrigerate them in a loosely wrapped, dry paper towel
inside a container. Sow another small batch rather than relying on one planting
for a long season; fenugreek grows quickly, but its best leaf production comes during
mild weather.
