Grow saffron crocus in containers when you can provide sun, fast-draining soil,
and a dry resting period in summer. The plants need little space, and their autumn
flowers produce the vivid red stigmas used as saffron. A pot will not yield a large
spice harvest, but a handful of flowers can make a satisfying start.

## Choose a pot and prepare for drainage

Use a sturdy container with several drainage holes. Saffron crocus is vulnerable
to rot in waterlogged soil, so saffron crocus drainage deserves more attention than
frequent feeding. A pot at least 8 to 10 inches deep gives the corms room below
the surface and allows space for roots. Wider pots are useful if you plan to plant
several.

Fill the container with a loose, well-draining potting mix. A standard mix amended
with coarse sand, perlite, or fine gravel can help excess water escape. Avoid garden
soil in pots; it may compact and hold too much moisture. Set the container where
the plants will receive at least six hours of direct sunlight a day, especially
during the growing season.

## Plant saffron corms at the right depth

Buy firm, healthy saffron corms from a reputable nursery. Plant them in late summer
or early fall, before the usual flowering period. In a container, place each corm
about 4 to 6 inches deep, with the pointed end facing up. Leave roughly 2 to 3 inches
between corms so they have room to grow.

Saffron planting depth affects both stability and protection from temperature swings.
Planting too shallow can expose corms to drying and cold; planting too deep may
delay or weaken flowering. Cover them with soil and water once to settle the mix.
After that, keep the soil lightly moist while the corms establish, but never leave
the pot standing in water.

Saffron crocus, _Crocus sativus_, is an autumn-blooming crocus grown from corms.
It is sterile and does not produce viable seed, so new plants come from offsets
that develop around the original corm. Do not confuse it with autumn crocus, _Colchicum
autumnale_, which is highly toxic. Check the botanical name when buying or identifying
plants.

## Care for the plants through the seasons

Crocus sativus care is straightforward once the corms are planted. In fall, flowers
emerge, sometimes before the leaves are prominent. Water when the upper inch of
soil feels dry, adjusting for rain and the pot’s location. Containers under eaves
may need more attention than those exposed to rainfall.

After flowering, narrow leaves grow and collect energy for the next season. Keep
the pot in sun and water when the soil begins to dry. The leaves may remain through
winter and spring, then yellow and die back as the corms enter saffron crocus dormancy
in late spring or early summer. Let the foliage fade naturally; cutting it while
it is green can reduce the corms’ stored energy.

During summer dormancy, keep the mix mostly dry. Move the container under cover
if summer rain is likely to keep it saturated, but do not seal the pot in a place
with no airflow. In cold regions, containers are more exposed to freezing than garden
soil. A sheltered location or unheated garage may help protect the corms during
severe cold, provided the pot stays cool and dry rather than warm enough to prompt
growth.

## Harvest the flowers promptly

The saffron harvest begins when the flowers open, usually in fall. Check the pot
each morning during bloom. Pick flowers after they open and before they wilt, ideally
on a dry day. Each flower has three red stigmas, the threadlike parts used as saffron.

Remove the stigmas with clean fingers or tweezers. Keep the red portions and discard
the pale yellow style if you want the strongest color and flavor. Handle the threads
gently; they are delicate and can be lost among the petals. A single flower produces
only a small amount, so several corms are needed for a useful kitchen supply.

## Dry and store the saffron

Fresh stigmas must be dried before storage. Spread them in a single layer on a clean
screen or parchment and let them dry in a warm, dry place with good airflow. They
can also be dried gently with low heat, but watch closely: high heat can scorch
the threads and diminish their aroma. They are ready when dry and brittle, not soft
or damp.

Saffron stigma drying should be thorough because leftover moisture can encourage
spoilage. Once cool, store the threads in a small airtight container away from light,
heat, and humidity. Their aroma often improves after a few weeks of storage. Use
a small pinch at a time, steeping the threads in warm water or broth before adding
them to a dish.

A container of saffron crocus will not produce a jarful of spice in its first season.
The corms may multiply over time, and their offsets can be separated and replanted
during dormancy if the pot becomes crowded. With sun, well-drained soil, and a dry
summer rest, the same container can return with fall flowers year after year.
