Grow garlic chives in a pot if you want their mild garlic flavor without letting
a patch spread through the garden. Garlic chives ( _Allium tuberosum_ ) are clump-
forming perennials, but their white flowers can produce seeds that sprout in nearby
pots and garden beds. A container with drainage holes, regular harvesting, and timely
removal of flower heads keeps the plants productive and limits unwanted seedlings.

## Choose a pot and provide good drainage

Use a container at least 8 inches deep, with drainage holes in the bottom. A pot
roughly 10 to 12 inches wide gives one clump room to grow; a larger container can
hold several plants. Garlic chives gradually form a dense clump, so a roomy pot
also reduces the need to divide them as often.

Fill the container with a quality potting mix rather than garden soil, which can
compact and hold too much water in a pot. Garlic chives drainage is especially important
in cool or rainy weather. Empty any saucer after watering so the roots are not left
sitting in water. The soil should stay lightly moist while the plants are growing,
but it should not remain soggy.

## Give garlic chives enough sun

Place the pot where it receives full sun for at least six hours a day. Garlic chives
can grow in partial shade, though flowering and leaf growth may be less vigorous.
In very hot climates, a little afternoon shade can help the leaves stay fresh.

Water when the top layer of potting mix begins to dry. Containers dry out faster
than garden beds, especially in warm, windy weather, so check them regularly. A
light layer of compost on the soil surface in spring can supply nutrients. Avoid
heavy feeding, which may encourage soft growth without improving the flavor.

## Prevent garlic chives from self-seeding

Garlic chives flower on tall stems, usually producing clusters of white, star-shaped
flowers. The flowers attract pollinators, but once they are pollinated, seed heads
can form. If left to mature, those seeds may fall into the pot or nearby soil and
sprout later.

For the simplest control, remove flower stems as soon as the blossoms fade, before
seed heads dry and turn papery. If you want to enjoy the flowers, leave a few stems
while they are in bloom, then cut them back promptly. To save seed, keep one or
two heads and collect the seeds after they have dried, before they scatter.

A container helps contain the roots, but it does not prevent seeds from traveling
beyond the pot. Check the soil around the container and pull young seedlings while
they are small. They are easier to remove before their roots become established.

## Harvest leaves to keep the clump tidy

Garlic chives harvest begins once plants have enough leaves to recover after cutting.
Use clean scissors to cut leaves near the base, leaving about 2 inches of growth
above the soil. Take only a portion of the leaves at a time, especially from young
plants, so the clump can continue producing new growth.

Harvesting regularly keeps the leaves tender and gives you a steady supply for cooking.
The flat leaves have a mild garlic flavor and can be snipped into eggs, soups, salads,
and stir-fries. Flower stalks are edible too, though they are firmer than the leaves.
Remove any tough or damaged leaves as you work.

## Simple garlic chives maintenance through the year

Garlic chives need little special care once established. Remove yellowed leaves
and spent flower stems, water during dry spells, and add a small amount of compost
in spring. In a crowded pot, lift and divide the clump in spring or early fall.
Replant a portion in fresh potting mix and share or discard the extra divisions.

The plants die back or slow down in cold weather, depending on the climate. In regions
with harsh winters, a container’s roots are more exposed to freezing temperatures
than roots in the ground. Move the pot to a sheltered spot, such as an unheated
garage, or protect it with insulating material during the coldest periods. Water
sparingly while the plant is dormant, keeping the mix from becoming completely dry
without leaving it wet.

With routine cutting and prompt deadheading, garlic chives remain a manageable container
herb. The main task is preventing mature seeds from spreading; the rest of the care
is simply keeping the pot drained, watered, and large enough for the clump.
