Scones are an iconic English treat from Scotland that have become beloved at teatime. They are quick, easy to make, and taste divine when served with butter, cream, and jam.

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup cold butter, diced
  • 1/3 cup yogurt
  • 1/3 cup heavy cream
  • 1 lemon, zested
  • 1 teaspoon ginger powder
  • 1 teaspoon cardamom powder
  • 1 large egg
  • 1 egg, ligthy beaten
  • 1 tablespoon coarse sugar
  • 1 cup fresh raspberries
  • 3 tablespoon raspberries jam

Preparation Directions

  • Mix the egg with the yogurt, heavy cream, and baking soda in a medium bowl.
  • Mix the flour with the sugar, baking powder, ginger, cardamom, salt, and zested lemon in another large bowl.
  • Add the butter, and with the help of your hands, rub it until the mixture resembles coarse bread crumbs.
  • Now add the liquid composition and mix with your hands until homogenized.
  • Cover a plastic film over the bowl and put it in the fridge for 30 minutes
  • On a table sprinkled with flour, knead the dough until it becomes homogeneous, about 2 minutes, then divide it.
  • Roll out the used dough and make a round shape, cut an 8 inch circle. Put the sheet of dough in a tray with baking paper.
  • Spread raspberry jam on top, add fresh raspberries, and add the second dough sheet. Seal the edges with your fingers.
  • Using a brush, add the beaten egg on top. Slightly increase the dough with the help of a knife and sprinkle on top of the granulated sugar.
  • Cook in the preheated oven at 375℉ for about 25 minutes.
  • Remove the cake from the oven and let it cool.
  • Sliced and serve!
