Orange cardamom cheesecake bars pair a creamy citrus filling with a crisp gingersnap
crust. Fresh orange zest gives the cheesecake its strongest orange flavor, while
a little ground cardamom adds a warm, fragrant note that suits the Christmas table.
Baked in a square pan and chilled before slicing, these bars are easy to prepare
a day ahead and serve without the fuss of a full-size cheesecake.

The filling needs no flour or elaborate mixing, and the bars bake without a water
bath. Their smaller size also makes them convenient for a holiday dessert tray,
where guests may want a little cheesecake alongside cookies and other sweets.

## Orange cardamom cheesecake bars with a gingersnap crust

This recipe makes 16 modest squares in an 8-inch pan. The filling is creamy and
gently spiced, with enough orange to taste fresh without making the cheesecake loose
or overly tart.

– **Yield:** 16 bars
 – **Preparation time:** About 25 minutes – **Baking time:**
About 45–55 minutes, including the crust – **Cooling and chilling time:** About
5 hours – **Total time:** About 6 hours 15 minutes – **Equipment:** 8-inch square
metal baking pan, parchment paper, mixing bowls, electric mixer, fine grater, and
a food processor or rolling pin

### Ingredients

**For the gingersnap crust:**

– 6 ounces (170 g) crisp gingersnap cookies, crushed into fine crumbs, approximately
1½ cups
 – 5 tablespoons (70 g) unsalted butter, melted

**For the orange-cardamom filling:**

– 16 ounces (454 g) full-fat brick-style cream cheese, softened
 – ½ cup (100 g)
granulated sugar – 1 tablespoon finely grated orange zest, from approximately 1
large orange – ½ teaspoon ground cardamom – ⅛ teaspoon fine salt – ¼ cup (60 g)
sour cream, at room temperature – 2 tablespoons (30 ml) fresh orange juice – 1 teaspoon
vanilla extract – 2 large eggs, at room temperature

**Optional garnish:**

– Thin strips of orange zest or small pieces of candied orange peel

### Bake the cookie crust

1. Heat the oven to **325°F (165°C)**. Line an 8-inch square metal pan with parchment
paper, leaving an overhang on two opposite sides so the chilled cheesecake can be
lifted out.

2. Combine the gingersnap crumbs and melted butter. Stir until the crumbs are evenly
moistened. A spoonful should hold together when pressed.

3. Press the mixture firmly and evenly across the bottom of the pan. Use the flat
bottom of a measuring cup to compact it, especially around the edges.

4. Bake for **10 minutes**, then set the pan on a wire rack while you prepare the
filling. Leave the oven on.

### Mix and bake the filling

5. Beat the softened cream cheese on low to medium speed until smooth. Scrape the
bowl and beaters to remove any firm pieces clinging to them.

6. Add the sugar, orange zest, cardamom, and salt. Mix until combined, then mix
in the sour cream, orange juice, and vanilla.

7. Add the eggs one at a time, mixing on low speed just until each disappears into
the batter. Scrape the bowl between additions. Avoid prolonged beating once the
eggs are added, which can incorporate excess air.

8. Pour the filling over the warm crust and spread it evenly.

9. Bake for **35–45 minutes**. The edges should look set, and the center should
wobble slightly as a single area when the pan is gently nudged. It should not ripple
like liquid. Begin checking at 35 minutes; pan material and oven accuracy affect
the timing.

10. Place the pan on a wire rack and let it cool for about **1 hour**. Refrigerate
promptly afterward, leaving it loosely covered until cold. Chill for at least **
4 hours**, preferably overnight. Do not leave the cheesecake at room temperature
for more than 2 hours total.

## Getting the citrus and spice right

Orange zest supplies most of the citrus flavor because it contains the fruit’s aromatic
oils. Wash and dry the orange before grating, and remove only the colored outer
peel. The white pith underneath can taste bitter.

The juice adds a little acidity, but increasing it substantially can change how
the filling sets. For a stronger orange flavor, add another teaspoon of finely grated
zest rather than extra juice.

Ground cardamom varies in strength, especially with age. The ½ teaspoon in this
recipe gives a noticeable but restrained flavor alongside the ginger in the crust.
If using freshly ground seeds, a scant ½ teaspoon is a sensible starting point.
Avoid grinding the papery green pods into the filling.

Choose crisp gingersnaps for the crust. Soft ginger cookies contain more moisture
and will not produce the same firm base. Cookie sizes differ, so weighing them is
more dependable than counting them. If the cookies are unusually buttery and the
crumb mixture looks greasy, hold back a little of the melted butter.

## How to get creamy bars and clean slices

Full-fat brick-style cream cheese gives the filling a dependable texture. Spreadable
cream cheese sold in tubs can have a different moisture content and may produce
a softer result.

Let the cream cheese soften before mixing. Cold cream cheese tends to leave lumps,
and beating the finished batter harder to remove them introduces air. Scraping the
bowl early is more useful than mixing longer at the end.

Take the cheesecake out while the center still has a slight wobble. Baking until
the entire surface is rigid can leave the filling dry around the edges and increase
the chance of cracking. A small surface crack is harmless and does not need to be
hidden, although a little orange peel makes a simple garnish.

Once thoroughly chilled, lift the slab from the pan using the parchment handles.
Set it on a cutting board and cut into four rows in each direction. For neat orange
cheesecake squares, use a sharp knife dipped in hot water and wiped dry between
cuts. Add any garnish after slicing so it does not drag through the filling.

## Making and storing them for Christmas

These Christmas cheesecake bars fit comfortably into a make-ahead schedule. Bake
them the day before serving, chill overnight, and cut them while cold. Keep the
squares covered in the refrigerator and use within **3–4 days**.

For longer storage, freeze the chilled, ungarnished bars in a single layer until
firm. Wrap individual portions and place them in an airtight freezer container.
For best quality, use within **1–2 months**. Thaw overnight in the refrigerator,
then add fresh zest or candied peel before serving.

Set out only the number of bars likely to be eaten soon, replenishing the platter
from the refrigerator as needed. Limit their total time at room temperature to **
2 hours**, or **1 hour when temperatures exceed 90°F (32°C)**. Small portions make
this easy, and the remaining cheesecake stays cold and neatly sliceable until it
is needed.
