Illustration of Lemon Blueberry Cookie Pizza With Stunning, Delicious Lemon Cream Cheese Frosting

Lemon blueberry cookie pizza combines a soft lemon cookie crust with cool lemon cream cheese frosting and fresh blueberries. The cookie is sturdy enough to slice, yet tender enough to eat without a fork. Bright citrus keeps the cream cheese topping from tasting heavy, while the berries add color, sweetness, and a little acidity. It is an easy summer dessert for picnics, birthdays, and casual dinners, but it needs enough chilling time for clean slices.

Lemon blueberry cookie pizza recipe

This recipe makes one 10- to 11-inch cookie pizza. A rimless pizza pan works well, though a parchment-lined baking sheet is just as effective. Forming the dough into a circle before baking gives the crust room to spread without reaching the edge of the pan.

Preparation time: 25 minutes
Chilling and cooling time: About 1 hour 20 minutes
Baking time: 15 to 18 minutes
Total time: About 2 hours

Equipment

– Large baking sheet or 12-inch pizza pan
– Parchment paper
– Electric hand mixer or stand mixer
– Mixing bowls
– Fine grater or citrus zester
– Offset spatula or the back of a large spoon

Ingredients for the lemon cookie crust

– 1/2 cup unsalted butter, softened (113 grams)
– 3/4 cup granulated sugar (150 grams)
– 1 large egg, at room temperature
– 1 tablespoon finely grated lemon zest
– 1 tablespoon fresh lemon juice
– 1 teaspoon vanilla extract
– 1 2/3 cups all-purpose flour, spooned and leveled (200 grams)
– 1 tablespoon cornstarch
– 1/2 teaspoon baking powder
– 1/4 teaspoon fine salt

Ingredients for the lemon cream cheese frosting

– 8 ounces full-fat block cream cheese, softened (226 grams)
– 1/4 cup unsalted butter, softened (57 grams)
– 1 1/2 cups confectioners’ sugar, sifted if lumpy (180 grams)
– 2 teaspoons finely grated lemon zest
– 1 tablespoon fresh lemon juice
– 1/2 teaspoon vanilla extract
– Pinch of fine salt

For the blueberry topping

– 1 1/2 cups fresh blueberries, rinsed and thoroughly dried (about 220 grams)
– Additional lemon zest, optional

Making the lemon cookie crust

Line a baking sheet or pizza pan with parchment paper. The paper prevents sticking and makes it easier to move the finished cookie to a serving board.

Beat the softened butter and granulated sugar on medium speed for about two minutes, until the mixture looks creamy and slightly lighter in color. Beat in the egg, followed by the lemon zest, lemon juice, and vanilla.

In a separate bowl, stir together the flour, cornstarch, baking powder, and salt. Add the dry ingredients to the butter mixture. Mix on low speed just until no dry flour remains. Overmixing at this stage can make the baked crust tougher.

Gather the dough into a thick disk, cover it, and refrigerate it for 20 to 30 minutes. This brief rest firms the butter and limits excess spreading.

Heat the oven to 350°F (175°C). Place the chilled dough in the center of the prepared pan. Press it into an even circle about 10 inches across and roughly 1/3 inch thick. Slightly thicker edges are fine, but avoid leaving the center noticeably thicker than the outside.

Bake for 15 to 18 minutes. The edges should be lightly golden, while the center should look set and no longer glossy. The cookie will remain soft when it first comes out of the oven and will firm as it cools. Leave it on the pan for 15 minutes, then transfer it carefully, still on the parchment if needed, to a wire rack. Cool completely before adding frosting.

Preparing the lemon cream cheese frosting

Beat the cream cheese and butter together until smooth. Both should be softened to a similar temperature. Cold cream cheese can leave small lumps, while partly melted butter can produce loose frosting.

Add the confectioners’ sugar in two or three portions, mixing on low speed after each addition. Beat in the lemon zest, lemon juice, vanilla, and salt. Once combined, mix briefly on medium speed until smooth.

If the frosting seems too soft to hold the blueberries, refrigerate it for 15 to 20 minutes. Avoid adding much more lemon juice. Extra liquid may give the frosting a stronger citrus taste, but it also makes the topping harder to slice and more likely to slide off the crust. Additional lemon zest provides more aroma without thinning it.

Assembling the fruit-topped cookie

Set the cooled lemon cookie crust on a flat serving plate or board. Spread the frosting over the top, leaving a narrow border around the edge. An offset spatula creates a smooth surface, but soft swirls made with the back of a spoon suit this dessert just as well.

Arrange the fresh blueberries over the frosting. They can be scattered loosely or placed in concentric circles for a neater blueberry topping. Finish with a small amount of fresh lemon zest if desired.

Refrigerate the assembled cookie pizza for at least 30 minutes before cutting. This firms the frosting and helps the slices keep their shape. Use a large, sharp knife or pizza wheel, wiping the blade between cuts if frosting begins to collect on it.

Details that improve the finished dessert

Fresh lemon zest carries most of the citrus flavor in both the crust and frosting. Grate only the yellow outer layer of the peel. The white pith beneath it tastes bitter and does not provide the same fragrant oils.

Dry blueberries are equally important. Water left from rinsing can form wet patches in the frosting and may cause the berries to slide. Spread the washed fruit on a clean towel and allow it to air-dry while the cookie bakes and cools.

For the softest crust, remove it from the oven when the center has set but before the whole surface turns brown. A deeply browned cookie will be crisper and more difficult to cut after refrigeration. The edges should provide the clearest indication of doneness.

The frosting should go onto a completely cool crust. Even mild residual warmth can soften the butter and cream cheese, leaving the topping runny.

Variations and substitutions

Other berries can replace part of the blueberries. Thinly sliced strawberries, raspberries, or blackberries all work with the lemon cookie crust. Raspberries are delicate, so place them on the dessert shortly before serving. Strawberries should be patted dry after slicing to limit excess moisture.

For a mixed-berry summer cookie pizza, use about 1 1/2 cups of fruit in total rather than piling on so much that the slices become difficult to lift. Small mint leaves can add color, though they are best used sparingly because their flavor can compete with the lemon.

Bottled lemon juice may provide acidity, but it lacks the aroma of a fresh lemon. Since the recipe also calls for zest, one or two fresh lemons are the practical choice.

Full-fat block cream cheese gives the frosting the most dependable texture. Whipped cream cheese and cream cheese sold in tubs usually contain more air or moisture and may produce a softer topping.

Storage and serving

Because the topping contains cream cheese, keep the assembled dessert refrigerated. Cover it and store it for up to three days. The crust gradually softens as it absorbs moisture from the frosting and berries, so the cookie pizza has its best texture on the day it is assembled or the following day.

For advance preparation, bake the crust up to one day ahead and store it tightly covered at room temperature after it has cooled. Make the tangy frosting separately and refrigerate it in a covered container. Let the frosting soften briefly, then stir it before spreading. Assemble with the blueberries a few hours before serving.

The unfrosted lemon cookie crust can also be frozen. Wrap the cooled crust tightly and freeze it for up to two months. Thaw it at room temperature while still wrapped, then add the lemon cream cheese frosting and fresh fruit.
