## The Ultimate Ham and Cheese Omelet Recipe

A good ham and cheese omelet needs only a few ingredients, but the cooking method
matters. Use moderate heat, cook any vegetables before adding the eggs, and fold
the omelet only after the eggs have set and the cheese is ready to melt.

This three-egg omelet makes a substantial breakfast, lunch, or quick dinner for
one.

## Ham and Cheese Omelet Recipe

   cheese

## How to Make a Ham and Cheese Omelet

If using onion, mushrooms, bell pepper, or other raw vegetables, cook them before
starting the eggs. Vegetables release moisture as they cook, and putting them raw
inside the omelet can leave the filling watery.

Heat about half the butter in an 8-inch (20 cm) nonstick skillet over medium heat.
Add the ham and any vegetables. Cook for 1 to 3 minutes, just until the ham is warmed
and the vegetables are tender. Ham that is already fully cooked does not need prolonged
browning.

Transfer the filling to a small plate.

Crack the eggs into a bowl. Add the salt and pepper and beat with a fork or whisk
until the whites and yolks are completely combined. There is no need to whip the
eggs into a foam.

Return the skillet to medium or medium-low heat. Add the remaining butter and swirl
it over the bottom of the pan.

Pour in the eggs. As the edges begin to set, use a spatula to gently push the cooked
egg toward the center while tilting the skillet so uncooked egg can flow into the
open areas.

Continue until the eggs are nearly set across the surface and no obvious pools of
liquid egg remain.

Sprinkle the cheese over one half of the omelet. Spoon the warm ham mixture over
the cheese.

Using the spatula, fold the uncovered half over the filling. Cook for another 30
seconds to 1 minute, or just until the cheese has melted and the eggs are fully
cooked.

Slide the omelet onto a plate and serve immediately.

## Getting the Texture Right

An omelet cooks quickly, so temperature matters more than speed. Excessively high
heat can brown the outside before the center has cooked and may give the eggs a
firm or rubbery texture.

Medium heat works for many skillets, but reduce the burner to medium-low if the
butter browns immediately or the eggs begin to color before they have set.

The skillet size also affects the result. An 8-inch (20 cm) pan gives three eggs
enough room to spread without becoming so thin that folding is difficult. A much
larger skillet will produce a thinner omelet that cooks faster.

Preheating the filling separately serves two purposes. The ham reaches serving temperature
without forcing the eggs to remain on the heat, and vegetables have time to release
excess moisture before they are enclosed in the omelet.

## Choosing the Cheese

Cheddar produces a familiar ham-and-cheese flavor and melts readily. Swiss is slightly
milder and pairs particularly well with ham. Gouda gives the filling a softer, richer
texture.

Freshly shredded cheese usually melts more readily than some packaged shredded cheeses,
which may contain anti-caking ingredients. Either will work, however, so there is
no need to grate cheese specifically for this recipe.

Avoid piling too much cheese into the omelet. About 1/3 cup (35 to 40 g) is enough
to give a three-egg omelet a noticeable cheese layer while still allowing it to
fold neatly.

## Variations

For a **ham, cheese, and mushroom omelet**, sauté the mushrooms until they have
softened and released most of their moisture before adding them to the filling.

For a **Denver-style variation**, cook finely chopped onion and bell pepper with
the ham, then use cheddar cheese.

For a **ham and Swiss omelet**, substitute shredded or thinly sliced Swiss for the
cheddar and add a small amount of chopped chives if desired.

Leftover cooked vegetables can also work well. Keep the total amount of filling
modest so the omelet can fold without tearing.

## Can You Make a Ham and Cheese Omelet Ahead?

An omelet has its best texture immediately after cooking. Eggs continue to firm
as they cool and can become noticeably denser after refrigeration and reheating.

If preparing breakfast for several people, a better approach is to dice the ham,
shred the cheese, and cook the vegetable filling ahead of time. Refrigerate those
ingredients separately, then cook each omelet shortly before serving.

If you do have leftovers, refrigerate the cooked omelet promptly in a covered container.
USDA guidance recommends using refrigerated cooked egg dishes within three to four
days. Reheat until hot throughout before serving.

## Food-Safety Note

Eggs should be cooked thoroughly rather than left visibly runny. USDA guidance advises
cooking egg mixtures thoroughly, and the American Egg Board’s omelet directions
similarly call for cooking until the surface has thickened and no visible liquid
egg remains.

Keep eggs refrigerated until needed, and return leftover cooked omelet to the refrigerator
promptly rather than leaving it at room temperature for an extended period.

## Recipe Notes

 * The recipe can be doubled, but cook two individual omelets rather than putting
six eggs into the same 8-inch skillet.
 * Use cooked ham, not raw pork, for this quick omelet.
 * Dice the ham fairly small so the omelet folds easily.
 * Cook raw vegetables before adding them to the omelet.
 * If the eggs brown rapidly, lower the heat.
 * Add the filling to only one half of the omelet before folding.
 * Serve immediately for the softest texture.
