Plum Quick Bread is a simple yet delicious way to use the fresh plums of summer and early autumn. Plum Quick bread makes a nice dessert for a BBQ or summer meal outside on the patio or deck. Plum quick bread also makes an excellent snack along with your favorite beverage.

- 1 Bread Loaf Pan

Ingredients
- Plum Puree:
- 2 Large diced Plums
- ¼ cup Water
- 1 tsp Vanilla Extract
- 4 Tbsp Butter
- 3 Tbsp Brown Sugar
- 2 Tbsp Granulated White Sugar
- ½ tsp Salt
- 1 Large Egg
- 1 cup Small diced Plums
- 1¼ cup Self Rising Flour
Directions
- Preheat the oven to 375℉ then grease and flour the loaf pan
- For the Plum Puree:
- In the blender combine large, diced plums, water, and vanilla extract. If less than ¾ cup add more plum until there is at least ¾ cup of puree
- Set the Puree aside
- Cream butter, sugar, and salt until fluffy
- Stir in the egg until completely combined
- Stir in ¾ cup of plum puree until combined completely
- Mix in the cup of small, diced plums
- Stir in the flour
- Transfer to the greased and floured loaf pan
- Bake for 25 minutes. Poke with a clean knife. If the knife comes out clean the bread is done
- Cool completely before slicing
- Serve with softened butter or whipped cream cheese
