Small batch cookie pizza delivers the soft center and crisp, buttery edge of a chocolate
chip cookie without leaving a full cookie cake on the counter. Baked in a 6-inch
pan, it makes a generous dessert for two or four smaller servings. The dough comes
together in one bowl, needs no chilling, and can be served plain, decorated with
chocolate, or topped with ice cream while still slightly warm.

## Small batch cookie pizza recipe

A light-colored aluminum cake pan produces the most even bake. A 6-inch cast-iron
skillet also works, though the edges may brown more quickly. Avoid pressing the
dough into a thin layer on a large baking sheet. Without the support of a properly
sized pan, the dough may spread too far and lose its chewy cookie center.

**Yield:** 1 six-inch cookie pizza, 2 generous servings
 **Preparation time:** 15
minutes **Baking time:** 17 to 21 minutes **Cooling time:** 20 minutes **Total time:**
About 55 minutes **Course:** Dessert **Cuisine:** American

### Equipment

– 6-inch round baking pan, preferably light-colored metal
 – Parchment paper – Medium
mixing bowl – Rubber spatula or wooden spoon – Small whisk

### Ingredients

– 1/4 cup (57 grams) unsalted butter, softened
 – 3 tablespoons (38 grams) packed
light brown sugar – 2 tablespoons (25 grams) granulated sugar – 1 large egg yolk–
1/2 teaspoon vanilla extract – 3/4 cup (90 grams) all-purpose flour, spooned into
the measuring cup and leveled – 1/4 teaspoon baking soda – 1/4 teaspoon fine salt–
1/3 cup (57 grams) semisweet chocolate chips, divided – Flaky salt, optional

### Instructions

1. Heat the oven to 350°F (175°C). Grease the bottom and sides of a 6-inch baking
pan. Cut a parchment circle to fit the bottom, place it in the pan, and lightly
grease the parchment.

2. Put the softened butter, brown sugar, and granulated sugar in a mixing bowl.
Stir vigorously for about one minute, until the mixture is creamy and no streaks
of plain butter remain.

3. Add the egg yolk and vanilla. Mix until smooth and slightly lighter in color.
Scrape the bottom and sides of the bowl so the ingredients combine evenly.

4. Add the flour, baking soda, and salt. Stir just until only a few dry streaks
remain. Fold in about three-quarters of the chocolate chips. Stop mixing once the
flour has disappeared; excessive mixing can make the baked cookie firmer.

5. Transfer the chocolate chip cookie dough to the prepared pan. Press it into an
even layer, making sure the dough reaches the edge. Scatter the reserved chocolate
chips over the surface and press them in lightly.

6. Bake for 17 to 21 minutes. The edge should be golden and set, while the center
should look slightly soft but no longer wet or shiny. Begin checking early if the
pan is dark metal or if the oven tends to run hot.

7. Place the pan on a cooling rack. If desired, sprinkle the warm cookie with a
small pinch of flaky salt. Let it cool in the pan for at least 20 minutes before
loosening the edge with a thin knife and lifting or turning it out.

8. Cut the cookie pizza into wedges and serve warm or at room temperature.

## Getting a chewy cookie center

The cookie continues cooking from the heat of the pan after it leaves the oven.
Waiting for the center to become fully firm in the oven often results in a dry cookie
once it cools. Remove it when the outer edge is golden and the middle has puffed
slightly but remains soft.

The egg yolk supplies enough moisture and structure for this scaled cookie recipe
without introducing the extra water found in a whole egg. Using an entire egg would
make this amount of dough loose and cakey. Brown sugar also helps the center retain
moisture, while the smaller amount of granulated sugar contributes to the lightly
crisp edge.

Accurate flour measurement makes a noticeable difference in small batch baking.
Scooping directly from the flour container can compact too much flour into the cup.
For the best result, weigh 90 grams. If a scale is unavailable, stir the flour,
spoon it into the measuring cup, and level the top without packing it down.

Softened butter should yield to gentle pressure but should not look greasy or partly
melted. Melted butter changes how the dough spreads and may produce a dense, oily
center. If the kitchen is warm and the finished dough feels unusually soft, refrigerate
it in the pan for 10 minutes before baking.

## Choosing and preparing a 6-inch baking pan

Measure a round pan across the open top from one inside edge to the other. A pan
that is wider than 6 inches will create a thinner cookie and shorten the baking
time. A smaller pan will produce a thicker center that needs longer in the oven.

A standard 6-inch cake pan with sides at least 1 1/2 inches high is suitable. The
dough does not rise dramatically, but the sides help it keep a clean, round shape.
Parchment on the bottom reduces sticking, especially where melted chocolate touches
the pan.

Glass and ceramic dishes heat differently from metal and may require extra baking
time. Watch the appearance of the cookie rather than relying only on the clock.
If using cast iron, grease the skillet well and start checking at 15 minutes because
the retained heat will continue browning the bottom.

## Toppings and serving options

For a simple chocolate chip topping, reserve a few chips and press them into the
cookie immediately after baking. They will soften from the residual heat and remain
visible after the cookie cools.

To give the mini dessert pizza a more decorated appearance, pipe small dots of vanilla
or chocolate frosting around the cooled edge. About 1/4 cup of frosting is enough;
a heavy layer can overwhelm the cookie. Melted chocolate can also be drizzled across
the top after cooling.

For a warm plated dessert, let the cookie stand for 10 to 15 minutes, cut it into
wedges, and add a scoop of vanilla ice cream. The cookie will be softer at this
stage and may need to be served directly from the pan. For tidy slices that can
be picked up, allow it to cool completely.

Chopped toasted pecans or walnuts can replace up to half the chocolate chips. Milk
chocolate, dark chocolate, or a mixture of chips also works. Keep the total amount
of chocolate and nuts near 1/3 cup so the dough remains cohesive.

## Storage and reheating

Cover leftovers tightly or place them in an airtight container. The cookie pizza
will keep at room temperature for about three days. Refrigeration is unnecessary
unless it has been topped with a frosting that requires it.

To restore some softness, warm an individual wedge in the microwave for 8 to 12
seconds. The chocolate may become hot before the cookie does, so let the piece stand
briefly before eating. An untopped cookie can also be warmed in a 300°F (150°C)
oven for about five minutes.

The baked cookie may be frozen whole or in wedges for up to two months. Wrap it
tightly and place it in a freezer-safe container. Thaw at room temperature before
reheating. This small format rarely leaves much to store, which is precisely the
appeal of a cookie pizza for two.
