Mini cookie pizzas turn soft funfetti cookies into cheerful, hand-held birthday
treats. Each sugar cookie round gets a swirl of vanilla frosting and a scatter of
rainbow sprinkles, so there is no cake to slice or stack of plates to manage. They
can be decorated before guests arrive or set out as part of a cookie decorating
party.

## Mini cookie pizzas recipe

This recipe makes thick, soft-centered cookies that hold their shape well enough
for decorating. Use oblong “jimmies” in the dough rather than nonpareils, which
tend to bleed color when mixed.

**Yield:** 16 individual cookie pizzas
 **Preparation time:** 25 minutes **Chilling
time:** 30 minutes **Baking time:** 9 to 11 minutes per batch **Total time:** About
1 hour 15 minutes, plus cooling **Course:** Dessert

### Equipment

– Two baking sheets
 – Parchment paper or silicone baking mats – Electric mixer –
Mixing bowls – 1½-tablespoon cookie scoop or measuring spoon – Wire cooling rack–
Offset spatula or piping bag, optional

### For the funfetti cookie dough

– ½ cup (113 g) unsalted butter, softened
 – ¾ cup (150 g) granulated sugar – 1
large egg, at room temperature – 1½ teaspoons vanilla extract – 1½ cups (180 g)
all-purpose flour – ½ teaspoon baking powder – ¼ teaspoon fine salt – ⅓ cup (55
g) rainbow jimmies

### For the vanilla frosting

– ½ cup (113 g) unsalted butter, softened
 – 2 cups (240 g) confectioners’ sugar–
1 teaspoon vanilla extract – Pinch of fine salt – 1 to 2 tablespoons (15 to 30 ml)
milk or heavy cream

### For decorating

– Rainbow sprinkles
 – Mini chocolate candies, optional – Crushed sandwich cookies,
optional – Colored decorating sugar, optional

## Making the sugar cookie rounds

Line two baking sheets with parchment paper. Beat the softened butter and granulated
sugar with an electric mixer on medium speed for about two minutes, until creamy
and slightly lighter in color. Scrape down the bowl.

Add the egg and vanilla. Beat until combined, then scrape the bowl again.

In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry
ingredients to the butter mixture and mix on low speed just until no dry streaks
remain. Fold in the rainbow jimmies with a flexible spatula. Avoid mixing more than
necessary, since the sprinkles may begin to streak through the dough.

Cover and refrigerate the funfetti cookie dough for 30 minutes. Chilling makes the
dough easier to portion and limits excessive spreading in the oven.

While the dough chills, heat the oven to 350°F (175°C). Divide the dough into 16
portions, using about 1½ tablespoons for each one. Roll each portion into a ball
and arrange the balls at least 2 inches apart on the prepared sheets. Press them
lightly with your palm to form thick disks.

Bake one sheet at a time for 9 to 11 minutes. The cookies are ready when the edges
look set and the centers have lost their wet sheen. They may appear slightly underdone
in the middle, but they will continue to set on the hot pan. Browning the edges
heavily will produce firmer, drier cookies.

Leave the cookies on the baking sheet for five minutes before transferring them
to a wire rack. Cool completely before adding frosting. Even a mildly warm cookie
can melt the buttercream and cause it to slide.

## Mixing the vanilla frosting

Beat the softened butter on medium speed until smooth. Add the confectioners’ sugar
about ½ cup at a time, mixing on low after each addition to prevent a cloud of sugar
from escaping the bowl.

Add the vanilla, salt, and 1 tablespoon of milk. Beat on medium speed for one to
two minutes. If the frosting is too stiff to spread, add more milk a teaspoon at
a time. It should be soft enough to swirl but firm enough to stay on the cookie.

Spread a spoonful of frosting over each cooled cookie, leaving a narrow border around
the edge so the base resembles a tiny pizza crust. An offset spatula makes quick
work of the job. For a tidier finish, pipe the frosting with a large round or open-
star tip.

Add rainbow sprinkles while the frosting is still soft. Once the surface begins
to set, loose toppings will not adhere as well.

## Turning them into birthday party desserts

Individual cookie pizzas are useful for parties because they can be placed on a
platter, packed into treat boxes, or served in paper cupcake liners. Guests can
pick one up without waiting for a cake to be cut. The consistent size also makes
it easier to estimate how many portioned desserts are needed.

Plan on one or two cookies per guest, depending on the rest of the menu. For a large
dessert table with cake, fruit, or ice cream, one per person may be enough. If these
are the main sweet, prepare two per guest or make smaller cookies from 1 tablespoon
of dough. Smaller rounds will usually need a shorter baking time, so begin checking
them at seven minutes.

For a coordinated color scheme, use two or three sprinkle colors instead of a full
rainbow mix. Chocolate frosting, pale pink buttercream, or lightly tinted vanilla
frosting also works, though dark food coloring may stain hands and clothing.

## Setting up a cookie decorating party

Bake and cool the cookies before the event. Arrange plain sugar cookie rounds on
trays, place frosting in small bowls or piping bags, and divide toppings among several
shallow containers. Small portions keep the decorating table manageable and reduce
waste if sprinkles become mixed together.

Good toppings include:

– Rainbow jimmies
 – Mini chocolate chips – Small candy-coated chocolates – Crushed
pretzels – Toasted coconut – Finely crushed sandwich cookies

Choose toppings that are small enough to stay on each cookie. Large candies can
make the frosting slide or cause the cookie to break when bitten.

For baking with kids, adults should handle the hot pans and oven. Children can scoop
cooled frosting, spread it with a small spatula, and add decorations. Raw cookie
dough should not be eaten because uncooked flour and raw egg can carry harmful bacteria.

To keep the table from becoming a sprinkle blizzard, place each decorating station
on a rimmed baking sheet. The rim catches loose toppings, and the entire station
can be lifted away when the activity ends.

## Make-ahead and storage notes

The unfrosted cookies can be baked one or two days before the party. Store them
in an airtight container at room temperature after they have cooled completely.
Separate layers with parchment paper to keep the surfaces smooth.

Vanilla frosting can be prepared up to three days ahead and refrigerated in a covered
container. Before using it, let it soften at room temperature, then beat it briefly
to restore its spreadable texture.

Store finished mini cookie pizzas in a single layer whenever possible. If they must
be stacked, chill them until the frosting is firm and place parchment between the
layers. Refrigerate decorated cookies in an airtight container for up to four days,
then let them sit at room temperature for about 20 minutes before serving. Some
sprinkle colors may bleed into the frosting during storage, so add the final decorations
shortly before the party when appearance is a priority.

Unfrosted cookies also freeze well for up to two months. Wrap them securely and
thaw at room temperature while still covered. Frost and decorate only after they
have fully thawed.
