Rocky road cookie pizza turns the familiar combination of chocolate, marshmallows,
and nuts into a dessert made for slicing and sharing. A fudgy chocolate cookie crust
supports a layer of smooth ganache, soft mini marshmallows, and toasted chopped
almonds. The finished dessert has enough structure to hold like a pizza slice while
keeping the rich, slightly chewy texture of a brownie-style cookie.

## Rocky Road Cookie Pizza Recipe

This recipe makes one 10- to 11-inch chocolate dessert pizza. It works well for
birthdays, potlucks, and casual gatherings because it can be assembled in advance
and cut into narrow wedges for serving.

**Yield:** 10 to 12 slices
**Preparation time:** 25 minutes **Cooking time:** 12
to 15 minutes **Cooling and setting time:** About 1 hour **Total time:** About 1
hour 40 minutes **Course:** Dessert **Cuisine:** American

### Equipment

– 12-inch metal pizza pan or large baking sheet
 – Parchment paper – Medium mixing
bowl – Whisk – Flexible spatula – Small saucepan or microwave-safe bowl – Offset
spatula or the back of a spoon

### Ingredients

#### For the chocolate cookie crust

– 1/2 cup (113 g) unsalted butter, melted and cooled slightly
 – 3/4 cup (150 g)
granulated sugar – 1/2 cup packed (100 g) light brown sugar – 1 large egg – 1 teaspoon
vanilla extract – 1 cup (125 g) all-purpose flour – 1/3 cup (30 g) unsweetened cocoa
powder – 1/2 teaspoon baking soda – 1/2 teaspoon fine salt – 1/2 cup (85 g) semisweet
chocolate chips

#### For the chocolate ganache and toppings

– 4 ounces (113 g) semisweet or bittersweet chocolate, finely chopped
 – 1/3 cup(
80 ml) heavy cream – 1 1/2 cups (75 g) mini marshmallows – 1/2 cup (60 g) chopped
almonds, toasted – 2 tablespoons miniature chocolate chips, optional – Pinch of
flaky salt, optional

### Instructions

1. Heat the oven to 350°F (175°C). Line a 12-inch metal pizza pan or baking sheet
with parchment paper.

2. Whisk the melted butter, granulated sugar, and brown sugar until evenly combined.
Add the egg and vanilla, then whisk until the mixture looks smooth and slightly
glossy.

3. In a separate bowl, stir together the flour, cocoa powder, baking soda, and salt.
Add the dry ingredients to the butter mixture. Fold just until no dry streaks remain,
then stir in the chocolate chips. Avoid prolonged mixing, which can make the baked
crust firm instead of tender.

4. Transfer the dough to the center of the prepared pan. Using a spatula or clean
hands, press it into an even circle about 10 inches across. Keep the edge slightly
thicker than the center, much like a pizza crust.

5. Bake for 12 to 15 minutes. The outer edge should be set, while the middle should
still look soft but no longer wet. The cookie will continue to firm as it cools.
Overbaking is the main cause of a dry, brittle base.

6. Let the cookie cool on the pan for 15 minutes. Carefully slide the parchment
and cookie onto a wire rack or heat-safe surface, then cool completely before adding
the ganache.

7. Place the chopped chocolate in a heat-safe bowl. Warm the heavy cream in a small
saucepan until steaming, or microwave it in short intervals. Do not let it boil
vigorously. Pour the hot cream over the chocolate and leave it undisturbed for 2
minutes. Stir from the center outward until smooth.

8. Let the chocolate ganache stand for 5 to 10 minutes, until it thickens enough
to spread without running off the cookie. Spread it over the cooled crust, leaving
a narrow border around the edge.

9. Scatter the mini marshmallows and chopped almonds over the ganache. Add miniature
chocolate chips and a small pinch of flaky salt, if using.

10. Leave the assembled cookie pizza at room temperature for 30 to 45 minutes, or
refrigerate it for about 20 minutes, until the ganache is firm enough to slice cleanly.

## Getting the Fudgy Cookie Base Right

The crust sits between a chocolate chip cookie and a brownie. Melted butter and
brown sugar keep the center chewy, while cocoa powder supplies the chocolate flavor
without adding more liquid. The modest amount of baking soda prevents the base from
becoming too dense.

The most reliable sign of doneness is the appearance of the center. It should be
set on top but remain soft when the pan comes out of the oven. Waiting until the
entire cookie feels firm will produce a crisp crust once it cools.

Pressing the dough to an even thickness also affects the result. A thin center can
become crisp before the outer portion has finished baking. If the dough sticks to
your hands, lightly dampen your fingertips or place a second sheet of parchment
over it while pressing.

Allow the cookie to cool fully before spreading the ganache. Warm cookie dough can
absorb or melt the topping, leaving a thin chocolate layer and a greasy surface.

## Toasting the Marshmallows

Toasted marshmallows add flavor and give the dessert the campfire character associated
with rocky road. They do not need to be toasted, however. Plain mini marshmallows
remain soft and create a cleaner white contrast against the ganache.

For controlled browning, use a kitchen torch after adding the toppings. Move the
flame continuously and stop as soon as the marshmallows develop golden spots.

A broiler also works, but it requires close attention. Transfer the assembled dessert
to a bare metal pan, make sure no parchment extends beyond the cookie, and broil
for only 20 to 40 seconds. Stay at the oven and remove the pan immediately when
the tops begin to brown. Marshmallows can burn within seconds, and prolonged heat
will loosen the ganache.

## Choosing and Preparing the Almonds

Whole natural almonds or blanched almonds both work. Chop them into small, irregular
pieces so each slice gets some crunch without becoming difficult to cut.

Toasting improves their flavor and keeps them crisp against the soft marshmallows.
Place the chopped almonds in a dry skillet over medium-low heat for 3 to 5 minutes,
stirring often, until they smell nutty and begin to color. Remove them from the
hot skillet promptly so they do not continue browning.

Almonds are traditional in many rocky road desserts, but pecans or walnuts can replace
them in the same quantity. For a nut-free marshmallow dessert, omit the almonds
and use crushed pretzels, crisp rice cereal, or broken chocolate wafer cookies.
Check packaged ingredients carefully when preparing the dessert for someone with
a food allergy.

## Slicing and Serving

A large chef’s knife or pizza wheel can cut the cookie into wedges. For the neatest
pieces, wait until the ganache has set, then wipe the blade between cuts. Ten wedges
make generous servings; 12 or more narrow slices are better for a dessert table.

Serve the slices at room temperature. Chilled ganache can be quite firm, while room-
temperature ganache has a softer texture that suits the chewy chocolate cookie crust.
If the dessert has been refrigerated, let it stand for 15 to 20 minutes before serving.

For a party dessert recipe, the cookie base can be baked one day ahead. Once cool,
wrap it well and keep it at room temperature. Add the ganache, mini marshmallows,
chopped almonds, and other crunchy cookie toppings several hours before serving.

## Storage

Store leftover rocky road cookie pizza in an airtight container at room temperature
for up to two days. If the room is warm or the ganache becomes very soft, refrigerate
it for up to four days. Place parchment between stacked slices to prevent the toppings
from sticking.

Freezing is possible, although thawed marshmallows may become tacky. For better
results, freeze the plain baked cookie base for up to two months, wrapped tightly.
Thaw it at room temperature, then add the chocolate ganache and toppings shortly
before serving.
