## Pineapple Chicken and Rice Casserole With Bell Peppers

This pineapple chicken and rice casserole cooks uncooked rice, chicken, peppers,
and pineapple together in one baking dish. The reliable method is to use long-grain
white rice, measure the liquid, cover the casserole tightly, and check both the
rice and the chicken before serving. A short rest after baking lets the rice finish
absorbing moisture without leaving the chicken in the oven too long.

The sauce brings soy, garlic, ginger, and pineapple juice together for a sweet-and-
savory flavor. Bell peppers and onion add texture, while a little vinegar keeps
the sauce from tasting overly sweet.

## Pineapple chicken and rice casserole recipe

**Serves:** 4 to 6
 **Prep time:** 20 minutes **Bake time:** About 50 to 60 minutes,
plus a 10-minute rest **Oven:** 375°F (190°C)

### Ingredients

 * 1½ cups (about 285 g) long-grain white rice
 * 1½ pounds (680 g) boneless, skinless chicken thighs, cut into pieces about 1½
   inches across
 * 1 red or green bell pepper, cut into bite-size pieces
 * 1 small yellow onion, diced
 * 1 can (20 ounces, about 565 g) pineapple chunks in juice, drained, with the juice
   reserved
 * 1¼ cups (300 ml) low-sodium chicken broth
 * ¼ cup (60 ml) reserved pineapple juice
 * ¼ cup (60 ml) low-sodium soy sauce
 * 2 tablespoons rice vinegar or apple cider vinegar
 * 1 tablespoon brown sugar
 * 2 teaspoons minced garlic
 * 1 teaspoon grated fresh ginger, or ½ teaspoon ground ginger
 * 1 tablespoon cornstarch
 * 1 tablespoon cold water
 * 1 tablespoon neutral oil
 * ½ teaspoon black pepper
 * 2 green onions, thinly sliced, for serving

### Instructions

 1. **Heat the oven and prepare the dish.** Heat the oven to 375°F (190°C). Lightly
    oil a 9-by-13-inch baking dish. Use a dish with a tight-fitting lid, or have heavy-
    duty foil ready to seal it securely.
 2. **Make the sauce.** In a bowl, whisk together the chicken broth, reserved pineapple
    juice, soy sauce, vinegar, brown sugar, garlic, ginger, and black pepper. Set aside.
 3. **Arrange the rice and vegetables.** Spread the uncooked rice evenly in the baking
    dish. Scatter the bell pepper and onion over it. Pour in the sauce and stir gently
    to distribute the rice. Make sure the rice is submerged as evenly as possible.
 4. **Add the chicken and pineapple.** Pat the chicken dry and toss it with the oil.
    Arrange the pieces over the rice mixture, then scatter the drained pineapple around
    them. Do not stir everything together; keeping the rice below the chicken helps
    it cook in the liquid, while the chicken rests closer to the surface.
 5. **Cover tightly and bake.** Seal the dish with its lid or tightly crimped foil.
    Bake for 45 minutes without opening the oven. The tight cover traps steam, which
    the rice needs to cook.
 6. **Check for doneness.** Remove the cover carefully, keeping your face and hands
    clear of the escaping steam. Check the thickest chicken pieces with an instant-
    read thermometer. Chicken is safe at 165°F (74°C). Check several pieces because
    they may vary in size. Taste a little rice as well. It should be tender, with no
    hard center. If the chicken is done but the rice is still firm, transfer the chicken
    to a clean plate, cover the dish again, and bake the rice for 5 to 10 minutes more
    with a splash of hot broth or water.
 7. **Thicken the sauce.** Stir the cornstarch and cold water together until smooth.
    If the casserole looks soupy, remove the chicken to a plate, stir the cornstarch
    mixture into the liquid around the rice, and bake uncovered for 5 minutes. Return
    the chicken to the dish.
 8. **Rest and serve.** Cover the casserole loosely and let it stand for 10 minutes.
    This gives the rice time to absorb remaining liquid. Fluff the rice gently, serve
    with the chicken and pineapple, and top with sliced green onions.

