Slow cooker lentil bolognese makes a hearty pasta sauce from five ingredients, with
no browning and no separate skillet to wash. Dried brown lentils provide texture,
crushed tomatoes give the sauce body, and a finely chopped onion adds sweetness
as it cooks. There is one useful timing detail: let the lentils soften in broth
before adding the tomatoes. That late addition helps avoid a pot of sauce with stubbornly
firm lentils.

This is a meatless, tomato-forward sauce inspired by Bolognese, rather than a traditional
Italian meat ragù. It works well over spaghetti, holds its own with sturdy pasta
shapes, and freezes nicely for another dinner.

## Five ingredients for slow cooker lentil bolognese

Each ingredient has a practical job, so choose versions you enjoy on their own.

– **Dried brown lentils:** These generally hold enough shape to give the sauce texture
while becoming tender enough to mash slightly. Red lentils break down more readily
and need different cooking times.
 – **Crushed tomatoes:** A large can supplies
a thick tomato base without requiring a blender. Choose plain crushed tomatoes or
a version seasoned with basil. – **Onion:** Finely chopped onion cooks directly
in the broth. Large chunks can remain noticeable in the finished sauce. – **Vegetable
broth:** This hydrates the lentils and supplies much of the seasoning. Use a broth
with a flavor and salt level you like. – **Italian seasoning:** A dried herb blend
adds flavor without requiring several separate jars. Check the label if you need
a salt-free blend.

Pasta is served separately and is not included in the five sauce ingredients. The
recipe needs no oil because nothing is sautéed.

## The recipe

**Yield:** About 5 to 6 cups, enough for approximately 6 servings
 **Preparation
time:** 10 minutes **Cooking time:** About 6½ to 9 hours on low, or 3½ to 5 hours
using the high setting **Total time:** Approximately 3 hours 40 minutes to 9 hours
10 minutes, depending on the setting and lentils **Equipment:** A 4- to 6-quart
slow cooker

### Ingredients

– 1 cup dried brown lentils (about 190 g), sorted and rinsed
 – 1 medium yellow
onion, finely chopped (about 150 g) – 2½ cups vegetable broth (600 mL) – 2 teaspoons
dried Italian seasoning – 1 can crushed tomatoes, 28 ounces (794 g)

### Instructions

1. **Check and rinse the lentils.** Spread them on a plate or rimmed baking sheet
and remove any small stones or debris. Rinse in a fine-mesh strainer.

2. **Start the lentils.** Put the lentils, chopped onion, vegetable broth, and Italian
seasoning in the slow cooker. Stir, cover, and cook on low for approximately 6 to
8 hours or high for 3 to 4 hours.

3. **Check for tenderness.** Taste several lentils before adding the tomatoes. They
should be tender throughout, without a firm or chalky center. If they need longer,
continue cooking, covered. Add a little hot water if the mixture is becoming dry.

4. **Add the tomatoes.** Stir in the crushed tomatoes once the lentils are tender.
Cover and cook on high for another 30 to 60 minutes, until the sauce is hot throughout
and the flavors have blended.

5. **Adjust the texture.** Mash a few spoonfuls of lentils against the side of the
cooker, then stir them back into the sauce. For a looser consistency, add a splash
of hot water or reserved pasta water. Taste before serving; the amount of seasoning
needed will depend largely on the broth and tomatoes.

Slow cookers vary considerably, so treat the cooking times as a guide. Older lentils
can take longer to soften, even when they have been stored properly.

## Why the tomatoes go in later

Tomato acidity can slow the softening of lentils. Adding everything at the beginning
may work with some lentils and cookers, but it makes the timing less dependable.

Cooking the lentils in broth first removes that complication. The tomatoes are already
processed and need much less time in the cooker than the dried lentils. Adding them
near the end gives the sauce time to heat through without asking the lentils to
soften in an acidic mixture.

This still qualifies as a no-browning slow cooker sauce: there is no frying, draining,
or extra cooking pan. It does require a brief return to the kitchen before dinner,
so plan for that final tomato-cooking period.

## Getting the right texture for pasta

A lentil sauce for spaghetti should be thick enough to cling to the strands but
loose enough to toss. If the finished sauce looks watery, mash more of the lentils
and let the mixture stand briefly before deciding whether it needs further adjustment.
It will thicken somewhat as it cools.

If it becomes too dense, add liquid a little at a time. Reserved pasta water is
convenient when dinner is nearly ready, though plain hot water works too.

Cook the pasta separately according to its package directions. Adding dry spaghetti
directly to this recipe would change the liquid requirements and could leave unevenly
cooked pasta. Toss the drained noodles with some sauce before serving, then spoon
more over each portion.

Rigatoni, penne, and wide ribbons also work well. Their shapes catch the lentils
more easily than very fine pasta. Grated Parmesan is an optional serving addition;
use a vegetarian-labeled cheese if that distinction matters, since some Parmesan-
style cheeses contain animal rennet.

## Making an affordable dinner stretch further

Dried lentils and canned tomatoes make this a useful budget lentil pasta sauce,
especially when purchased as store brands. Actual costs vary, but neither ingredient
requires much preparation or produces much waste.

For smaller households, divide the finished sauce before cooking the pasta. Keep
enough for dinner and refrigerate or freeze the remaining portions. Storing sauce
separately prevents pasta from absorbing it and becoming swollen during storage.

Leftovers also suit baked potatoes or cooked polenta, which offer a change from
another plate of spaghetti without requiring a second sauce.

## Storage and reheating

Transfer leftover sauce to shallow containers and refrigerate within two hours of
cooking. Keep refrigerated for 3 to 4 days, or freeze in meal-size portions for
about 3 months for best quality.

Thaw frozen sauce in the refrigerator. Reheat it in a saucepan or microwave, stirring
periodically, until it reaches **165°F (74°C)** throughout. Add a splash of water
if it has thickened in storage.

Do not use the slow cooker to reheat cold leftovers; it can warm them too slowly.
A saucepan is quicker and makes it easier to restore the sauce to a consistency
that coats freshly cooked pasta.
