Lasagna is one of my favorite classic pasta dishes. It freezes so well, whether baked or not. But I’d recommend freezing lasagna before baking. One of the appealing qualities of lasagna is its crunchy, caramelized crust that looks sizzling fresh. Unfortunately, you won’t get that when you bake, freeze, and re-bake it. Your dish will also be a little soggy.

- Layering the components: Spread the meat sauce, noodles, and cheese into the pan or baking dish. Just follow that order when layering: sauce – noodles – cheese. Repeat the layers. Use no-boil lasagna noodles. The noodles will cook in the sauce when you bake your meal. If you’re vegan, you can add vegetables via the sauce.
- Wrap the lasagna with foil and freeze.
- Label your meals: Don’t forget to put down the date you froze your lasagna.
How To Thaw And Reheat Lasagna Family-Size Meals
To thaw your lasagna, you will need to put it in the refrigerator and defrost it overnight. When it comes to reheating, follow these simple steps:
- Preheat your oven.
- Remove the lasagna covering and replace it with a baking dish
- Place your piece of lasagna in the oven on the center shelve and cook until the top is light browned and the lasagna is cooked thoroughly (165°F) as measured with a food thermometer in the center of the dish.
- Remove the lasagna from the oven and let it sit and cool for 10 minutes before cutting it.
When baking frozen lasagna in an oven, the rule is that the baking time should be double that of the original recipe. For example, if the baking time for the recipe is 15 minutes, then you should bake lasagna for 30 minutes. Temperature is constant.
How To Freeze Servings For One Or Two lasagna
- Portion the lasagna into individual servings.
- Wrap each portion of lasagna in a cling film. Make sure the cling wrap is freezer friendly.
- Label with the freeze date.
- Place the wrapped portions of lasagna in the freezer.
