Make homemade corn soup any time of year at home! Although fresh corn may not always be in season during winter, you can save money and create this soup using frozen kernels instead.

This recipe is ideal for meal prepping and will make a satisfying lunch or dinner on any cold day. Plus, you can even prepare it ahead of time and store it in the fridge!

Begin by placing 5-6 cups of frozen corn kernels in a microwave safe bowl and defrosting until they reach near room temperature and no longer feel cool to the touch. At this stage, prepare five separate bowls containing ingredients for future steps.

Add 4 slices of bacon, one whole white onion, 2 teaspoons of minced fresh thyme and salt to taste to the first bowl. In the second bowl add 1/4 cup of unsifted all-purpose flour while mixing. Lastly add 5 cups of cold room temperature water in the final bowl.

Once water has been added, you should continuously stir until it boils and begins to simmer – this could take anywhere between five minutes and twenty-five, depending on your heat source and materials you are working with.

Once your corn chowder has reached a simmer, add red potatoes and continue stirring until they soften. At that time, stir in heavy cream or half and half until all ingredients have combined properly and reached smoothness.
