Strawberry shortcake cookie pizza brings together a tender sugar cookie crust, vanilla
whipped cream, and fresh strawberries in a dessert made for warm-weather gatherings.
It has the familiar flavors of strawberry shortcake but skips the work of shaping
and filling individual servings. Once assembled, the pizza can be cut into wedges
and served without plates or forks at a casual party, though the cream and fruit
mean it should not sit in summer heat for long.

## Strawberry shortcake cookie pizza recipe

The crust can be baked several hours ahead, but wait to add the cream and berries
until the cookie is completely cool. A cream cheese-stabilized topping holds its
shape longer than plain whipped cream and provides enough structure for clean dessert
pizza slices.

**Yield:** 10 to 12 servings
**Preparation time:** 25 minutes **Chilling and cooling
time:** About 1 hour **Baking time:** 14 to 18 minutes **Total time:** About 1 hour
45 minutes **Course:** Dessert **Equipment:** 12-inch pizza pan or large baking
sheet, electric mixer, mixing bowls

### Ingredients

#### For the sugar cookie crust

– 1/2 cup (113 g) unsalted butter, softened
 – 3/4 cup (150 g) granulated sugar –
1 large egg, at room temperature – 1 teaspoon vanilla extract – 1 1/2 cups (180
g) all-purpose flour – 1/2 teaspoon baking powder – 1/4 teaspoon fine salt

#### For the vanilla whipped cream

– 4 ounces (113 g) full-fat cream cheese, softened
 – 1/3 cup (40 g) confectioners’
sugar – 1 teaspoon vanilla extract – 1 cup (240 ml) cold heavy whipping cream

#### For the fresh fruit topping

– 1 pound (454 g) fresh strawberries
 – Fresh mint leaves, optional – Finely grated
lemon zest, optional

## Baking the sugar cookie crust

Heat the oven to 350°F (175°C). Lightly grease a 12-inch pizza pan, or line a large
baking sheet with parchment paper.

Beat the softened butter and granulated sugar with an electric mixer until evenly
combined and slightly fluffy, about 2 minutes. Add the egg and vanilla, then mix
until smooth.

In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry
ingredients to the butter mixture and mix on low speed just until no dry flour remains.
Avoid extended mixing, which can make the finished cookie firm rather than tender.

Shape the dough into a disk, cover it, and refrigerate for 20 to 30 minutes. Chilling
controls spreading and makes the dough easier to press into an even circle.

Place the chilled dough in the center of the prepared pan. Press it into a circle
about 10 inches wide and roughly 1/4 inch thick. Leave open space around the edge
because the dough will spread during baking. Keeping the thickness even helps prevent
a dark, crisp perimeter and an underbaked center.

Bake for 14 to 18 minutes, until the edge is lightly golden and the center looks
set. The middle may still feel soft when it first comes out of the oven, but it
will firm as it cools. Let the crust rest on the pan for 10 minutes, then transfer
it carefully to a wire rack. Cool completely before adding any topping.

## Making stabilized whipped cream

Plain whipped cream begins to soften and release moisture as it sits. Cream cheese
gives the topping enough stability for slicing while preserving a light texture.

Beat the softened cream cheese, confectioners’ sugar, and vanilla until smooth.
Stop the mixer and scrape the bowl so that no dense pieces remain near the bottom.

With the mixer running at low speed, pour in the cold heavy cream gradually. Once
incorporated, increase the speed to medium-high and beat until the mixture forms
medium-stiff peaks. It should hold a defined shape when the beaters are lifted without
looking grainy or curdled.

If the cream becomes too stiff, fold in a teaspoon or two of cold heavy cream by
hand. Keep the finished topping refrigerated until the crust is cool and ready to
decorate.

## Preparing the fresh strawberries

Rinse the strawberries under cool running water, then dry them thoroughly. Remove
the leafy tops and cut the berries into thin slices or small wedges.

Excess water can collect on the cream and soften the cookie crust, so spread washed
berries on a clean towel and let them dry before slicing. Do not coat them with
sugar in advance. Sugar draws juice from the fruit, which is useful for traditional
shortcake but less suitable for a cookie pizza that needs to hold its shape.

For the neatest presentation, use firm, ripe berries without bruised or watery areas.
The pieces do not need to be identical, but keeping them similar in thickness makes
the pizza easier to cut.

## Assembling and slicing the dessert pizza

Place the cooled cookie crust on a serving board or flat platter. Spread the vanilla
whipped cream over the surface, leaving a narrow border around the edge. An offset
spatula works well, although the back of a spoon is enough.

Arrange the strawberries over the cream. They can be layered in overlapping circles
or scattered in a looser pattern. Add a little lemon zest for brightness or a few
small mint leaves for color, if desired.

Refrigerate the assembled pizza for 20 to 30 minutes before cutting. This brief
chill firms the topping and helps produce cleaner slices. Use a large, sharp knife
or pizza wheel, wiping the blade between cuts when needed.

A 10-inch crust makes 10 to 12 modest wedges. For a buffet with several desserts,
cut the pizza into narrow wedges or small squares instead.

## Timing it for a summer party

The crust is the best component to make ahead. Once completely cool, it can be wrapped
tightly and kept at room temperature for up to one day. Prepare the stabilized whipped
cream the same day and refrigerate it in a covered container.

The assembled strawberry dessert is best served within four to six hours. Over time,
moisture from the fresh fruit topping moves into the cream and crust, making the
cookie softer. That change is not harmful, but the slices become less tidy.

Keep the dessert refrigerated until shortly before serving. Perishable foods containing
whipped cream or cream cheese should not remain at room temperature for more than
two hours, or more than one hour when the temperature is above 90°F (32°C). For
an outdoor party, bring the pizza out in smaller portions and return unused pieces
to the refrigerator or a well-iced cooler.

## Useful substitutions and variations

A 16- to 17-ounce package of refrigerated sugar cookie dough can replace the homemade
crust. Press it into a 10-inch circle and bake according to the package temperature,
checking it early because a wide cookie may bake faster around the edges.

Other berries can replace part of the strawberries. Blueberries, raspberries, and
sliced blackberries all work, provided they are dry and firm. Very juicy fruits,
frozen berries, and canned fruit are more likely to make the topping run.

For a mild citrus variation, add 1 teaspoon of finely grated lemon zest to the cookie
dough or whipped topping. Almond extract also pairs well with strawberries, but
its flavor is strong; use no more than 1/4 teaspoon in place of part of the vanilla.

Store leftover slices in a covered container in the refrigerator for up to two days.
The crust will gradually soften, so this summer party dessert is at its best on
the day it is assembled.
