  • An additional option for this recipe would be to sprinkle the top of the cake before placing in the oven to bake with about ¼ cup of walnuts or my personal favorite pecan nuts. Then, there’s no need to sprinkle the cake with powdered sugar.
  • Also, you can reduce the Marciano cherries to 4 ounces each and add 4 ounces of soaked golden raisins to add a little extra character.
  • As a last option, you can reduce the Marciano cherries to 3 ounces each and add nothing to make it look a little less like a fruitcake but still have some color in it.

Nobody can resist the delicious sweet snap of cookies. That’s why they’re always baked in hearty batches! The more health-conscious among us probably don’t eat them all at once and are probably left with a few handfuls after they indulge in their sweet treat (a prudent decision!)

The downside to these circular desserts is that they may not keep the best. After several days you may find that your delightful tray of cookies has either crumbled and lost their crunch or turned into this hard and brittle slab that hurts your teeth.

How long do cookies typically last?

Many factors affect how long your cookies can last either in the fridge or your room temperature kitchen. These factors include:

  • What type of cookies they are
  • The temperature of where you store them
  • How humid it is where you live
  • What ingredients you used in baking them

A general estimate is that cookies are in their prime immediately after, a few days, or even up to a week after you bake them. Properly stored, however, and they can last you quite a while longer. Generally, crunchy cookies maintain their typical taste and texture for much longer than soft or chewy cookies, seeing as they contain less moisture.

The most common crunchy cookies include:

  • Gingersnaps
  • Shortbread
  • Biscuits and crackers (if you consider them to be cookies)

How to store crunchy cookies

  • Bake in separate batches at 350°F for 10-12 minutes or until the edges of the cookies are lightly golden brown and the top is set. Remove from the oven and cool on the baking sheet for 5 minutes, then transfer the cookies to a wire rack to finish cooling.

  • Heat half the olive oil in a medium-sized saucepan at medium heat, add the meat and sprinkle it with salt and pepper. Stir occasionally and remove to a separate plate when browned.
  • Add the rest of the olive oil to cook the mushrooms. Stir and mix with the garlic, thyme, beef broth, and Worcestershire sauce.
  • Put the potatoes, onions, and cooked meat back into the saucepan. Boil it, then simmer it (for roughly 15 minutes). You want the potatoes cooked and the meat tender.
  • Separately, whisk the cornstarch with cold water, add it to the stew and thicken it (for about 2 minutes).
  • Finally, take it away from the heat, add the parsley and the peas and carrots mix and sprinkle with a bit of salt. Now, preheat the oven to 400F (200C).

2-Puff Pastry Tops:

  • Cut the puff pastry in circles to cover the pot pies. You can use an upside-down bowl or a cutter if you prefer.
  • With the leftover dough, you can create small shapes to garnish them.

3-Pot Pie Assembly:

  • On a foil-lined baking sheet, spray the bowls with non-stick spray.
  • Pour the stew into the bowls and place the puff pastry tops to cover them. Gently stretch them and press them until you can tuck in the edges.
  • Whisk the egg with just a bit of water, and brush it onto the puff pastry tops. If you made some shapes, place them on top, as well.
  • Bake for about 25 minutes. You want the crust golden and the filling bubbly.

  • 1 cup (200 g) sugar
  • 1 cup (200 g) unsalted butter
  • 1 tablespoon (15 ml) Vanilla Quick Bread extract
  • 4 large eggs
  • 2 cups (400 g) flour
  • 1 teaspoon (5 ml) of baking powder


  • With this recipe, you’ll get one loaf (quick bread) of Vanilla Quick Bread. Using an 8×4 inch loaf pan, this translates to about 9-12 slices depending on serving size.

Preparation Directions

  • First, preheat your oven to 350 degrees F (177 degrees C)
  • Butter your loaf pan.

(Optional) You can also line your loaf pan here – you do this by putting your pan on baking parchment, outlining it with a pen or pencil, and then cut out this shape with scissors. Put this cut out in the pan, creating a sling that will make it easier to lift the when it’s done.

  • Put sugar, butter, and Vanilla Quick Bread extract into the bowl of your stand mixer and beat on medium to high speed for 2-3 minutes until the mixture feels soft and light.
  • Now, add your eggs one at a time. Beat each one down, scrape the bowl, and then add the next one until all 4 eggs have been added to your mixture.
  • Pour in flour and baking powder and mix until evenly distributed.
  • Pour your finished batter into the loaf pan and bake for approximately 60 minutes.
  • Remove your Quick Bread from the oven. One way to check the doneness of your cake is to try the famous toothpick test: insert a toothpick into its interior from the top and, if it comes out clean, you’re good to go! Remove it from the pan, either using your sling or a spatula, and serve.

Vanilla Quick Bread tastes excellent on its own, but it also allows for a lot of experimentation – for example, you could create a Vanilla Quick Bread glaze and drizzle it on top. You can top with strawberries, whipped cream, or cinnamon. Try out some different things and see what works!
