  • 1 pound  ground beef
  • 9 ounces rotini
  • 1 red onion
  • 1  can diced tomatoes with basil
  • 1 tablespoon olive oil
  • ½ teaspoon  garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 cup mushrooms
  • 1 cup sour cream
  • 3 tablespoons cream cheese
  • ½ cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded sharp Cheddar cheese

  • Preheat the oven to 350°F.
  • Prepare rotini al dente
  • boil and cut mushrooms, chop sun-dried tomatoes
  • Combine sour cream and cream cheese and add to rotini. Mix and set aside
  • Heat a  skillet over medium-high heat. Add olive oil and onion, fry, and add the ground beef. Cook for a few minutes. Stir in the oregano, garlic powder, basil,  salt, and pepper.
  • Add chopped tomatoes, add mushrooms and sun-dried tomatoes, mix, and cook for a few minutes
  • Pour into a rotini baking dish, top with ground beef and tomato sauce, and sprinkle with cheese
  • Bake for 15 to 20 minutes
