
Cauliflower Couscous and Baked Chicken can be your answer if you are looking for an easy healthy dinner. This recipe has several things going for it:
- This recipe makes a low carbohydrate meal having replaced classic couscous with cauliflower couscous;
- Cauliflower couscous provides a vegetable-centric focus that is a low-carb alternative that is rich in vitamins, minerals, and fiber;
- This recipe uses chicken which, when compared to red meat, chicken is a lower calorie and lower fat meal and has more vitamin A, vitamin E, vitamin K, vitamin B1, B3, and B5.
- This recipe is easy to prepare and a nice small-batch recipe for two.

Ingredients:
For chicken
- 2 lbs chicken drumsticks
- 1 tsp salt
- 1 tbsp paprika
- ½ tsp pepper
- 1 tbsp olive oil
- 2 oz ginger, sliced
- 2 garlic cloves
- 1 lemon, sliced
For couscous
- 1 big cauliflower
- 1 small onion
- 1 cup cherry tomatoes
- ½ tbsp turmeric
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp pepper
- Parsley, to taste

Preparation Directions
- In a large bowl, add the chicken, salt, pepper, paprika, olive oil, ginger and garlic. Mix it!
- Preheat oven to 375°F.
- Prepare a deep tray in which you put a suspended grill. Place the lemon slices over the grill, then arrange the chicken over the lemon slices. Bake the chicken for 90 minutes at 375°F.
- Clean the cauliflower and separate it into smaller florets.
- Add the cauliflower pieces in two stages in a food processor and pulse for 10 seconds. At this point, you will get a texture similar to couscous.
- Add 1 tbsp of olive oil in a cast iron pan. Heat the oil and add the chopped onion. Cook for 3 minutes.
- Add the cauliflower and cook for 5 minutes, stirring occasionally.
- Now add the cherry tomatoes and the turmeric, season with salt and pepper, and cook for 2-3 minutes.
- At the end, add the freshly chopped parsley.
- Serve the chicken with cauliflower couscous!

- This recipe makes approximately 2 or 3 servings:
- 3 servings – with two chicken drums and the couscous evenly divided, or
- 2 servings – with three chicken drums and the couscous evenly divided.
