  • 1 ½ c. of panko or plain breadcrumbs
  • 1 cup of grated parmesan, divided
  • 4 cups marinara
  • Kosher salt
  • 2 sliced, medium-sized eggplants, sliced into 0.5 inches thick rounds
  • Freshly ground black pepper
  • 3 large-sized eggs
  • 1/3 c. sliced basil
  • 2 tsp. Italian seasoning

Directions

  • Preheat the oven to 400°F. Line two baking sheets with parchment paper and coat using cooking spray.
  • Whisk panko, Italian seasoning, and I/2 cup of parmesan in a shallow bowl to create a panko mixture
  • Whisk the three large eggs with two tablespoons of water in another shallow bowl to make an egg wash, then season with pepper and salt
  • Dip a slice of eggplant into the egg wash, then dredge in the panko mixture. Place the molded eggplant on a baking sheet. Repeat this for all eggplant slices. After that, apply a light coat of cooking spray to the eggplant slices
  • Bake for 30-35 minutes until they become golden and crisp on the outside but soft inside
  • Add a cup of marinara to a large baking dish and spread evenly. Then place eggplant slices in an even layer, then pour 1 ½ cup of marinara on them.
  • Sprinkle with a 1 cup of mozzarella, fresh basil, and remaining ½ cup of parmesan. Repeat the process until all the ingredients are used up