## Getting the rice and chicken to finish together

The rice-to-liquid ratio is the most important part of a baked pineapple chicken
and rice casserole. This recipe uses 1½ cups of rice with 2 cups of measured liquid:
1¼ cups broth and ¾ cup of pineapple juice and soy sauce combined. The soy sauce
and vinegar contribute some liquid, but they also add salt and acidity. The recipe
is designed around long-grain white rice, which cooks in roughly the time needed
for the chicken pieces to reach a safe temperature.

Use regular long-grain white rice, not instant rice or brown rice. Instant rice
cooks much faster and can turn soft during the covered bake. Brown rice generally
needs more liquid and substantially more cooking time, so it will not reliably finish
alongside the chicken using this method. If you substitute another rice, follow
a recipe developed for that variety rather than simply adding extra time.

Keep the dish tightly covered for the main baking period. A loose cover lets steam
escape, often leaving the rice firm while the top layer dries out. Avoid lifting
the foil to check the casserole early; each opening releases steam and slows cooking.

Chicken thighs are forgiving because their higher fat content helps them stay moist
during a covered bake. Breast meat can be used, but cut it into larger, even pieces
and begin checking the temperature before the end of the baking time. Take it out
as soon as the thickest pieces reach 165°F (74°C). Cooking time is an estimate,
not a substitute for a thermometer.

If the chicken reaches temperature before the rice is tender, remove the chicken
and let the rice continue baking, covered. If the rice is ready first, take the
dish out and check the chicken. The temperature of the chicken, not the color of
the meat or the juices, determines whether it is safe to eat.

## Fresh or canned pineapple?

Canned pineapple is convenient because its juice can be measured for the sauce,
and its pieces are already soft enough to warm through during baking. Choose pineapple
packed in juice rather than heavy syrup to keep the dish from becoming too sweet.
Drain the chunks, reserve the juice, and measure only the amount called for. Adding
all the juice from a large can can make the casserole too wet and sweet.

Fresh pineapple works too. Cut it into bite-size chunks and use bottled pineapple
juice or additional broth in the sauce. Fresh fruit releases some juice as it cooks,
so avoid adding extra liquid to compensate for the absence of canned juice. Fresh
pineapple may stay firmer than canned fruit, especially if the pieces are large.

For a more browned, less juicy topping, add some or all of the pineapple during
the last 15 minutes of baking. That approach is useful if you prefer distinct pieces
of fruit rather than pineapple that has softened into the rice.

## Substitutions and serving ideas

Boneless, skinless chicken thighs are the simplest choice, but bone-in chicken is
not a direct substitute. It takes longer to cook and can make it difficult to time
the rice correctly. For chicken breast, cut even-sized pieces and check the temperature
early.

You can use orange, yellow, or green bell pepper, or combine colors. Red and yellow
peppers taste sweeter; green peppers bring a sharper flavor. If you want heat, add
a pinch of red pepper flakes or a finely chopped chili.

For a gluten-free casserole, use tamari labeled gluten-free in place of soy sauce.
Reduced-sodium soy sauce helps keep the dish from tasting too salty as the liquid
reduces. For a stronger teriyaki-style flavor, add a little extra ginger or a teaspoon
of toasted sesame oil after baking. Bottled teriyaki sauce can also work, but it
varies in sweetness and salt, so use less brown sugar and check the seasoning before
serving.

Serve the casserole on its own or with a simple green salad, steamed broccoli, or
sautéed greens. The rice already provides a substantial base, so a crisp or lightly
seasoned vegetable is a good companion.

## Storing and reheating leftovers

Refrigerate leftovers in a shallow, covered container within two hours of cooking.
Keep them at 40°F (4°C) or colder and use them within three to four days. If the
rice has dried out, stir in a spoonful of broth or water before reheating.

Reheat only the portion you plan to eat, until it reaches 165°F (74°C). A covered
skillet over low heat or a covered microwave-safe dish helps keep the rice from
drying out; stir partway through microwave reheating so it warms evenly. Discard
the casserole if it has been left at room temperature for more than two hours.

A covered dish, measured liquid, and a temperature check make this one-dish pineapple
chicken dinner dependable. Letting the casserole rest before serving finishes the
rice and gives the sweet-and-savory sauce time to settle around the chicken and
peppers.
