
This recipe is a bit of a shortcut approach since it uses a purchased or previously prepared 9-inch pie crust. However, this also makes it faster to assemble the dessert, which takes advantage of fresh summer plums on a weeknight or a lazy weekend evening.

Ingredients
- 1 Store Bought Refrigerated Pie Crust
- 2 Tbsp Brown Sugar
- 1 Tbsp Granulated White Sugar
- 2 Tbsp Cornstarch
- ¼ tsp Kosher Salt
- 1 cup thinly sliced plums
- ½ tsp Vanilla Extract
- 1 Egg White
- ½ tsp Melted Butter
Directions
- Preheat oven to 425℉ and line or grease the baking sheet
- Defrost Pie Crust in the microwave according to Manufacturer’s instructions
- In a medium mixing bowl combine the brown and white sugars, cornstarch and salt
- Add the vanilla extract to the cup of sliced plums and add to the sugar mixture and toss thoroughly
- Cut the pie crust in Half
- Arrange the plums sliced in the middle of each half
- Fold the excess dough to the edge of the plums in a pleated design
- Rub a small amount of egg white on the crush
- Brush the melted butter onto the plums, just enough to give them a shine
- Place on the baking sheet or stone and transfer to the oven
- Bake for 15 minutes or until the crust is flaky and golden
- Serve hot
