Snickerdoodle cookie pizza turns the familiar cinnamon-sugar cookie into a soft,
sliceable family dessert. A chewy snickerdoodle base is baked as one large cookie,
cooled, and covered with cinnamon cream cheese frosting. The dough requires no chilling,
and the finished cookie can be cut into wedges or smaller party squares.

The cookie base gets its characteristic flavor and texture from cream of tartar,
cinnamon, and a crisp cinnamon sugar crust. Tangy cream cheese frosting complements
the sweet cookie without hiding its warm spice.

## Snickerdoodle cookie pizza recipe

This recipe makes one large cookie about 11 inches across. A round pizza pan is
convenient, but a large baking sheet works just as well.

**Yield:** 10 to 12 servings
**Preparation time:** 20 minutes **Baking time:**
15 to 18 minutes **Cooling and decorating time:** About 1 hour **Total time:** About
1 hour 40 minutes **Course:** Dessert **Cuisine:** American

### Equipment

– Large baking sheet or 12-inch pizza pan
 – Parchment paper – Electric mixer –
Mixing bowls – Rubber spatula – Offset spatula or butter knife

### Ingredients for the chewy snickerdoodle base

– 1/2 cup (113 g) unsalted butter, softened
 – 3/4 cup (150 g) granulated sugar –
1 large egg, at room temperature – 1 teaspoon vanilla extract – 1 1/2 cups (180
g) all-purpose flour – 1 teaspoon cream of tartar – 1/2 teaspoon baking soda – 1/
4 teaspoon fine salt – 1/2 teaspoon ground cinnamon

### For the cinnamon sugar crust

– 2 tablespoons granulated sugar
 – 1 teaspoon ground cinnamon

### For the cinnamon cream cheese frosting

– 4 ounces (113 g) full-fat block cream cheese, softened
 – 2 tablespoons (28 g)
unsalted butter, softened – 1 1/2 cups (about 180 g) confectioners’ sugar – 1 teaspoon
ground cinnamon – 1/2 teaspoon vanilla extract – Pinch of fine salt – 1 to 2 teaspoons
milk, if needed

## Making the giant snickerdoodle base

Heat the oven to 350°F (175°C). Line a pizza pan or large baking sheet with parchment
paper. If using a rimless pizza pan, place it on top of a larger sheet pan to make
moving it easier.

Beat the softened butter and 3/4 cup sugar with an electric mixer for about two
minutes, until creamy and slightly lighter in color. Add the egg and vanilla, then
beat until the mixture is smooth. Scrape down the bowl as needed.

In a separate bowl, stir together the flour, cream of tartar, baking soda, salt,
and 1/2 teaspoon cinnamon. Add the dry ingredients to the butter mixture. Mix on
low speed just until no dry patches remain. Avoid extended mixing once the flour
is incorporated, since that can make the baked cookie firmer.

In a small bowl, combine the two tablespoons of sugar with one teaspoon of cinnamon.
Sprinkle about half of this mixture onto the parchment in a roughly 10-inch circle.

Place the dough in the center and shape it into a disk about 9 1/2 to 10 inches
wide and approximately 1/2 inch thick. Keep the thickness as even as possible so
that the edge does not finish baking long before the center. Sprinkle the remaining
cinnamon sugar evenly over the top.

Bake for 15 to 18 minutes. The edges should look set and lightly golden, while the
center should appear soft but no longer wet. The cookie will continue to set on
the hot pan after it leaves the oven.

Let it cool on the pan for 15 minutes. Carefully slide the cookie, still on its
parchment, onto a wire rack or cool counter. Allow it to cool completely before
adding frosting. A warm cookie will melt the butter and cream cheese, leaving a
thin, slippery coating instead of a spreadable frosting.

## Why cream of tartar belongs in a snickerdoodle

Cream of tartar is the powdered form of tartaric acid. In snickerdoodles, it reacts
with baking soda to help leaven the dough. It also supplies the slight tang associated
with the classic cookie.

