Mincemeat bars pair a buttery shortbread base with spiced fruit filling and a crumbly
golden topping. They have much of the flavor of mince pies without the work of rolling
pastry or lining individual tins. One dough makes both the base and the crumble,
while prepared mincemeat keeps the filling simple. Baked in a square pan and cut
after cooling, these bars make a welcome addition to a Christmas cookie plate.

The filling stays pleasantly soft beneath the crisp topping, so patience after baking
pays off. Let the slab cool completely before slicing, and you’ll get neat squares
that are easy to pack, serve, or freeze for later in the holiday season.

## Choosing mincemeat for the bars

Use **ready-to-use sweet mincemeat pie filling**, the fruit mixture sold in jars
or tubs for holiday baking. It commonly contains dried fruit, apple, citrus peel,
sugar, spices, and sometimes brandy or another spirit. Despite the name, many modern
versions contain no meat, although some include beef suet. Check the label if you
need a vegetarian filling.

Condensed mincemeat requires preparation according to its package directions before
it can be used here. Ground meat is not a substitute.

A thick, spoonable filling works best. It should spread easily without releasing
a puddle of liquid. If homemade mincemeat seems unusually wet, cook it gently in
a saucepan until the excess moisture evaporates, then cool it before assembling
the bars. Avoid adding extra juice or brandy to a filling that already has a loose
consistency.

Taste the mincemeat before adding other flavorings. Most prepared fillings are already
sweet and well spiced. A little orange zest can freshen the flavor, but extra sugar
usually isn’t necessary.

## Mincemeat bars with shortbread crumble

This recipe makes a substantial bottom crust and a lighter layer of crumbs on top.
The shortbread dough contains no baking powder, so it bakes into a firm, tender
base rather than a cake-like layer.

**Yield:** 16 bars
**Prep time:** About 20 minutes **Baking time:** 45–55 minutes**
Cooling time:** At least 2 hours **Total time:** About 3 hours 15 minutes **Equipment:**
9-inch (23 cm) square metal baking pan, parchment paper, mixing bowl

### Ingredients

– 2½ cups (300 g) all-purpose flour
 – ½ cup (100 g) granulated sugar – ¼ teaspoon
fine salt – 1 cup (227 g) unsalted butter, softened but not melted – 1 teaspoon
vanilla extract – About 2 cups (approximately 550 g) ready-to-use sweet mincemeat
pie filling – 1 teaspoon finely grated orange zest, optional – Powdered sugar, for
serving, optional

The weight of mincemeat varies with its ingredients and consistency. Use enough
to make an even layer over the base, about ¼ inch (6 mm) thick.

### Instructions

1. **Prepare the pan and oven.** Heat the oven to 350°F (175°C), using a conventional
oven setting. Lightly grease the pan and line it with parchment paper, leaving an
overhang on two opposite sides so you can lift out the cooled bars.

2. **Make the crumble mixture.** Stir together the flour, granulated sugar, and
salt in a large bowl. Add the softened butter and vanilla. Work them into the dry
ingredients with a pastry blender, your fingertips, or a mixer on low speed until
the mixture forms moist crumbs. A handful should hold together when squeezed. Stop
before it becomes a smooth paste.

3. **Press in the base.** Reserve about one-third of the mixture for the topping.
Scatter the remaining two-thirds over the bottom of the pan and press it into an
even layer, reaching into the corners. Use the bottom of a measuring cup to smooth
the surface without packing it excessively hard.

4. **Bake the crust.** Bake for 15–18 minutes, until the surface looks set and the
edges are just beginning to color. The center should still be pale.

5. **Add the filling.** Stir the orange zest into the mincemeat, if using. Spoon
the filling over the hot crust in small portions, then spread gently into an even
layer. This is easier than placing the entire amount in the center and dragging
it across the tender base.

6. **Add the crumble.** Scatter the reserved dough over the filling. Squeeze some
of it into small clusters as you go, leaving a few patches of fruit visible. Don’t
press the topping down.

7. **Finish baking.** Return the pan to the oven for 30–35 minutes. The topping
should be lightly golden, with some bubbling visible in the filling near the edges.
If the surface browns too quickly, cover loosely with foil for the remaining baking
time.

8. **Cool and slice.** Set the pan on a wire rack and cool completely, at least
2 hours. Lift the slab out using the parchment and cut into 16 squares. Dust lightly
with powdered sugar just before serving, if desired.

## Getting a tender base and crisp topping

Butter temperature affects how easily the dough comes together. It should yield
to gentle finger pressure but still hold its shape. Melted or oily butter can turn
the mixture greasy and make it difficult to form distinct crumbs. If the dough becomes
very soft during mixing, refrigerate it briefly before continuing.

The initial bake gives the base time to set before the moist filling goes on. Look
for a dry-looking surface and faint color around the edges; there’s no need to brown
it fully at this stage. It will continue baking beneath the fruit.

For the topping, a mixture of loose crumbs and small clusters gives a more interesting
texture than a uniform layer of fine sand. Keep the clusters modest in size so they
bake through before the edges become too dark.

Cutting while warm is the most likely cause of untidy bars. The filling needs time
to settle, and warm shortbread breaks easily. For especially clean cuts, refrigerate
the cooled slab briefly, then use a sharp knife and wipe the blade between cuts.

## Flavor additions and serving ideas

Orange zest suits the dried fruit and spices without making the filling wetter.
For a nuttier topping, mix ¼ cup (about 30 g) chopped walnuts or pecans into the
reserved crumble before scattering it over the pan.

If the mincemeat is mildly seasoned, add ¼ teaspoon ground cinnamon to the flour
mixture. Strongly spiced fillings rarely need it. Almond extract can also work,
but use only a few drops alongside the vanilla so it doesn’t overwhelm the fruit.

Serve these shortbread crumble bars at room temperature with coffee or tea. Smaller
squares fit well among traditional Christmas sweets, particularly on a plate with
ginger cookies or plain butter cookies. For a plated dessert, add a spoonful of
softly whipped cream.

## Storing and freezing

Store completely cooled bars in an airtight container in the refrigerator for up
to 4 days, unless the filling’s label calls for a shorter storage period. Separate
stacked layers with parchment paper. Let individual portions stand at room temperature
before serving for a softer filling and more pronounced butter flavor.

For longer storage, freeze the cut bars in a single layer until firm, then transfer
them to a freezer-safe container with parchment between the layers. Use within 2
months for best quality. Thaw in the refrigerator, keeping them covered.

Add powdered sugar after thawing, since it tends to dissolve during storage. If
you’re baking ahead for a holiday gathering, freezing the bars without decoration
keeps the final preparation simple.
