Easy Mexican Roast Pork Recipe
Ingredients:
- 2 pound loin center roast
- 1 cup pitted plums
- 2 tbsp olive oil
- 2 tbsp butter
- 2 sprig of rosemary
- 1 medium onion, sliced
- 1 stalk of celery, chopped
- 2 garlic cloves
- 1 pound frozen green and yellow beans
- 2 oranges, juiced
- Salt and pepper, to taste
Preparation Direction
- Using a long knife, make a hole along the center of the meat.
- Stuff the roast with the pitted plums.
- Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large pan. Add the stuffed meat and 2 sprigs of rosemary and cook for 2 minutes on all sides.
- Remove the cooked pork and the rosemary from the pan.
- In the same pan, add the onion, celery and garlic. Cook for 3 minutes.
- Add the orange juice, salt, pepper, and 1 tbsp butter.
- In an oven-proof deep dish, add the green and yellow beans, the cooked vegetable, the cooked rosemary, and the stuffed meat.
- Cover with foil and cook for 30 minutes at 390 degrees Fahrenheit, then remove the foil and cook for 20 minutes at 390 degrees Fahrenheit.
- Let to cool for 5 minutes, then slice.
