Slow cooker chicken adobo turns chicken thighs, vinegar, soy sauce, garlic, bay
leaves, and black peppercorns into a savory, tangy dinner with very little hands-
on work. The chicken cooks gently until tender, leaving a generous amount of sauce
to spoon over rice. A short simmer on the stove after slow cooking concentrates
that sauce without overcooking the meat.

Filipino adobo varies from household to household. Some versions include coconut
milk, others leave out soy sauce, and many cooks adjust the vinegar to suit their
taste. This version uses the familiar soy-vinegar combination and a slow cooker
for an easy dinner that needs no browning beforehand.

## Choosing chicken and balancing the sauce

**Bone-in chicken thighs are a dependable choice for this recipe.** They hold up
well during slow cooking, and their connective tissue softens as they cook. Remove
the skin before adding them to the pot. Skin won’t become crisp in the moist cooking
environment, and leaving it on produces a fattier sauce.

The soy vinegar sauce should taste distinctly tangy, with enough savory depth to
season the chicken and the rice served alongside it. Filipino cane vinegar is a
good choice when available. Distilled white vinegar also works and is easy to find.
Avoid seasoned rice vinegar, which contains added sugar and salt and will change
the balance.

Low-sodium soy sauce gives you more control over the finished seasoning, particularly
if you reduce the cooking liquid. There is no added salt in the recipe; taste the
finished sauce before deciding whether it needs any.

Garlic cloves, bay leaves, and black peppercorns supply the remaining flavor. Lightly
crush the garlic so it seasons the liquid while remaining in substantial pieces.
Whole peppercorns give occasional sharp bites. Put them in a small spice bag if
you’d prefer to remove them easily before serving.

## Slow cooker chicken adobo recipe

This recipe produces tender chicken in a thin, strongly flavored sauce. It is meant
for spooning over rice, not coating the chicken like a thick gravy.

**Yield:** About 6 servings
**Prep time:** 15 minutes **Cook time:** About 5–6
hours on low or 3–4 hours on high, plus 5–10 minutes to finish the sauce **Total
time on low:** Approximately 5½–6½ hours **Equipment:** A 5- to 6-quart slow cooker,
instant-read thermometer, and wide saucepan or skillet

### Ingredients

– 3 pounds (1.4 kg) bone-in chicken thighs, skin removed
 – ½ cup (120 ml) low-sodium
soy sauce – ½ cup (120 ml) Filipino cane vinegar or distilled white vinegar – ¼
cup (60 ml) water – 8 garlic cloves, peeled and lightly crushed – 2 dried bay leaves–
1 teaspoon whole black peppercorns – 1–2 teaspoons brown sugar, optional, added
after cooking – Cooked white rice, for serving

### Instructions

1. **Prepare the chicken.** Use fully thawed chicken thighs. Remove the skin and
trim away large pockets of visible fat. Do not rinse raw chicken, which can spread
bacteria around the sink.

2. **Add the ingredients.** Place the chicken in the slow cooker. Pour in the soy
sauce, vinegar, and water, then distribute the garlic, bay leaves, and peppercorns
around the thighs. Turn the chicken to moisten it with the sauce. The liquid does
not need to cover the meat; the chicken will release additional juices as it cooks.

3. **Cook with the lid on.** Cover and cook on low for about 5–6 hours or high for
about 3–4 hours. Begin checking at the early end of the range because slow cookers
and thigh sizes vary. The chicken must reach at least 165°F (74°C) in the thickest
part, without the thermometer touching bone. It should also feel tender when pierced.

4. **Transfer the chicken.** Move the cooked thighs to a covered serving dish. Handle
them gently, especially if the meat has begun pulling away from the bones.

5. **Finish the sauce.** Discard the bay leaves and remove the peppercorns if desired.
Skim excess fat from the surface, then pour the cooking liquid into a wide saucepan
or skillet. Taste it before reducing. If the seasoning is already concentrated enough,
simply bring it to a simmer and serve. Otherwise, simmer uncovered for about 5–10
minutes, tasting occasionally, until the flavor suits you. The sauce will remain
fairly thin.

6. **Make the final adjustment.** If the sauce tastes too sharp for your preference,
stir in the optional brown sugar, starting with 1 teaspoon. If it tastes too salty
or strong, add water a tablespoon at a time. Spoon the finished sauce over the chicken
and serve with rice.

## Adjustments for different ingredients

Boneless, skinless chicken thighs can replace bone-in thighs. They often finish
sooner, so begin checking them after about 3 hours on low or 2 hours on high, then
continue cooking until they reach 165°F (74°C) and are tender. These are checking
points, not guaranteed finishing times.

Chicken breasts are less forgiving. They can become dry during a long cook, even
while sitting in liquid. For a crockpot dinner that can stay tender across a wider
cooking window, thighs are the better choice.

If whole peppercorns aren’t appealing, substitute ½ teaspoon coarsely ground black
pepper. It will remain in the sauce and distribute the pepper flavor more evenly.

For a gluten-free version, use a soy sauce or tamari specifically labeled gluten-
free. Many conventional soy sauces contain wheat. Check the seasoning before reducing
because salt levels vary among brands.

## Serving the chicken

Plain steamed rice gives the sauce somewhere to go. Jasmine rice works well, though
any rice you enjoy is suitable. Keep the chicken in larger pieces for a family-style
platter, or pull the meat from the bones for rice bowls.

A lightly seasoned vegetable provides a useful contrast to the salty, tangy braised
chicken. Try steamed green beans, sautéed cabbage, or sliced cucumber. Since the
adobo already supplies plenty of seasoning, the vegetables need little more than
a small amount of oil or a simple preparation.

Remove loose bones before serving, particularly if the thighs have become tender
enough to fall apart.

## Storing and reheating leftovers

Refrigerate leftover chicken and sauce within 2 hours of cooking, or within 1 hour
if the surrounding temperature is above 90°F (32°C). Divide large amounts into shallow
containers so they cool promptly. Cooked rice also needs prompt refrigeration.

Keep the chicken with some sauce to prevent it from drying out. Refrigerated leftovers
should be used within 3–4 days. For longer storage, freeze in meal-size portions;
the quality is generally best within about 3–4 months.

Reheat the chicken and sauce gently in a covered saucepan, adding a splash of water
if needed, until the chicken reaches 165°F (74°C). Spoon it over freshly cooked
or safely reheated rice for another dinner with almost no preparation.
