Prep time for this simple recipe should only take about twenty minutes. The prep time includes seasoning the rabbit and preheating the oven. No need to marinate for this recipe as the rabbit is slowly cooked in the sauce.

Approximate Cooking Time

Total cooking time is about an hour and forty minutes. This includes the time it takes to brown the rabbit in a skillet and its time roasting in the oven. You’ll also make the sauce during this time, so it is not included in the prep time.

Required Equipment

To make an oven-baked rabbit, you’ll need a skillet for searing. We recommend a cast-iron skillet as it gives the evenest heat. You’ll also need a small bowl for mixing the sauce and an oven-safe baking dish for cooking rabbit in the oven.

Ingredients

Many of the ingredients for rabbit recipes are things that you already own in your home. Just because it’s uncommon meat doesn’t mean that you need anything unusual to make a delicious meal.

You’ll need:

  • One rabbit (about three pounds or 1.3 kilograms)
  • Salt (1 3/4 teaspoons or 8 milliliters)
  • Black pepper (1 tablespoon or 14 milliliters)
  • Vegetable oil (1/4 cup or 60 milliliters)
  • Onion (one chopped)
  • Ketchup (3/4 cup or 177 milliliters )
  • Garlic (one clove chopped)
  • Paprika (1 tablespoon or 14 milliliters)
  • Worcestershire sauce (1 1/2 tablespoons or 22 milliliters)
  • Water (1 cup or 225 milliliters)

You probably won’t need to go to the store for ingredients other than the rabbit itself. Remember, with sauces, you can adjust the ingredient amounts to your taste and add more water if it gets too thick.

Preparation and Directions

  • First, preheat your oven to 350 degrees F or 175 degrees C. This recipe is for slow-roasted rabbit, so the temperature does not need to be very high. The slow roast will help keep the meat fall-off-the-bone tender.
  • Season the thawed rabbit meat on all sides with salt and pepper. Then, place it in a skillet of preheated oil over medium-high heat. Let it brown on all sides (about six minutes per side).
  • While the rabbit browns in the skillet, combine brown sugar, onion, garlic, ketchup, paprika, water, and Worchester sauce in a small bowl.
  • Once the rabbit is browned on all sides, transfer it to an oven-safe baking dish. Pour your sauce over the rabbit.
  • Bake it in the oven for ninety minutes uncovered. Baste the rabbit frequently with the juices at the bottom of the dish.
  • After ninety minutes, remove the rabbit from the oven and allow it to cool a bit before serving. The meat should be super tender and juicy – practically falling off the bone.

Servings

Three pounds of rabbit serves about four people. However, you should definitely consider serving a side with this dish. Roasted vegetables or a hearty salad are an excellent addition to make it a full meal.
