### How to Plan a Crêpe Bar for Brunch: Portions, Fillings, and a Prep Schedule

A crêpe bar works best when the crêpes are cooked before guests arrive. Make them
ahead, set out a short list of sweet and savory fillings, and warm only a few at
a time. That keeps the host out of the kitchen and gives guests room to build a
plate they like.

For a brunch with other food on the table, plan on about three 8- to 9-inch crêpes
per adult: usually two savory and one sweet. Make a few extra for second helpings
or torn crêpes. For six guests, prepare about 20 crêpes; for twelve, make about
40.

## Choose the menu before you shop

A long row of fillings may look festive, but every extra dish adds preparation,
serving utensils, and food to keep at a safe temperature. Two savory combinations
and two or three sweet toppings are plenty.

A practical menu is:

 * **Savory:** ham and cheese; sautéed mushrooms and spinach
 * **Sweet:** strawberries and bananas; whipped cream, jam, or a little sugar and
   lemon

For a recipe to follow, see [King Arthur’s Basic Crêpes](https://www.kingarthurbaking.com/recipes/basic-crepes-recipe).
[Love & Lemons’ crêpe recipe](https://www.loveandlemons.com/crepes/) is another
useful reference and includes ideas for fillings. Use either recipe’s stated yield
to check how many batches you need.

The quantities below assume about 12 crêpes per batch, with a little variation depending
on pan size and how much batter you use. If your recipe yields fewer, make another
batch rather than stretching the batter too thin.

## How many crêpes per person?

Three crêpes per adult is a useful planning estimate when crêpes are the main brunch
dish and guests can choose both savory and sweet fillings. Children or guests eating
alongside eggs, fruit, pastries, or other substantial dishes may take fewer.

For a flexible spread, divide the count roughly two-thirds savory and one-third
sweet. That is a planning guide, not a rule: guests can fill any crêpe with anything
on the table. The totals below include a small cushion.

### Plan for six guests

Make about **20 crêpes**: enough for 18 planned portions, with a couple left over.

**Shopping list**

**Crêpes**

 * 3 cups all-purpose flour
 * 4 cups milk
 * 6 eggs
 * 4 tablespoons melted butter, plus a little more for the pan
 * Salt, according to the recipe

**Savory fillings**

 * 6 ounces thinly sliced ham
 * 8 ounces grated Gruyère, Swiss, or cheddar
 * 8 ounces mushrooms
 * 5 ounces baby spinach

**Sweet fillings**

 * 1 pound strawberries
 * 3 bananas
 * 1½ cups whipped cream or plain Greek yogurt
 * 1 jar of jam, lemon curd, or chocolate-hazelnut spread
 * 1 lemon, optional, for serving with sugar

This amount allows roughly 12 savory crêpes and six sweet ones, with enough filling
for guests to combine ingredients as they wish. The cheese and fruit can stretch
across more portions if guests use modest amounts.

### Plan for twelve guests

Make about **40 crêpes**: enough for 36 planned portions and several extras.

**Shopping list**

**Crêpes**

 * 6 cups all-purpose flour
 * 8 cups milk
 * 12 eggs
 * 8 tablespoons melted butter, plus more for the pan
 * Salt, according to the recipe

**Savory fillings**

 * 12 ounces thinly sliced ham
 * 1 pound grated Gruyère, Swiss, or cheddar
 * 1 pound mushrooms
 * 10 ounces baby spinach

**Sweet fillings**

 * 2 pounds strawberries
 * 6 bananas
 * 3 cups whipped cream or plain Greek yogurt
 * 1 large jar of jam, lemon curd, or chocolate-hazelnut spread
 * 2 lemons, optional, for serving with sugar

This plan gives you enough for about 24 savory crêpes and 12 sweet ones. If you
expect a hearty crowd or have few side dishes, add another dozen crêpes and increase
the fillings by about one-third.

