Illustration of Pistachio Blondies: Easy, Irresistible White Chocolate Christmas Bars

Pistachio blondies combine a chewy brown sugar base with buttery nuts and pockets of sweet white chocolate. Cut into small squares, they make a welcome addition to a Christmas cookie tray, with green pistachio pieces scattered through the bars and across the top. The batter comes together by hand with melted butter, so there’s no mixer to pull out and no dough to chill.

These bars have a golden crumb rather than a bright green interior. Their holiday color comes naturally from the pistachios, with an optional white chocolate drizzle for a snowy-looking finish.

What makes these pistachio blondies work

Brown sugar gives blondies their caramel-like flavor and helps them retain moisture. Melted butter makes the batter easy to stir, while an extra egg yolk adds richness without the additional water from another whole egg.

White chocolate brings plenty of sweetness, so the pistachios do more than add color. Their nutty flavor and slight crunch give each bite some contrast. Chop them roughly enough to leave recognizable pieces; finely ground nuts will disappear into the batter.

Use an 8-inch square metal pan for this recipe. A larger pan spreads the batter too thin and shortens the baking time. Glass and ceramic dishes heat differently, making the edges and center less predictable, so a light-colored metal pan is the simplest choice.

Pistachio and white chocolate blondie recipe

Yield: 16 small squares
Prep time: 15 minutes
Baking time: 25–32 minutes
Cooling time: About 90 minutes
Total time: About 2 hours 15 minutes

Equipment: An 8-inch (20-centimeter) square metal baking pan, parchment paper, mixing bowl, whisk, and sturdy spatula.

Ingredients

– ½ cup (113 grams) unsalted butter, melted and cooled until warm
– ¾ cup packed (150 grams) light brown sugar
– ¼ cup (50 grams) granulated sugar
– 1 large egg, at room temperature
– 1 large egg yolk, at room temperature
– 2 teaspoons vanilla extract
– 1 cup (125 grams) all-purpose flour
– ¼ teaspoon baking powder
– ¼ teaspoon fine salt
– ⅔ cup (about 115 grams) white chocolate chips or chopped white chocolate
– ¾ cup (about 85 grams) shelled, unsalted pistachios, roughly chopped and divided

Optional finish:

– ¼ cup (about 45 grams) white chocolate, chopped
– 1 tablespoon finely chopped pistachios

Instructions

1. Prepare the pan and oven. Heat the oven to 350°F (175°C), with a rack in the center. Lightly grease the pan and line it with parchment paper, leaving an overhang on two sides for lifting out the cooled bars.

2. Mix the butter and sugars. Whisk the melted butter, brown sugar, and granulated sugar in a large bowl until evenly combined. The butter should be warm, not hot, before adding the eggs.

3. Add the egg, yolk, and vanilla. Whisk until the mixture looks smooth and slightly thickened. There’s no need to beat it until fluffy.

4. Fold in the dry ingredients. In a separate small bowl, stir together the flour, baking powder, and salt. Add them to the butter mixture and fold with a spatula just until no dry flour remains. The batter will be thick.

5. Add the chocolate and nuts. Fold in the white chocolate and all but 2 tablespoons of the pistachios. Scrape the batter into the prepared pan and spread it into the corners. Scatter the reserved pistachios over the surface and press them in lightly.

6. Bake. Bake for 25–32 minutes, checking at 25 minutes. The edges should be golden, the surface should look set, and the center should no longer wobble like liquid batter. A toothpick inserted near the center should come out with moist crumbs but no wet batter. Melted white chocolate may leave a creamy streak, so check a second spot if needed.

7. Cool before cutting. Set the pan on a wire rack and let the blondies cool completely, about 90 minutes. Lift them out using the parchment and cut into 16 squares.

8. Decorate, if desired. Melt the additional white chocolate in a dry microwave-safe bowl in short bursts, stirring frequently. Drizzle over the cooled bars and sprinkle with finely chopped pistachios. Let the chocolate set before stacking or packing.

Choosing the pistachios and white chocolate

Shelled, unsalted pistachios make preparation straightforward and give you control over the salt. Raw or roasted pistachios will work. Roasted nuts have a more pronounced flavor; raw pistachios generally taste milder. If using salted pistachios, omit the added salt, especially if the nuts taste heavily salted.

Look for nuts with fresh color and a clean, nutty smell. Discard any that smell stale, paint-like, or rancid. Remove loose papery skins if convenient, but there’s no need to peel every piece.

White chocolate chips hold their shape reasonably well in the oven. A chopped white chocolate baking bar produces less uniform pieces and softer pockets throughout the blondies. Either works here. Choose a product labeled white chocolate for a cocoa-butter-based option; some white baking morsels use other fats and melt differently.

Getting chewy bars without a raw center

The most useful baking cue is the condition of the center. Blondies continue to firm as they cool, but cooling won’t correct a center that is still liquid when the pan leaves the oven. If the top is set around the edges but visibly wet in the middle, give the bars more time.

At the other end, waiting for a completely clean toothpick can produce dry blondies. Look for moist crumbs, and remember that a toothpick pushed through melted chocolate won’t give a clear reading.

Measuring flour accurately also helps preserve the texture. Weigh it if possible. Without a scale, fluff the flour, spoon it into the measuring cup, and level the top without packing it down.

Let the slab cool before slicing. Warm blondies are soft and can break around the nuts and chocolate pieces. For tidy festive blondie squares, use a sharp knife and wipe the blade between cuts.

Making Christmas bars ahead and packing them

Store the cooled blondies in an airtight container at room temperature for up to 3 days. Separate stacked layers with parchment paper, particularly if you’ve added a chocolate drizzle.

For longer storage, wrap individual squares tightly and freeze them in a freezer-safe container for up to 2 months for best quality. Thaw while wrapped so condensation collects mainly on the wrapping rather than the bars.

For a Christmas gift box, let any chocolate decoration set fully before packing. Keep the blondies separate from crisp cookies, which can soften when stored alongside moist bars. Label homemade gifts as containing pistachios, wheat, eggs, and milk, and check the chocolate packaging for any additional allergen information.
