Slow cooker turkey keema combines ground turkey, green peas, and a spiced tomato
base into a dinner that needs little attention once the lid goes on. A short stovetop
step gives the meat color and softens the onion; the slow cooker takes over from
there. Ginger, garlic, and garam masala give the sauce its warmth, while peas stirred
in near the end keep their sweetness. Serve it over basmati rice with a cilantro
garnish and a squeeze of lemon.

Keema refers to minced meat and dishes made with it across South Asian cuisines.
This turkey version is a South Asian-inspired adaptation, using a slow cooker for
convenience. The finished dish should be moist enough to spoon over rice, with a
thick sauce that clings to the meat.

## Building flavor before the slow cooker

Ground turkey has a mild flavor, so the onion, aromatics, and spices deserve a few
minutes in the skillet before everything goes into the pot. Softening the onion
removes its raw bite. Cooking the ginger and garlic briefly in oil spreads their
flavor through the dish, and stirring in the tomato paste deepens the tomato base.

Choose ground turkey labeled about 93 percent lean if available. It has enough fat
to stay more tender during cooking than very lean ground turkey breast. Extra-lean
turkey will work, but avoid extending the cooking time after the dish is ready.

Browning also breaks the turkey into small, even pieces. Let it sit against the
hot skillet briefly between stirs so it develops some color instead of constantly
moving it around. A nonstick skillet makes cleanup easy; a heavy stainless steel
skillet can produce more browned bits to loosen with broth.

Garam masala goes in near the end. Blends vary, but many contain fragrant spices
such as cinnamon, cardamom, and cloves. Adding it late keeps those aromas more noticeable
after the longer cooking period.

## Slow cooker turkey keema recipe

This recipe makes a moderately spiced keema with a thick tomato sauce. The cayenne
is optional, so the heat can be adjusted without changing the other seasonings.

**Yield:** 4–6 servings
**Prep time:** About 15 minutes **Stovetop cooking:** About
20 minutes **Slow cooker time:** 3–4 hours on LOW or 2–3 hours on HIGH, plus 20–
30 minutes after adding the peas **Total time:** About 4–5 hours using LOW **Equipment:**
Large skillet, 4-quart slow cooker, instant-read thermometer

### Ingredients

– 1 tablespoon (15 mL) neutral cooking oil
 – 1 medium yellow onion, finely chopped,
about 1 cup (150 g) – 1 tablespoon (15 g) finely grated fresh ginger – 4 garlic
cloves, minced – 1½ pounds (680 g) ground turkey, preferably about 93 percent lean–
¾ teaspoon fine salt, plus more to taste – 2 tablespoons (30 g) tomato paste – 2
teaspoons ground coriander – 1½ teaspoons ground cumin – ½ teaspoon ground turmeric–
¼ teaspoon cayenne pepper, optional – ¼ cup (60 mL) low-sodium chicken broth or
water – 1 can (14.5 ounces/411 g) diced tomatoes, undrained – 1½ cups (about 210
g) frozen green peas – 1½ teaspoons garam masala – 1 tablespoon (15 mL) fresh lemon
juice, plus more to taste – ¼ cup chopped fresh cilantro, loosely packed – Cooked
basmati rice, for serving

### Instructions

1. **Soften the onion.** Heat the oil in a large skillet over medium heat. Add the
onion and cook for 5–7 minutes, stirring occasionally, until softened and beginning
to turn golden.

2. **Add the ginger, garlic, and turkey.** Stir in the ginger and garlic and cook
for about 30 seconds. Add the ground turkey and salt. Increase the heat to medium-
high and cook, breaking the meat into small pieces, until cooked through with some
browned spots. Ground turkey should reach **165°F (74°C)**.

3. **Cook the tomato paste and spices.** Reduce the heat to medium. Stir in the
tomato paste, coriander, cumin, turmeric, and optional cayenne. Cook for about 1
minute, stirring so the spices do not scorch.

4. **Transfer to the slow cooker.** Pour the broth into the skillet and scrape up
the browned bits. Transfer everything to the slow cooker, then stir in the diced
tomatoes and their juices. Cover promptly.

5. **Cook until the sauce comes together.** Cook on LOW for 3–4 hours or HIGH for
2–3 hours, until the onion is tender and the tomato sauce has lost its raw taste.
Keep the lid closed during cooking unless checking near the end.

6. **Add the peas and garam masala.** Stir in the frozen peas and garam masala.
Cover and cook on HIGH for another 20–30 minutes, or until the peas are tender and
the mixture is thoroughly hot. Check that the center reaches 165°F (74°C), allowing
extra time if necessary.

7. **Finish and serve.** Stir in the lemon juice. Taste before adding more salt
or lemon, since broth and canned tomatoes vary. Spoon over basmati rice and scatter
the cilantro over each serving.

## Adjusting the sauce and seasoning

Slow cookers trap moisture, so keema can look looser than a stovetop version. This
recipe uses only a small amount of broth for that reason. Avoid adding extra liquid
at the beginning unless your appliance’s instructions require it.

If the finished sauce is too thin, transfer the keema to a wide skillet and simmer
uncovered, stirring occasionally, until it thickens. This is faster and more predictable
than leaving the slow cooker uncovered. If it seems dry, stir in hot water or broth
a tablespoon at a time.

The amount of cayenne controls the heat more directly than the garam masala, although
some garam masala blends also contain chile. Check the label if serving anyone sensitive
to spicy food. For a hotter dish, add a chopped fresh green chile with the ginger
and garlic.

Fresh tomatoes can replace the canned tomatoes by weight, but their water content
and acidity vary. Very juicy tomatoes may leave a thinner sauce, while bland tomatoes
may need a little more lemon juice at the finish.

## Serving and storing the leftovers

Basmati rice catches the sauce without competing with the spices. Plain yogurt makes
a cooling accompaniment, and cucumber slices or a simple cucumber salad add something
crisp. Warm roti or naan also works well for scooping up the meat and peas.

Refrigerate leftovers within two hours of cooking, dividing them into shallow containers
so they cool promptly. Keep refrigerated at 40°F (4°C) or below and use within 3–
4 days. For longer storage, freeze in meal-size portions; use within 2–3 months
for best quality.

Reheat in a saucepan or microwave until the keema reaches 165°F (74°C), stirring
to eliminate cold spots. A splash of water loosens the thickened sauce. Do not use
the slow cooker to reheat chilled leftovers, since it may heat them too slowly.
Add fresh cilantro after reheating, and taste before adding another squeeze of lemon.