A recipe made without cream of tartar can still produce a pleasant cinnamon sugar
cookie, but the flavor and texture will differ. For this cookie pizza, the combination
of cream of tartar and baking soda helps create a tender center with lightly crisp
edges. Use fresh baking soda and measure both ingredients accurately. Too much baking
soda can leave an alkaline or soapy taste.

## Easy cinnamon cream cheese frosting

Beat the softened cream cheese and butter together until completely smooth. Add
the confectioners’ sugar gradually, mixing on low speed at first so it stays in
the bowl. Add the cinnamon, vanilla, and salt, then beat briefly at medium speed
until creamy.

The frosting should hold soft swirls while remaining easy to spread. If it seems
too stiff, add milk one teaspoon at a time. If it becomes loose, refrigerate it
for 10 to 15 minutes before using. Adding more sugar will also thicken it, though
it will make the frosting sweeter.

For the smoothest result, use block cream cheese rather than spreadable cream cheese
from a tub. The tub-style product generally contains more moisture and can produce
a softer frosting.

## Frosting a cookie pizza without breaking it

Leave the cooled cookie on the parchment or transfer it to a flat serving board.
Spoon the frosting onto the center, then spread it outward with an offset spatula.
Stop about 1/2 inch from the edge so that the cinnamon sugar crust remains visible.

A simple spiral made with the back of a spoon suits the casual look of a giant snickerdoodle.
For cleaner slices, refrigerate the frosted cookie for 20 to 30 minutes before cutting.
Use a large, sharp knife and wipe the blade between cuts.

Cut the cookie into 10 to 12 wedges for dessert portions. For a buffet or children’s
party, cut it into small squares or narrow wedges. The cookie is rich once frosted,
so modest pieces are usually enough.

## Preventing common cookie pizza problems

If the dough spreads too far, the butter may have been overly warm or the dough
may have been shaped too thinly. Softened butter should yield to gentle pressure
but should not look oily or partly melted. If the kitchen is warm and the dough
feels greasy, refrigerate the shaped disk for 15 minutes before baking.

An overbaked cookie will lose the soft, chewy center that makes this cinnamon dessert
recipe work. Remove it when the perimeter is set and the middle still gives slightly
when touched. Waiting for the entire surface to become golden usually produces a
crisp cookie after cooling.

A cracked cookie is often the result of moving it before it has set. Give the base
at least 15 minutes on the baking pan, and support the parchment from underneath
when transferring it.

If the center appears raw rather than merely soft, return the cookie to the oven
for two or three minutes. The surface should look dry, with no glossy patch of uncooked
dough.

## Variations and serving ideas

A light scattering of extra cinnamon sugar can be added after frosting. Toasted
pecans also pair well with the cream cheese topping. For a fall variation, replace
up to 1/4 teaspoon of the cinnamon in the frosting with ground nutmeg, ginger, or
cardamom. Keep the amount restrained so the cookie still tastes like a snickerdoodle.

The base can also be decorated with piped frosting around the edge. This is useful
for birthdays because the open center leaves room for sprinkles or a short message.
Add sprinkles shortly before serving, since some colors may bleed into the frosting
during refrigeration.

Serve the cookie pizza slightly cool or at room temperature. The cinnamon flavor
is clearer and the base is softer after it has rested outside the refrigerator for
15 to 20 minutes.

## Storage and make-ahead guidance

The unfrosted cookie base can be baked one day ahead. Once fully cool, wrap it tightly
and keep it at room temperature. Prepare the frosting separately, refrigerate it
in a covered container, and let it soften briefly before spreading.

Because the finished dessert contains cream cheese frosting, refrigerate leftovers
within two hours. Store covered in the refrigerator for up to four days. Place parchment
between stacked slices to protect the frosting.

For longer storage, freeze unfrosted cookie slices in an airtight container for
up to two months. Thaw them at room temperature, then prepare and add the frosting.
Freezing the base separately preserves its texture and avoids damage to the decorated
surface.
