Pasta for two is easy to scale when you measure the dry noodles before cooking and
build the meal around what is already in the kitchen. A useful starting point is
2 ounces (about 57 grams) of dry pasta per person, the serving size often listed
on packages. For a filling dinner, especially one with little besides pasta and
sauce, 2½ to 3 ounces per person may suit you better. That puts a meal for two at
roughly 4 to 6 ounces total.

## Pasta for two: getting the portion right

Dry pasta is simple to measure on a kitchen scale. Without one, use package markings
when available, or measure short shapes with a measuring cup. Cup measures vary
by shape, so they are less reliable: a cup of small elbows does not weigh the same
as a cup of large shells. Long pasta can be portioned by weighing it or using a
pasta-measuring tool.

The amount you need also depends on what goes into the bowl. A modest serving of
pasta can make a satisfying meal when paired with vegetables, beans, fish, chicken,
or a substantial sauce. If pasta is the main event, use a larger portion. For a
single serving pasta dinner, measure one portion before cooking; estimating from
a full box often leads to more cooked pasta than one person can comfortably use.

Fresh pasta is a separate case. It contains more moisture than dried pasta, so its
weight and cooking time do not translate directly from dry-pasta measurements. Use
the package directions as a starting point and taste for doneness.

## Cook only what the meal needs

A small amount of pasta does not require a huge stockpot. Choose a saucepan that
gives the noodles room to move, add enough water to cover them well, and stir during
the first minute so they do not stick. A smaller quantity of water can work for
a small batch, though it may become starchier than water from a large pot. That
starchy water is useful for loosening and bringing a sauce together.

Salt the water so the pasta is seasoned throughout, then follow the package’s cooking
time as a guide. Start tasting a minute or two before the suggested finish. Drain
when the pasta is just tender, saving a mug of cooking water first. Add a splash
of that water to the sauce if it seems tight or does not cling to the noodles.

Cooking the sauce in a skillet while the pasta boils keeps the meal quick. For a
simple pantry version, warm olive oil with sliced garlic over low heat, then add
canned tomatoes, a pinch of salt, and dried herbs if you have them. Simmer while
the pasta cooks. Toss the drained pasta with the sauce and a little cooking water.
Add grated cheese, olives, capers, or canned beans if they are on hand.

## Small batch pasta meals from pantry staples

A few flexible combinations make small household dinners easier without requiring
a special shopping trip:

– **Tomato and white beans:** Stir drained canned beans into a tomato sauce and
warm them through. Add spinach or another quick-cooking green near the end.
 – **
Tuna, lemon, and peas:** Mix drained tuna with olive oil, lemon zest or juice, and
cooked peas. Toss with hot pasta and enough cooking water to coat. – **Garlic, oil,
and greens:** Soften garlic in oil, add chopped kale or spinach, and cook until
tender. Finish with pasta, black pepper, and a little cheese or lemon. – **Mushroom
and cream cheese:** Brown sliced mushrooms, then stir in a spoonful of cream cheese
and pasta water to make a loose sauce.

These are starting points, not fixed recipes. Use what needs to be eaten first,
and add more sauce or vegetables if the meal needs stretching. Keeping a small amount
of pasta on hand makes pantry meals for two practical: you can cook only what the
sauce and appetite call for instead of opening a full box and feeling obliged to
finish it.

## Plan for leftovers without making too much

No-waste pasta cooking often means deciding in advance whether you want leftovers.
If you do, cook a slightly larger batch and store the pasta and sauce separately
when possible. Plain pasta is easier to use later in a quick skillet meal, soup,
or pasta salad; sauce can be reheated and combined with freshly cooked noodles.

Refrigerate cooked pasta or sauce within two hours, using shallow containers so
they cool promptly. Refrigerated leftovers are generally best used within three
to four days. Reheat them until steaming hot; for leftovers, the USDA recommends
reaching 165°F (74°C). Add a little water or broth during reheating if the pasta
has dried out.

If you do not want leftovers, measure the dry pasta and make only enough sauce for
that amount. This simple habit prevents an oversized pot from turning an ordinary
weeknight meal into several days of repeats. It also makes portion-controlled pasta
flexible: one serving can be a quick dinner for one, while a few extra ounces can
feed two without leaving half a box of cooked noodles in the refrigerator.
