Red velvet cookie pizza turns the familiar cocoa-and-vanilla flavor of red velvet
cake into a soft, sliceable cookie. A single round cookie forms the base, while
tangy cream cheese frosting and dark chocolate curls give it the finished look of
a celebration dessert. It is easier to assemble than a layer cake, travels well
when chilled, and can be cut into slim wedges for serving.

The cookie should be soft in the center without being fragile. A modest amount of
cocoa provides flavor without making the crust taste like a standard chocolate cookie,
and gel food coloring produces a strong red color without adding much liquid. The
finished cookie is best made several hours ahead so it has time to cool before frosting.

## Red velvet cookie pizza recipe

**Yield:** 12 slices
**Preparation time:** 25 minutes **Baking time:** 16 to 20
minutes **Cooling and decorating time:** About 1 hour 15 minutes **Total time:**
About 2 hours **Course:** Dessert **Equipment:** 12-inch pizza pan or large baking
sheet, parchment paper, electric mixer, offset spatula or piping bag

### Ingredients

#### For the cocoa cookie crust

– 1/2 cup (113 g) unsalted butter, softened
 – 3/4 cup (150 g) granulated sugar –
1/4 cup (50 g) packed light brown sugar – 1 large egg, at room temperature – 1 teaspoon
vanilla extract – 1 to 1 1/2 teaspoons red gel food coloring – 1 1/4 cups (150 g)
all-purpose flour – 2 tablespoons (10 g) natural unsweetened cocoa powder – 1/2
teaspoon baking soda – 1/4 teaspoon fine salt – 1 teaspoon distilled white vinegar

#### For the cream cheese frosting

– 8 ounces (226 g) full-fat block cream cheese, softened but still cool
 – 1/4 cup(
57 g) unsalted butter, softened – 1 3/4 cups (210 g) confectioners’ sugar, sifted
if lumpy – 1 teaspoon vanilla extract – Pinch of fine salt

#### For decorating

– 1 to 2 ounces (28 to 57 g) semisweet or dark chocolate
 – Red sprinkles, cookie
crumbs, or fresh raspberries, optional

### Instructions

1. Heat the oven to 350°F (175°C). Line a 12-inch pizza pan or large baking sheet
with parchment paper.

2. Beat the softened butter, granulated sugar, and brown sugar with an electric
mixer for about 2 minutes, until evenly blended and slightly lighter in color. Scrape
down the bowl.

3. Add the egg, vanilla, and 1 teaspoon of red gel food coloring. Beat until smooth.
Add more coloring in small amounts if a deeper red is wanted. The dough will become
slightly darker during baking.

4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and
salt. Add the dry ingredients to the butter mixture and mix on low speed just until
only a few flour streaks remain.

5. Add the vinegar and mix briefly until the dough is uniform. Avoid extended mixing,
which can make the finished cookie firmer and less tender.

6. Place the dough in the center of the prepared pan. With lightly dampened fingers
or a small offset spatula, press it into an even circle about 9 1/2 to 10 inches
wide and roughly 1/3 inch thick. Leave open space around the dough because it will
spread.

7. Bake for 16 to 20 minutes. The outside edge should look set, while the center
should appear slightly soft but no longer wet or shiny. A cookie baked on a dark
pan may finish sooner than one baked on a light aluminum pan.

8. Set the pan on a wire rack and let the cookie cool for 15 minutes. Carefully
slide the parchment and cookie onto the rack, then cool completely. Frosting a warm
cookie will cause the cream cheese mixture to soften and slide.

9. For the frosting, beat the cream cheese and butter on medium-low speed until
smooth. Add the confectioners’ sugar in two or three additions, mixing on low speed
after each addition. Beat in the vanilla and salt just until combined.

10. Spread the frosting over the cooled cookie, leaving a narrow red border visible.
For a more decorative finish, transfer some or all of the frosting to a piping bag
fitted with a large star or round tip.

11. Make chocolate curls by drawing a vegetable peeler along the side of a room-
temperature chocolate bar. Scatter the curls over the frosting. Refrigerate the
cookie pizza for 20 to 30 minutes before slicing for cleaner wedges.

## Getting an even, sliceable cookie crust

Round cookie baking presents two common problems: an overbaked edge and an underbaked
center. Pressing the dough to a consistent thickness helps both areas finish at
nearly the same time. A mound in the center can remain doughy after the edge has
hardened, so check the surface from the side before putting the pan in the oven.

Parchment paper makes the giant red velvet cookie easier to transfer and prevents
sticking without adding grease that could encourage excess spreading. If the dough
feels unusually soft after mixing, refrigerate it for 15 to 20 minutes before shaping.
This may be necessary in a warm kitchen or if the butter became partly melted.

Take the cookie out when the center is set around the surface but still gives slightly
when touched. Residual heat will continue cooking it on the pan. For neat slices,
allow the base to cool fully and chill it briefly after frosting. A large chef’s
knife works better than a pizza wheel because the downward cut is less likely to
drag the frosting.

## Cream cheese frosting techniques

Block cream cheese is preferable to spreadable cream cheese sold in tubs. Tub-style
products contain more moisture and can produce a loose frosting. The cream cheese
should be pliable enough to mix but still cool to the touch.

Beating the butter first is useful if it is noticeably firmer than the cream cheese.
Once smooth, add the cream cheese and mix only until the two are blended. Excessive
beating can make cream cheese frosting runny, especially after the sugar goes in.

A simple swirled surface suits the casual pizza shape. Spread the frosting from
the center outward with an offset spatula, turning the cookie as needed. For piped
decoration, make small rosettes around the edge and spread a thinner layer in the
middle. If the frosting becomes too soft to hold its shape, refrigerate it for 15
minutes before piping.

## Decorating the red velvet dessert

Dark or semisweet chocolate curls provide contrast without adding much sweetness.
Chocolate shavings, miniature chocolate chips, or finely crumbled chocolate cookies
also work. White chocolate creates a lighter appearance, though it makes the finished
dessert sweeter.

Fresh raspberries or sliced strawberries can be added shortly before serving. Fruit
releases moisture over time, so it is less suitable when the cookie pizza must sit
overnight. For a birthday or holiday dessert, use sprinkles that match the occasion,
applying them while the frosting is still soft enough to hold them.

Avoid piling heavy toppings in the center. A restrained layer keeps each wedge easy
to lift and eat by hand or with a dessert fork.

## Storage and advance preparation

The unfrosted cocoa cookie crust can be baked one day ahead. Once completely cool,
wrap it tightly and keep it at room temperature. Prepare and apply the frosting
on the day of serving for the freshest texture.

Because cream cheese frosting is perishable, refrigerate the decorated cookie pizza
within two hours. Store it covered in the refrigerator for up to four days. Let
individual slices stand at room temperature for about 10 to 15 minutes before serving
so the cookie and frosting can soften slightly.

For longer storage, freeze the unfrosted cookie for up to two months. Wrap it in
plastic wrap and place it in a freezer-safe bag or container. Thaw it at room temperature
while still wrapped, then decorate after it has fully defrosted. Freezing the completed
dessert is possible, but chocolate curls and piped frosting may lose some of their
clean appearance after thawing.