## Prepare the fillings without adding extra work

Choose fillings that can be cooked, sliced, or portioned ahead. For the savory choices,
cook the mushrooms until their released liquid has evaporated, then fold in the
spinach and cook just until wilted. Let the mixture cool before refrigerating it.
At serving time, warm it in a covered pan or in the microwave.

Keep the ham sliced and the cheese grated in separate containers. That lets guests
choose one or both, and it avoids having to prepare a separate finished filling
for each combination.

Wash and dry strawberries before slicing them. Slice bananas close to serving time
so they are less likely to brown. Keep whipped cream, yogurt, and other dairy toppings
refrigerated until needed. Put jam or other shelf-stable spreads on the table shortly
before guests arrive.

### The day before

 1. **Cook the crêpes.** Let each one cool on a plate or rack before stacking it with
    a piece of parchment or waxed paper between layers. Wrap the stack tightly and
    refrigerate.
 2. **Prepare the mushrooms and spinach.** Cool the cooked filling promptly, cover
    it, and refrigerate.
 3. **Prepare the ham and cheese.** Slice or grate them, then store them in separate
    covered containers.
 4. **Wash the fruit.** Dry the strawberries well and refrigerate them whole. Leave
    bananas uncut.
 5. **Set up the serving dishes.** Choose bowls and platters, and label them if guests
    may need to know about allergens or ingredients.

### About an hour before brunch

Arrange the table and serving station, then take stock of what needs warming. Keep
the refrigerated fillings cold while you set up. If using oven-safe dishes for a
warm filling, heat them shortly before serving.

### Just before guests arrive

Warm a small stack of crêpes, rather than all of them. Place them in a covered oven-
safe dish in a low oven, around 200°F (95°C), and serve promptly. They can also
be rewarmed in a skillet for a few seconds per side. Keep the remaining crêpes wrapped
and warm another small stack when the first runs low.

The goal is to replenish often, not to leave the entire supply sitting out. A covered
stack stays softer than crêpes spread on a platter.

## Arrange the crêpe buffet for easy serving

Set the station in the order guests will use it: plates, crêpes, savory fillings,
sweet fillings, then napkins and utensils. Keep savory and sweet toppings in separate
areas so guests can find what they want without reaching across the whole table.

Use a separate spoon or serving utensil for every filling. Put each utensil in its
own dish or rest it beside the container, and replace it if it falls into another
filling. This is especially helpful when serving guests with food allergies or dietary
restrictions. Small labels can identify items such as dairy, nuts, or meat.

Use shallow dishes for toppings so guests can see what remains. Set out only part
of each filling at first, keeping the rest covered in the refrigerator or on the
stove. Refill the table with fresh, smaller portions as needed. This prevents the
whole meal from sitting at room temperature and makes it easier to keep the serving
area tidy.

## Keep hot and cold foods at safe temperatures

Perishable foods such as cooked mushrooms and spinach, ham, cheese, whipped cream,
and yogurt should not sit out for an extended period. Keep cold items refrigerated
until serving, and set out modest quantities that can be replaced from the refrigerator.
For food-safety guidance, keep cold foods at 40°F (4°C) or below and hot foods at
140°F (60°C) or above. Perishable food left at room temperature for more than two
hours should be discarded; the limit is one hour if the temperature is above 90°
F (32°C).

For a relaxed brunch, serve the savory fillings in small batches and warm replacements
as needed. A slow cooker set to a safe hot-holding temperature can work for a cooked
filling, but it is unnecessary for a small gathering if the stove or microwave is
nearby. Keep cold toppings on a bed of ice if they need to remain on the table for
a longer service.

## A simple plan that lets you enjoy brunch

For six guests, make about 20 crêpes; for twelve, make about 40. Cook them the day
before, prepare the savory fillings ahead, and put out only a portion of each topping
at a time. With a short menu, a sensible serving station, and separate utensils
for each dish, guests can assemble their own plates while you spend the meal at
the table instead of flipping crêpes at the stove.
